1 pound large shrimp, peeled and deveined, shells reserved
1 tablespoon seafood seasoning, such as Old Bay
10 fresh parsley stems with leaves
10 black peppercorns
1 rib celery, roughly chopped
1 lemon, halved and juiced
1/2 yellow onion
1/2 cup mayonnaise
2 tablespoons Dijon mustard
1 tablespoon chopped fresh parsley
1 teaspoon seafood seasoning, such as Old Bay
1 teaspoon diced pimentos
1 rib celery, thinly sliced
1/2 red onion, finely diced
8 ounces lump crab meat
4 hot dog buns, buttered and toasted, for serving
Lemon wedges, for serving
Clarified butter, for serving

Steps:

  • For the boiled shrimp: Add the shrimp shells, seafood seasoning, parsley, peppercorns, celery, lemon and onion to a large stock pot and fill three-quarters of the way with water. Bring to a boil and cook until the vegetables soften slightly, 5 to 10 minutes (see Cook's Note).
  • Prepare an ice bath in a large bowl. Add the shrimp to the stock pot and boil, stirring constantly, until pink and opaque, 1 to 2 minutes. Remove the shrimp and add to the ice bath until completely cooled.
  • For the salad rolls: In a large bowl, combine the mayonnaise, mustard, parsley, seafood seasoning, pimentos, celery and onion. Fold in the shrimp and crab meat. Cover and chill for at least 30 minutes and up to 2 days.
  • When ready to serve, fill the buns with the seafood mixture and serve with a lemon wedge and some clarified butter.

2 tablespoons kosher salt, divided
3 lb lobster
4 oz cream cheese, room temperature
1 ½ teaspoons freshly ground black pepper
1 lb flank steak
1 tablespoon olive oil
2 tablespoons unsalted butter
3 cloves garlic, minced
½ cup dry white wine
1 cup heavy cream
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
¼ cup fresh parsley, finely chopped, plus more for garnish
toothpick

Steps:

  • Preheat the oven to 375°F (190°C)
  • Add 1 tablespoon of salt to a large pot of water and bring to a boil over high heat. Once the water is boiling, add the lobsters, heads first, leaving the rubber bands on the claws. Once the water returns to a boil, boil the lobsters for 10 minutes.
  • Use tongs to remove the lobsters and transfer to a cutting board. Let cool for 5-10 minutes. Use scissors to snip off the rubber bands of the claws. With one hand, hold the body of the lobster, and with the other hold the tail. Use your hands to twist the tail off and remove it from the body. Twist the claws off where the leg and body meet.
  • Use a pair of kitchen shears to make an incision at the top of the tail, then snip through to the base. Snap the shell back and remove the tail meat.
  • Twist the legs at the joints to separate from the claws. Use kitchen shears to cut through the shells and remove the leg and claw meat.
  • Roughly chop the lobster meat and add to a medium bowl, along with the cream cheese, 1 teaspoon of salt, and ½ teaspoon of pepper. Use a rubber spatula to mix well.
  • Lay a piece of plastic wrap over a cutting board. Pat the flank steak dry with paper towels, then place on the plastic wrap and cover with another sheet. Use a meat mallet to pound out to ¼-inch thick.
  • Remove the plastic wrap, then season the steak on both sides with the remaining 2 teaspoons of salt and teaspoon of pepper.
  • Spread the lobster mixture in an even layer over the steak. Starting from the short end, gently roll the steak into a log shape. Secure the roll with toothpicks.
  • Heat the olive oil in a large cast-iron or stainless steel pan over medium-high heat. When the oil begins to shimmer, add the steak roll and cook for 3-4 minutes on one side, until browned. Using 2 sets of tongs, gently turn the roll over and sear on the other side for 3-4 minutes, until browned.
  • Transfer the pan to the oven and roast for 27-30 minutes, until the internal temperature of the steak reaches 145°F (63°C).
  • Remove the steak roll from the pan and transfer to a cutting board. Let rest for 10 minutes.
  • Make the cream sauce: In a large pan, melt the butter over medium-high heat. Add the garlic and stir for 30 seconds, until fragrant.
  • Add the white wine and cook for 3 minutes, until reduced by half.
  • Add the heavy cream, salt, and pepper, and cook for 7 minutes, whisking frequently, until slightly thickened and reduced by half.
  • Add the parsley and whisk to combine.
  • Remove the toothpicks from the steak roll, then slice into 1-inch thick pieces. Transfer to a platter and pour the cream sauce on top, then garnish with more parsley.

Comfort food that is well worth the effort! These delicious rolls contain a filling made with bacon, mushrooms, and FRESH bread slices crumbled-- NO pickle so DH appreciates that. I use sandwich steak, round steak or sirloin and cut into 8 THIN pieces. Serve it with mashed potatoes. Sometimes sirloin is already cut thin which works great! Notice how it is in the oven for 2 hours so you can do something else. Set out your lemon to get it to room temperature. You will need string, cut about 5 inches in length to keep these together. I appreciate puppitypup for noticing that the onions needed explaining.

2 tablespoons butter
3 slices bacon, finely chopped
4 ounces mushrooms, chopped
1 tablespoon fresh parsley, chopped
1/2-1 lemon, zest and juice
2 cups fresh breadcrumbs
2 teaspoons dill weed
salt, to taste
1/4 teaspoon pepper
1 1/2 lbs sandwich steaks, cut into 8 THIN pieces
3 tablespoons flour
1/2 teaspoon paprika
3 tablespoons oil
2 onions, sliced
1 3/4 cups beef stock
salt
pepper

Steps:

  • Preheat oven to 325 degrees.
  • Melt the butter in a large saute pan and fry the bacon and mushrooms for 3 minutes; put into medium size bowl; do not wash saute pan as you will use it again for Step 7.
  • Add to mushroom mixture, the chopped parsley, lemon rind and juice, bread crumbs, and seasoning.
  • Spread an equal amount of the bread crumb mixture evenly over the beef slices, leaving a narrow border clear around the edges.
  • Put flour onto dinner size plate and mix paprika into flour.
  • Roll up the slices and tie securely with fine string, then dip the beef rolls in the flour/paprika mixture to coat lightly, shaking off any excess flour into a small bowl and RESERVE for thickening later.
  • Heat the oil in the frying pan that you used earlier, saute the beef rolls until lightly browned and set rolls in casserole (that has a lid).
  • Pour into frying pan the beef stock, onions, reserved flour; stir constantly, bring to a boil, stirring, and simmer for 2-3 minutes.
  • Taste test the sauce, add more salt and pepper if needed.
  • Pour the sauce over beef rolls, then cover with tight fitting lid and bake in the oven for 2 hours.
  • Lift out the "rolls" using a slotted spoon and remove the string.
  • Return beef to the sauce and serve hot.

I finally get to really enjoy sushi with this untraditional but delicious version. Not a huge raw fish eater, this just made my tastebuds jump in happiness :) From the autumn 2005 LCBO magazine. {Prep time is less than the hour i put but it depends on how organized someone is so gave lots of time.

1 lb flank steak
2 tablespoons tamari soy sauce
1 teaspoon granulated sugar
2 teaspoons dark sesame oil
1 tablespoon finely grated fresh ginger
1 large garlic clove, minced
1 tablespoon peanut oil
1/2 cup seasoned rice wine vinegar
1/4 cup tamari soy sauce
2 teaspoons very finely grated fresh ginger
2 teaspoons sriracha chili sauce or 2 teaspoons other fiery hot sauce
2 cups sushi rice
2 cups cold water
1 pinch salt
4 tablespoons seasoned rice wine vinegar
1/2 ripe avocado
1 large plum tomato
1 large green onion
1 medium carrot
4 sheets toasted nori
1 (1 5/8 ounce) package prepared japanese horseradish (43 g, wasabi)

Steps:

  • To prepare beef, stir soy sauce with sugar, sesame oil, ginger and garlic. Pour over beef; cover and marinate in the refrigerator several hours or overnight. Turn beef at least once during marinating. When ready to sear, heat peanut oil in a heavy frying pan over medium heat. Lift steak from marinade. Discard marinade.
  • When oil is very hot, add steak and sear on each side for 5 minutes or until crusty and beef is cooked medium-rare. Remove beef; cool on a plate.
  • For sauce, stir rice-wine vinegar with soy sauce, ginger and hot sauce. Beef and sauce can be made a day ahead; cover and refrigerate separately.
  • To make rice, place in a sieve. Wash under cold running tap water until water runs clear. Drain and place in saucepan with measured water and a pinch of salt. Soak 30 minutes. Cover and bring to a boil over high heat. Reduce heat to very low; simmer 15 minutes. Without lifting lid, remove rice from heat; let stand for another 15 minutes.
  • For easy cleanup, lightly coat a metal tray with cooking spray; turn rice out onto tray. Fan briefly to cool. Gently spread out with a spatula; sprinkle with half of vinegar. Using a folding motion, lift rice until liquid is absorbed; then add remaining vinegar. Repeat folding and fanning rice until steam stops rising; cover with a dampened tea towel. Rice can be made a couple of hours ahead, however do not refrigerate.
  • To assemble rolls, peel, remove stone and thinly slice avocado. Cut tomato in half lengthwise, then use a spoon to remove seeds and ribs, leaving just a shell. Slice tomato lengthwise into thin strips. Diagonally slice green onion; finely julienne or grate carrot.
  • Lay a sheet of nori on a rolling mat or sheet of plastic wrap. Using wet fingers, spread a quarter of the rice over top, leaving 1-inch (2.5-cm) at one long end uncovered. About a third of the way from the rice-covered long end, decoratively place together in a long line 2 to 3 strips of beef and some of prepared avocado, tomato, onion and carrot. Use the mat or plastic wrap to help lift and form into a thick roll. When nearly rolled up, wet uncovered nori with wet fingers and finish rolling. Repeat; all the assembly ingredients may not be used. Wrap each roll tightly in plastic wrap; refrigerate up to half a day or until needed.
  • To serve, unwrap rolls. Thinly slice off ends, then cut each roll crosswise into 8 pieces. Arrange in a single layer on a plate. Pour sauce into a shallow bowl for dipping. Offer a small dish of wasabi for those who like sushi to be truly fiery.

400g piece beef fillet
2 tbsp olive oil
leaves from 1 rosemary sprig, bruised
1 garlic clove , crushed
2 tbsp butter
200g mixed wild mushroom
200ml good beef stock
1 tsp balsamic vinegar , to serve

Steps:

  • Rub the beef with 1 tbsp oil, rosemary and garlic, then leave in the fridge for at least 1 hr, or up to 24 hrs. Make sure the beef returns to room temperature before you cook it.
  • Heat oven to 200C/fan 180C/gas 6. Heat a non-stick, ovenproof frying pan or roasting tin until very hot. Rub most of the garlic and rosemary from the beef, season with black pepper and flaky salt, then sear on all sides until dark brown and almost crusted - about 5 mins in total. Transfer the pan to the oven, then roast the beef for 10 mins for mediumrare. Leave to rest for a good 15 mins and keep any juices.
  • While the meat rests, sauté the mushrooms. Heat 1 tbsp butter and the remaining oil in a large frying pan, then tip in the mushrooms with plenty of seasoning. Fry until golden and just softened, then tip into a bowl.
  • Add the stock to the mushroom pan, then reduce by two-thirds. Tip in the mushrooms and balsamic, then add the remaining butter and let it melt. Tip in any meat juices, then season to taste and keep warm. Thickly slice the beef and spoon over the sauce. Serve with mash and spinach.

24 thin asparagus spears, trimmed
1/2 cup soy sauce
1/4 cup sugar
1/4 cup mirin or 1/4 cup dry sherry
1 tablespoon fresh ginger, grated
1 garlic clove, minced
1 bunch green onion, greens portions only
1 1/2 lbs beef tenderloin
fresh ground black pepper, to taste

Steps:

  • Preheat grill pan until hot; bring salted water to a boil over medium high heat in a saucepan.
  • Blanch asparagus spears for 1 minute; drain and plunge in an ice water bath to stop cooking.
  • In a small saucepan combine soy sauce, sugar, mirin (or dry sherry), ginger, and garlic; heat over medium heat until reduced and slightly thickened; set aside to cool.
  • Cut green onions in fourths, lengthwise, so you have long strips.
  • Slice beef in 1/4 inch slices, then pound to tenderize and thin out.
  • Dip beef slice in soy sauce mixture and place on a clean work surface; season with pepper.
  • Place an asparagus spear and a piece of green onion on the beef slice and roll up.
  • Do the same with the remaining asparagus and beef.
  • Grill beef rolls about 2 minutes until slightly charred and medium rare. Turn several times and brush with soy sauce mixture.
  • Remove to a serving platter and drizzle generously with soy sauce mixture.

1 lb top round London broil
1 cup julienned peeled cucumber
1 cup sliced celery, cut on a diagonal
1/2 cup julienned pickled cucumber (or dill pickle)
1 cup julienned peeled green apple
1/2 cup julienned red bell pepper
1/4 cup crumbled blue cheese
1 cup pea shoots (or arugula)

Steps:

  • Heat oil in a medium nonstick pan over high heat. Season beef with salt and pepper. Sear 2 minutes on each side, cooking to medium-rare. Slice beef against the grain into thin pieces, about 1/8 inch thick, making slices as long as possible. Lay each piece on a flat surface and top with a pinch of each vegetable, apple, cheese, and pea shoots. Roll up beef so bits of apple and vegetables stick out.
