1 1/2 lbs center-cut fresh ahi tuna or inch thick sushi quality tuna steak
1 teaspoon kosher salt
2 teaspoons black peppercorns
1 teaspoon white peppercorns
2 teaspoons fennel seeds
1 1/2 teaspoons dried lavender flowers (Available in health food stores or use your home-dried flowers)
3 tablespoons extra virgin olive oil
4 cups savory mixed fresh greens (and herbs)
4 tablespoons prepared whole grain mustard
2 tablespoons extra virgin olive oil
2 teaspoons toasted mustard seeds
2 tablespoons seasoned rice vinegar
3 tablespoons vegetable stock or 3 tablespoons water
1 teaspoon honey, to taste
kosher salt
fresh ground black pepper

Steps:

  • If using the center-cut ahi tuna, trim and cut the tuna into a block approximately 2 inches across; then cut into 1-inch steaks.
  • Crush the salt, peppercorns, fennel seeds, and lavender with a mortar and pestle or a rolling pin.
  • Lightly oil the tuna with 2 teaspoons of the olive oil; evenly coat the tuna with the lavender-pepper mixture, patting off any excess.
  • In a heavy bottomed sauté pan or a cast-iron pan, heat the remaining 1 tablespoon olive oil.
  • Increase the heat to high and place the tuna in the pan.
  • Sear for 1 minutes, then turn over carefully, reducing the heat to medium.
  • Sear the other side for 1 more minutes until medium rare.
  • Remove from heat and immediately refrigerate the tuna for at least 1 hour but no more than 3 hours.
  • To serve, arrange the greens on chilled individual serving plates.
  • Drizzle with Mustard Seed Dressing.
  • Thinly slice the tuna and arrange on top of the dressed greens.
  • For the mustard seed dressing:.
  • Preheat oven to 375°F.
  • Place mustard seeds in a baking pan.
  • Place in oven and roast for a couple of minutes (watch carefully so the seeds don't burn).
  • Remove from oven and let cool.
  • Whisk all the ingredients together and season to taste.

1 tablespoon fresh lime juice
1 tablespoon fresh marjoram or oregano (or 1 teaspoon dried)
4 tablespoons olive oil
1 1/2 pounds fresh tuna in one thick piece
1 tablespoon cracked black pepper
2 tablespoons canola oil
1 pound fresh spinach, well rinsed, dried and trimmed of heavy stems
1 cup cooked white beans (cannel- lini beans)
Salt and freshly ground black pepper to taste

Steps:

  • Beat the lime juice, marjoram and 2 tablespoons of the olive oil together. Set aside.
  • Trim any dark areas from the tuna, then cut it into four equal pieces, trimming them a little if necessary to make four rectangular logs. Press the cracked black pepper over the outside of the pieces of fish.
  • Heat all but a teaspoon of the remaining olive oil plus the canola oil in a large, heavy skillet. When the oil is very hot, carefully place the fish in the skillet (to avoid splattering) and sear each piece for barely a minute, then turn and continue to sear the fish pieces briefly on each of the remaining three sides. Remove the fish to a warm plate. The fish should be rare in the middle.
  • Wipe out the skillet and add the remaining olive oil. Add the spinach and saute it for a few minutes, until the spinach is barely wilted. Add the beans, season with salt and pepper and continue to saute until the spinach is wilted but is still a bright green and the beans are completely heated through.
  • Divide the spinach mixture equally among four dinner plates. Cut the blocks of seared tuna into slices one-half-inch thick and array the slices on top of the spinach. Briefly beat the vinaigrette, then drizzle the vinaigrette around the tuna and the spinach. The plates are now ready to be served.

4 (4 ounce) ahi tuna steaks
1 tablespoon soy sauce, or to taste
1 teaspoon honey, or to taste
1 medium apple - peeled, cored, and chopped
2 ounces minced fresh ginger, or to taste

Steps:

  • Spray a large skillet with cooking spray; heat over medium-high heat. Add tuna steaks to the hot skillet and sear 90 seconds on each side. Remove tuna steaks to a plate.
  • Reduce heat to medium-low. Whisk soy sauce and honey together in small bowl. Add to the skillet with apple and ginger. Saute until tender, 5 to 10 minutes. Serve sauce on the side or on top of tuna steaks.

1 lb fresh ahi tuna
salt
pepper
1/3 cup rice vinegar
1 tablespoon sugar
1/2 cup sesame oil
1/3 cup soy oil
1 lb wakame seaweed
2 small chili peppers, seeded and chopped (seeding the pepers is optional)
4 tablespoons sesame seeds
2 cups balsamic vinegar
2 tablespoons mild molasses
2 cups olive oil
3 cups cilantro

Steps:

  • Brush tuna with olive oil and season each side with salt and pepper.
  • Grill for 2 minutes on each side, remove from heat and slice in 16 1 oz medallions.
  • In a mixing bowl, combine rice vinegar, salt, sugar, and both oils (sesame and soy).
  • Pour dressing over Wakame, add chile peppers and toss.
  • Sprinkle with sesame seeds.
  • Boil balsamic vinegar and molasses in small,heavy pan overmedium heat.
  • Reduce by half and cool.
  • Combine olive oil, cilantro, salt and pepper to taste; blend in food processor until smooth.
  • Strain through fine sieve.
  • Keep refrigerated up to two days, but use at room temperature.
  • Place a mound of Wakame salad on plate.
  • Arrange tuna medallions around edges of Wakame.
  • Drizzle olive oil and cilantro mixture on plate, then drizzle molasses mixture on plate.

I have tried several different recipes for making ahi tuna and was disappointed every time. So I have blended several things about other recipes to create this. I'm sure this isn't completely original, but it is original to me. This can be served as a main course with some rice and asparagus (or stir-fry vegetables) or as an appetizer. I like a little soy sauce for dipping, but there are many other spicier dipping sauces you could use.

4 (6 ounce) sushi-grade ahi tuna steaks
1 ½ teaspoons blackened seasoning
2 tablespoons teriyaki sauce
1 tablespoon white sesame seeds
1 tablespoon black sesame seeds
2 tablespoons grapeseed oil

Steps:

  • Rinse tuna and pat dry. Place in a prep dish and sprinkle both sides with blackened seasoning. Brush teriyaki sauce on all sides of the tuna to glaze it.
  • Mix white and black sesame seeds together in a shallow dish. Dredge tuna in the sesame seeds until all sides are coated.
  • Heat oil in a cast iron skillet over high heat until smoking. Arrange tuna in the pan and cook for 30 to 45 seconds. Flip and cook for another 3o to 45 seconds; do not overcook!
  • Quickly transfer tuna to a cutting board and cut into 1/4-inch thick slices. Arrange tuna on individual plates, overlapping slices slightly. Serve immediately.
