SEAFOOD PASTA DRIZZLED WITH TRUFFLE OIL
Taken from the January 8/03 issue of The Toronto Star; posted on behalf of a request for recipes using truffle oil. Apparently, this recipe originated with Emeril Lagasse.

Steps:
- Note: have pasta ready before you start this dish; don't worry if it cools off, as it will be warmed up again in the skillet.
- In a large skillet over medium heat, heat oil; add shallots and garlic, season with salt and pepper, and saute for about one minute.
- Add tomatoes and cook for another minute.
- Add mussels and shrimp, season again with salt and pepper, and cook for just two minutes.
- Add wine, bring to a simmer, and cover.
- Cook until mussel shells all open, about 4 minutes or so.
- Add crabmeat and onions; season again with salt and pepper; cook for just one minute.
- Add pasta and toss; cook until pasta is heated through, only about one minute.
- Remove from heat; add cheese and basil and lightly toss, then place mixture in a large serving bowl.
- Garnish with a drizzle of truffle oil and serve.
CREAMY TAGLIATELLE WITH BACON, PORTOBELLO MUSHROOMS AND TRUFFLE OIL

- Cook pasta in salted water according to package directions. Note that fresh pasta only takes about 3 minutes to cook after the water boils.
- While pasta is cooking cook chopped bacon over medium heat in 1 tbsp of olive oil until it renders fat, drain it if your bacon is too fatty. Add sliced portobello mushrooms with salt and pepper and cook for 5 minutes over medium heat, then add minced garlic if using and cook for 30 seconds longer.
- Drain cooked pasta and reserve 1/2 cup of water you cooked pasta in. Do not rinse your pasta.
- Take the pan with bacon and mushrooms off the heat. To the pan add hot pasta, truffle oil, double/heavy cream and grated parmesan gently toss to coat.
- Your pasta will absorb the sauce very quickly. Add reserved pasta water to loosen the sauce to a silky smooth consistency. Add salt and pepper to taste.

- Bring a large pot of water to a boil. Add a pinch of salt and a dash of olive oil. Cook pappardelle pasta until al dente. Strain and set aside.
- Meanwhile, season shrimp with salt and pepper. In a large saucepan on medium-high heat, sauté shrimp in olive oil until fully cooked through, about 4-5 minutes per side (or until no longer translucent).
- Add butter, shallots and garlic to the saucepan and cook until fragrant, about 1-2 minutes. Add heavy cream, lime juice, and chopped parsley and let simmer for 3-4 minutes.
- Fold in pappardelle and cherry tomatoes until pasta is fully coated in the creamy white sauce. Let simmer for an additional 3-4 minutes or until sauce slightly thickens. Lastly, drizzle with truffle oil before serving (truffle oil is strong so you will only need 1-2 tablespoons for the recipe).

- To make the sauce, heat the heavy cream in a saucepan. When it begins to boil, add the melting cheese and stir well. Season with salt and pepper and set aside.
- Pour salted water in a large pot and bring to a boil, then add the pasta. In the meantime, slice the mushrooms. Set some aside for garnish. Heat a little oil in a frying pan, then fry the sliced mushrooms. Once the pasta is cooked, drain it in a colander.
- Add the cream sauce to the mushrooms in the frying pan, bring to a boil, then add the pasta. Stir well to combine and serve. For the perfect taste, drizzle the truffle oil over the pasta and freshly grate some Parmesan cheese on top. Finally, add the mushrooms you set aside earlier. Now enjoy the finest dinner!

- Peel and devein the shrimp, leaving tails on.
