SEAFOOD CORNBREAD DRESSING
Put a twist on this traditional southern dish with Seafood Cornbread Dressing. Filled with shrimp, lump crab, fresh herbs, and a homemade seafood stock; this dish transforms into a rich decadent main. Serve with gravy or without and watch this recipe become a staple for years to come!

Steps:
- Preheat the oven to 375 degrees.
- Coat the baking dish with 1 tsp of oil and place in the oven while it preheats.
- In a bowl, combine dry ingredients.
- Beat the egg separately and add to the dry mix.
- Add milk and whisk until thoroughly combined.
- Once the oven comes to temp, remove the baking dish, add the butter allowing it to bubble and melt.
- Once the butter is melted, slowly pour in the wet batter 1 tbsp at a time (simultaneously whisking and pouring). Continue to temp the batter by adding small amounts of butter until thoroughly combined and the batter is smooth. Reserve one tablespoon of butter in the baking dish.
- Pour batter into the baking dish and bake for 25 minutes until cornbread is cooked through to the center.
- Allow cornbread to cool while preparing the stuffing mixture.
- Mince onion, celery, tarragon and parsley. Set aside.
- Peel shrimp and deshell crab (or drain juice if using canned). Set aside.
- In a medium sauté pan on medium/high heat, sauté garlic, onion and celery in 1 tsp butter for 3-5 minutes.
- Season with salt and pepper and add fresh herbs sautéing an additional minute. Set aside and let cool.
- Once cornbread has cooled, begin breaking it apart into smaller pieces into a large mixing bowl. This will make about four cups of cornbread.
- Add in vegetables, herbs and one cup of dried stuffing mix and lightly stir.
- Add in mayo, cream of mushroom and celery and seasonings. Stir until combined.
- Slowly pour in the seafood stock 1/4 cup at a time, stirring until batter becomes slightly mushy. (Batter should need the entire cup of stock)
- Taste batter for flavor and adjust seasonings to your liking.
- Fold in crab and shrimp carefully and place in the baking dish, spreading out evenly.
- Sprinkle with paprika on top and bake at 375 degrees for 30-40 minutes uncovered.
- Remove from the oven and let stuffing rest for 15-20 minutes before serving.
- Place seafood stock ingredients in a large stock pot and fill with water just above ingredients.
- Bring ingredients to a boil, reduce heat and simmer for up to 30 minutes.
- Use a fine strainer to strain liquid from stock ingredients.
SAVANNAH SEAFOOD STUFFING
This is a seafood stuffing that has been in my family for a while. We have never actually stuffed the bird with this to avoid the turkey having a 'fishy' taste. We tend to like our dressing very moist, but if you prefer a drier stuffing, only use half of the broth.

- Melt the margarine in a large skillet over medium heat. Add the bell pepper, onion, celery crabmeat and shrimp; cook and stir for about 5 minutes. Set aside. In a large bowl, stir together the stuffing, bread crumbs and 1 tablespoon of sugar. Mix in the vegetables and seafood from the skillet. Stir in the cream of mushroom soup and as much of the chicken broth as you like. Spoon into a 9x13 inch baking dish.
- Bake for 30 minutes in the preheated oven, or until lightly toasted on top.

CAJUN SEAFOOD CORNBREAD STUFFING (FOR PORK, CHICKEN OR FISH)
When I am in Houston TX I always stop by a Cajun specialty meat shop called Heberts for their delish foods to bring home. One of the stuffings they make is a shrimp cornbread stuffing, they pile it high on pork and fish (you have to take it home and cook it). Well it is to die for. So instead of waiting until I traveled to Houston, I decided to try and copy it, well in my opinion, I topped it. If you like oyster dressing and/or cornbread stuffing, you are going to love this. For the cornbread I used Recipe #4290 .

- Bake cornbread and allow to cool, or use leftover. Crumble into fairly fine crumbs to equal 2 cups.
- Clean and de-vien shrimp, chop into course pieces, 1/2 inch. Save shells.
- In a small sauce pan bring chicken broth to simmer, add shrimp shells and simmer for 20 minutes. Set aside and add the juice from the canned clams.
- Saute onion and celery in butter until tender.
- Meanwhile, combine breadcrumbs and cornbread crumbs, salt, pepper, sage, garlic powder and poultry seasoning, mix well.
- Strain broth into crumb mixture with a fine sieve or colender, discard shells, and give a quick stir. Add soup and eggs and stir well.
- Fold in shrimp and clams.
- Now, here is the important part, you want a really moist mixture that is not too moist. You may have to add broth or water (I used a tad bit of beer he he) You want to be able to use a big soup spoon, not a ladle but one of those huge spoons, scoop up some of the dressing and if a little runs off the sides but still remains heeped up on the spoon, perfect. If nothing runs off the sides of the spoon and you picked up a big ball of stuffing it is too thick. You need to add broth, water, or in my case beer until it forms a rounded peek when scooped instead of a ball.
- Now, your stuffing is ready to cook, boy this is good. Take you a good cut of porkchop, fish, or chicken breast, place each serving on a piece of greased foil big enough to fold the sides of the foil up high enough to hold the stuffing, place the servings on cookie sheet and fill it up with the stuffing. Oh man, this just keeps getting better.
- Depending on how big your pieces of meat are and how much stuffing you put on them will determine on how long you need to cook them. You need to use a meat thermometer to test the doneness. When done, allow to cool 5 minutes, fold back foil and use a spatula to remove onto plate.
- I cook mine at 375 F for about an hour. I use thick cuts and lots of stuffing. This is good stuff man!
- I even make these ahead and freeze them, just thaw and cook.
- Servings, prep and cooking times are estimated as best as I can.

- Preheat oven to 375°. For cornbread, in a bowl, combine flour, cornmeal, sugar, baking powder and salt. In a small bowl, whisk egg, water, milk and oil. Stir into flour mixture just until blended. Transfer to a greased 8-in. square baking pan. Bake until a toothpick inserted in the center comes out clean, 15-20 minutes. Cool in pan on a wire rack. Crumble into a large bowl. Reduce oven temperature to 350°. , For stuffing, stir bread cubes into cornbread crumbs. In a nonstick skillet, cook celery and onion in oil until tender, about 6 minutes. Stir into cornbread mixture. , In a small bowl, dissolve bouillon in water. In a large bowl, combine the broth, egg, seasonings and bouillon mixture. Pour over cornbread mixture; toss to coat evenly., Transfer to a greased 13x9x2-in. baking dish. Cover and bake 20 minutes. Uncover; bake until lightly browned, 25-30 minutes longer.

SHRIMP CORN BREAD DRESSING
A co-worker from Louisiana shared hearty helpings of this delightful dressing (and copies of the recipe!) more than 20 years ago. It's been a "must" on my Thanksgiving menu ever since.

- In a large saucepan, bring 5 cups of water and seafood seasoning to a boil. Add shrimp; return to a boil. Reduce heat; simmer, uncovered, for 2 minutes or until shrimp turn pink. Drain; set aside three shrimp for garnish. Chop the remaining shrimp., In a large skillet, saute onion, celery, green pepper and green onions in butter until tender. In a large bowl, combine the stuffing, cornbread, chopped shrimp, sauteed vegetables and seasonings. Stir in the remaining water. Transfer to a greased 13x9-in. baking dish. Cover and bake at 350° for 30 minutes. Uncover; bake 10-15 minutes longer or until lightly browned. Garnish with celery leaves if desired and reserved shrimp.

CREOLE CORNBREAD DRESSING
A friend found a recipe for creole cornbread stuffing on allrecipe.com, which I adapted for cornbread dressing. It is spicy but not too spicy. Everyone enjoyed it at Thanksgiving along with the creole smoked turkey.

- Preheat oven to 375 degrees.
- Finely crumble cornbread into a large bowl.
- Combine salt, peppers, onion powder, oregano, thyme, basil, bay leaves in a small bowl.
- Melt butter in a large skillet. Add onions, bell pepper, jalepeno pepper, and garlic. Saute until soft. Do not brown.
- Add parsley and spices to skillet for a minute.
- Add vegetables and spices to the bowl with cornbread.
- Put broth in a large pot & bring to a boil.
- Add hot broth, one cup at time, to cornbread mixture in bowl. Mixture should be somewhat soupy.
- Mix egg & evaporate milk together. Add to cornbread mixture.
- Grease a 9 x 13 pan. Pour dressing into pan. Cook at 375 degrees for 35 - 45 minutes until bubbly all through.

- Make some cornbread from scratch, or prepare the packaged cornbread according to directions and bake. When the cornbread's done, crumble it into a large, greased baking pan.
- Melt margarine in a skillet, add chopped vegetables and sauté until wilted. Add soup, broth, shrimp and crawfish or crabmeat. Mix well and heat but do not boil. Add seasonings a little at a time, tasting and adjusting until you get the taste you like.
- In the baking pan, on top of the cornbread, pour your seafood mixture a little at a time and mix; keep doing this until it's all mixed together. You may have to add a little more moisture (broth) to the mix if it isn't moist enough. Don't add a lot at a time, you don't want it to be runny, just thoroughly moistened.
