SEACOAST SALAD (TUNA MACARONI)

Seacoast Salad (Tuna Macaroni) image

This is a very old recipe that I originally got off of the side of a box of Kraft Macaroni and Cheese more than 25 years ago. I make this when I tire of plain tuna macaroni and want all the "junk" back in it! LOL! When you get bored, too, this is a nice change of pace! Very easy to make. (*Since Kraft has changed their formula so much over the years, I now use Velveeta Shells and Cheese, or make homemade macaroni and cheese using the velveeta recipe.) So whatever you prefer is what you should use. HTH! :)

Provided by Wildflour

Categories     < 30 Mins

Time 20m

Yield 6 serving(s)

Number Of Ingredients 8

1 (12 ounce) box velveeta macaroni shells and cheese, regular or deluxe kind or homemade if preferred
1 (8 1/2 ounce) can peas, drained or size that is close
1 (6 1/2 ounce) can tuna, drained and flaked
1 cup Miracle Whip, mayo if preferred
1 cup chopped celery
1/4 cup sweet pickle relish, drained
2 tablespoons finely chopped onions
salt

Steps:

  • Make shells and cheese according to package directions, or make your own (same amount.).
  • Add remaining ingredients, mixing lightly. Chill.
  • Add additional Miracle Whip (or mayo) before serving if needed.

Categories     Tuna

Time 3h30m

Yield 8 serving(s)

Number Of Ingredients 15

2 cups uncooked macaroni noodles
2 (6 ounce) cans tuna, drained (can use 3 cans)
4 -5 green onions, chopped or 1 onion, finely chopped
1 small green bell pepper, seeded and chopped
1 stalk celery, finely diced
1 1/2 cups chopped sweet pickles (can use more or less, do not squeeze out any juice from the pickles)
1 cup mayonnaise (I use half of each) or 1 cup salad dressing (I use half of each)
1/2 cup sour cream
2 tablespoons sweet pickle relish (optional or to taste)
1 tablespoon garlic powder (yes 1 tablespoon or even 1-1/2 tablespoons!)
1 -2 tablespoon prepared yellow mustard
1 teaspoon seasoning salt (or to taste, or use white salt)
fresh ground black pepper (to taste)
1/2 teaspoon paprika
3 -4 hard-boiled eggs (quartered) (optional)

Steps:

  • Cook macaroni in a large pot of boiling salted water until just tender; drain then rinse well under cold water; place in a bowl then toss with 1 tablespoon oil to prevent sticking.
  • Add in tuna, onion, bell pepper, celery and sweet pickles; toss to combine.
  • In a bowl mix together mayonnaise with sour cream, sweet relish (if using) garlic powder, yellow mustard (start with 1 tablespoon mustard) and seasoned salt; add to the macaroni mixture; mix well to combine.
  • Season with black pepper to taste.
  • Arrange the cooked egg wedges around the inside of the bowl, then dust the top of the salad and eggs lightly with paprika.
  • Cover and chill at least 3 hours before serving (the longer chilling time the better!).

TUNA MACARONI SALAD

Tuna Macaroni Salad image

Yup, another tuna macaroni salad. I really like this one, though. I always use mild curry powder to keep it "crowd-friendly". I've never made it with a hotter, spicer curry powder so I can't recommend it. Like most macaroni salads, you'll probably want to moisten it with some milk before serving.... especially the next day.

Provided by Parsley

Categories     Tuna

Time 25m

Yield 8-10 serving(s)

Number Of Ingredients 15

2 cups small shell pasta, can use elbows
1 (12 ounce) can albacore tuna in water, drained and flaked
1 cup chopped onion
1 cup chopped celery
1/2 cup chopped red radish
1/2 cup chopped carrot
2 hard-boiled eggs, chopped
1/2 cup mayonnaise
3/4 cup reduced-fat sour cream
1/4 cup low-fat milk
1 tablespoon lemon juice
2 teaspoons sugar
3/4-1 teaspoon mild curry powder
1/4-1/2 teaspoon salt
1/4 teaspoon pepper

Steps:

  • Cook macaroni according to package directions; drain and rinse under cold water. Drain again.
  • Place cooled macaroni into a large bowl. Add the flaked tuna, onion, celery, radishes, carrots and hb eggs.
  • In a seperate bowl, mix together all of the dressing ingredients. Mix until well blended.
  • Pour the dressing over the salad and blend together well.
  • Chill and serve.
  • Add a splash of milk and stir before serving -- especially the next day.

TUNA MACARONI SALAD

Tuna Macaroni Salad image

This recipe will remind you of growing up! My step-mother made this when I was little and it is still a favorite of my sister and myself. We are continuing the recipe and sharing it with our children. It is best when you let it chill overnight, but my family devours about half of it while it is still warm.

TUNA MACARONI SALAD

This is our version of an old Betty Crocker recipe. Again, since we are garlic freaks, we kicked up the garlic and tried other improvement. This is a great side dish or along. Great for potlucks.

SOUTHERN TUNA MACARONI SALAD

Southern Tuna Macaroni Salad image

Creamy from eggs and mayonnaise, tangy and acidic from mustard, pickles and chow chow, with a nice crunch from celery and onion. The Cajun spice just rounds it out with a blend of spices, the pimentos add a pop of color and sweetness, and tuna complements and ties all the flavors together in this Southern macaroni salad. Could top with some parsley for added color! Put this in a tortilla or melt some cheese on toast and make an open-faced sandwich!

Categories     Pasta and Noodles     Pasta by Shape Recipes

Time 20m

Yield 8

Number Of Ingredients 12

½ cup diced red onion
1 (16 ounce) package elbow macaroni
1 cup mayonnaise
½ cup chopped pimento peppers
5 tablespoons dill pickle relish
2 tablespoons chow-chow (optional)
1 tablespoon Dijon mustard
1 teaspoon Cajun seasoning
1 teaspoon kosher salt
3 ribs celery, diced
2 large hard-boiled eggs, chopped
2 (6.5 ounce) jars tuna packed in oil

Steps:

  • Place diced onion in a large bowl and cover with cold water. Let sit for 5 minutes. Drain into a colander.
  • While onion soaks, bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally, until tender yet firm to the bite, about 8 minutes. Drain into the same colander as red onion and run under cold water to stop cooking and cool to room temperature.
  • Place mayonnaise, pimentos, relish, chow-chow, mustard, Cajun seasoning, and salt in a large bowl and stir to combine. Add pasta, red onion, and celery and stir to combine. Gently fold in tuna and eggs to combine.

TUNA-MACARONI SALAD

Tuna-Macaroni Salad image

You pretty much already have everything you need to make this side dish, a great accompaniment to fried or grilled proteins. Some people love raw onion and celery, but you can leave them out or keep them in as you like. Make sure you use tuna packed in water. (Tuna in olive oil will make the salad too oily.) It's best chilled - don't serve it at room temperature - its creamy unctuousness balances out the heat (from spice or from cooking) of whatever it's paired with.

Time 3h15m

Yield 10 to 12 servings

1 cup chopped celery (from about 3 stalks, optional)
1 medium sweet onion, chopped (optional)
