1 lb sea scallops or 1 lb nantucket bay scallop
1/4 cup canola oil
1 cup flour
salt & freshly ground black pepper
3 tablespoons butter
1 lemon, halved
3 tablespoons chopped fresh flat leaf parsley
1 tablespoon capers (optional)

Steps:

  • Heat oil in a large saute pan over medium heat. Dust scallops with flour.
  • Shake off and saute on each side until golden brown. Season with salt and
  • pepper. Drain off excess oil and keep pan off heat. Drop in butter, parsley,
  • capers and a squeeze of fresh lemon. Shake together. Serve at once.

1 lb sea scallops
6 tablespoons butter, divided
4 tablespoons chopped green onions
1 garlic clove, minced
3 tablespoons dry white wine
1/4 teaspoon salt
1 dash cayenne pepper
2 tablespoons snipped fresh parsley
1 fresh lemon, halved

Steps:

  • Rinse scallops in cold water; pat dry with paper towels.
  • In a large saute pan, heat 3 tablespoons butter on high heat until sizzling; add scallops.
  • Immediately reduce heat to medium, and cook scallops 2 to 3 minutes per side until lightly browned, turning once.
  • Melt the rest of the butter in with the scallops then add the chopped green onions and the garlic, tossing to coat and saute for 2 minutes.
  • Add the wine and cook for 1 minute more.
  • Remove from heat and season with salt and cayenne; sprinkle with the snipped parsley.
  • Serve hot with a generous squeeze of fresh lemon.

1 lb linguine
salt
1 lb sea scallops
salt
pepper
1 tablespoon olive oil
1 tablespoon butter
1 shallot, finely diced
1 clove garlic, minced
1/2 cup dry white wine
1/2 cup clam juice
1/4 teaspoon red pepper flakes
12 basil leaves, chopped
1/4 cup parsley, chopped
1 tablespoon chives, chopped
1 tablespoon capers, drained
lemon, zest of 1
lemon, juice of 1/2
pepper
1 tablespoon butter

Steps:

  • Bring large pot of water to rolling boil. Add generous amount of salt to water and cook linguine to just before al dente.
  • Season scallops with salt and pepper. Heat olive oil and butter in large skillet over medium high heat. Sear scallops about 2 minutes on each side; remove from skillet to a plate and cover with foil. Set aside.
  • Add shallot and garlic to the same skillet and saute until softened.
  • Add the wine and cook until reduced to almost gone.
  • Add the clam juice and reduce by about 1/2.
  • Add red pepper flakes, the herbs, capers, lemon zest and lemon juice. Season with pepper to taste and add the butter.
  • Add the cooked and drained linguine to the skillet; allowing the liquid to be absorbed and the sauce coating the pasta.
  • Transfer to a serving bowl placing the seared scallops on top.

3 tablespoons sweet butter, divided
8 large sea scallops
1 leek, cleaned, trimmed and diced (white part only)
1/4 cup vodka
salt and pepper (to taste)

Steps:

  • Heat 1 tablespoon butter in saute pan until sizzling. Add scallops and sear quickly (about 1 minute), leaving center of scallop under cooked.
  • Remove scallops from pan; set aside. Reduce heat; add leeks to pan and saute until softened, 3-4 minutes.
  • Add vodka and return scallops to pan. Cook until vodka is reduced, 1-2 minutes.
  • Add remaining butter a tablespoon at a time until sauce has thickened. Season with salt and pepper to taste. Serve hot.

3 tablespoons extra virgin olive oil
1 shallot, chopped
2 (14 ounce) cans quartered water-packed artichoke hearts, drained
salt and pepper
1/4 cup fresh parsley leaves, chopped
2 tablespoons capers, drained
16 sea scallops
1/2 cup vermouth

Steps:

  • Heat a large nonstick skillet over medium high heat.
  • Add 2 turns of the pan of olive oil, about 2 tablespoons and the chopped shallots to the pan.
  • Cook shallots in oil a minute or so.
  • Add artichoke hearts and toss to heat through.
  • Season artichokes with salt and pepper and combine with parsley and capers.
  • Transfer artichokes to a serving dish.
  • Wipe out pan and return to the heat, raising heat a bit.
  • Season drained and trimmed scallops with salt and pepper.
  • Add 1 turn of olive oil to the very hot pan and immediately place the scallops in the pan and sear in a single layer, causing them to carmelize, 2 minutes on each side.
  • Add vermouth and cook out the alcohol, 1 to 2 minutes.
  • Arrange scallops in vermouth over the top of the artichokes and serve.
