SCOTT BIEBER'S LEMON MERINGUE CAKE
Although its meringue peaks make it look exactly like a pie, underneath the topping is a moist, lemon-flavored cake. This recipe, featured on "Martha Stewart Living" TV and brought to us by executive chef Scott Bieber, of Taste restaurant in New York City, combines elements of two classic confections into a singular dessert.

- To make the cake: Preheat the oven to 350 degrees. Butter two 9-inch round cake pans. Flour pans, tapping out excess; set aside. In a medium bowl sift together the flour, baking powder, and salt; set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, beat together the butter and sugar until light and fluffy, about 2 minutes. Add the eggs, one at a time, beating to combine after each addition. Beat in the vanilla and the lemon zest. Add the flour mixture, alternating with the milk, beginning and ending with the flour mixture. Beat until just combined.
- Divide batter between prepared pans. Bake until a cake tester inserted in the center comes out clean, 30 to 40 minutes. Remove from oven, and let stand in pans until cool, about 1 1/2 hours.
- Remove cakes from pans. Using a serrated knife, trim tops of cakes. Slice each cake horizontally into 3 layers. Place one layer on a serving platter. Spread with 1/4 cup lemon curd. Top with second layer of cake. Spread with 1/4 cup curd. Repeat with remaining cake and curd, finishing with a layer of cake. Transfer to refrigerator until ready to use, at least 2 hours.
- Remove cake from refrigerator. Spread a thin even layer of meringue over sides of cake. Mound the remaining meringue on top of cake. Use a handheld torch to brown meringue.
LEMON MERINGUE CAKE

- Make the lemon curd: Whisk the sugar, egg yolks, lemon juice, lemon zest, cornstarch and salt in a small saucepan over medium-low heat; cook, whisking occasionally, until the sugar dissolves. Continue cooking, whisking constantly, until thick, about 10 minutes. Whisk in the butter a few pieces at a time until melted, then strain through a fine-mesh sieve into a bowl. Press plastic wrap directly onto the surface and refrigerate until set, at least 2 hours.
- Make the meringue: Whisk the egg whites and sugar in a heatproof bowl set over a saucepan of simmering water (do not let the bowl touch the water) until the mixture is warm and the sugar dissolves, 3 to 4 minutes. Remove the bowl from the pan; add the cream of tartar and vanilla and beat with a mixer on medium-high speed until stiff, glossy peaks form, 6 to 8 minutes.
- Assemble the cake: Put 1 cake layer on a platter; spread the lemon curd on top, stopping about 1/2 inch from the edge. Top with the second cake layer and press down gently. Cover the cake with the meringue, using the back of a spoon to make swirly peaks. Brown the meringue with a kitchen torch. Serve immediately or refrigerate up to 1 day.
- Preheat the oven to 350 degrees F. Butter two 9-inch-round cake pans and line the bottoms with parchment paper; butter the parchment and dust the pans with flour, tapping out the excess.
- Whisk 3 cups flour, the baking powder and salt in a bowl until combined. Beat 2 sticks butter and the sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 3 minutes. Reduce the mixer speed to medium; beat in the eggs, one at a time, scraping down the bowl as needed. Beat in the vanilla. (The mixture may look separated at this point.)
- Mix 1/2 cup water with the cream in a liquid measuring cup or bowl. Beat the flour mixture into the butter mixture in 3 batches, alternating with the cream mixture, beginning and ending with flour, until just smooth.
- Divide the batter between the prepared pans. Bake until the cakes are lightly golden on top and the centers spring back when pressed, 25 to 30 minutes. Transfer to racks and let cool 10 minutes, then run a knife around the edge of the pans and turn the cakes out onto the racks to cool completely. Remove the parchment. Trim the tops of the cakes with a long serrated knife to make them level, if desired.
LEMON MERINGUE FRIDGE CAKE
This tangy dessert looks impressive but takes very little effort - most of the ingredients are ready-made, so it is simply a matter of construction

- Grease and line a 900g loaf tin with baking parchment. Line the base with a row of biscuits. In a bowl, whisk the lemon zest and juice, mascarpone, cream, sugar and 50g lemon curd until thick and holding its shape. Transfer roughly 1 /4 of the mixture to a bowl and chill in the fridge for later.
- Layer the mascarpone and biscuits into the tin, and add the remaining lemon curd in spoonfuls between the layers. Break some biscuits to fill any gaps. You should have about four layers of biscuits, finishing with a layer of cream. Wrap the tin in cling film and chill for at least 8 hrs, or up to 48 hrs.
- When you're ready to serve, unwrap the tin and turn the pudding out onto a platter or board. Peel off the parchment. Crush 4 of the mini meringues to a rubble texture and stir through the reserved mascarpone mix. Spread across the top of the pudding, then press the remaining mini meringues and lemon slices on top. Leftovers will keep for one day.

- Combine the sugar, egg whites, and lemon juice in the bowl of an electric mixer set over a pan of simmering water. Whisk until sugar is dissolved, about 3 minutes.
- Transfer bowl to the mixer stand fitted with the whisk attachment. Beat on medium speed for 10 minutes. Increase to high speed and beat until stiff glossy peaks form, 10 to 15 minutes more.

- Preheat the oven to 350F degrees.
- Butter 2 9" round cake pans and line the bottoms with parchment.
- Butter the paper and dust the pans lightly with flour, tapping out any excess In a medium bowl, sift together the cake flour, baking powder and salt.
- In the bowl of a stand mixer, beat the sugar with the butter at high speed until fluffy, about 5 minutes.
- Add the eggs and egg yolks, 1 at a time, beating well after each addition.
- Beat in the vanilla.
- Beat in the flour mixture at low speed in 3 batches, alternating with the milk, beat until just smooth.
- Scrape the batter into the prepared pans and smooth the surfaces.
- Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool on racks for 10 minutes, then unmold onto the racks and let cool completely.
- Curd------------.
- Fill a large bowl with ice water.
- In a heavy medium sauce pan, whisk the egg yolks with the sugar, lemon juice and salt.
- Add the butter and cook over moderate heat, stirring constantly until the curd is thick nd just beginning to simmer, about 5 minutes.
- Set the saucepan in the water bath and chill the curd, whisking occasionally.
- Meringue------.
- In a saucepan, bring 1" of water to a boil.
- In the clean bowl of a stand mixer, whisk the sugar, egg whites and lemon juice.
- Set the bowl over the saucepan and cook, whisking constantly until the sugar dissolves, about 6 minutes.
- Return the bowl to the mixer and beat the meringue at medium speed for about 10 minutes, or until cooled to room temperature.
- Continue beating at high speed until the meringue is thick, shiny and billowy, about 15 minutes longer.
- Assemble the cake-----------.
- Using a serrated knife, trim the cake tops to make them level.
- Halve each cake horizontally.
- Set 1 layer on a cake plate, cut side up, spread with 1/3 of the curd.
- Set another layer on top and spread with another 1/3 of the curd.
- Set another layer on top and spread the remaining curd, cover with the final layer of cake, cut side down.
- With a large offset spatula, frost the sides of the cake with a thin layer of meringue.
- Top the cake with the remaining meringue and swirl decoratively, then serve.
- Make ahead: The layers can be wrapped in plastic and refrigerated for 2 days or frozen up to 1 month.
- The curd can be refrigerated for 3 days.
- The assembled cake can be refrigerated for up to 2 days.

LEMON MERINGUE CAKE
This is a cake recipe I got from Taste of Home, quite some time ago. It is very popular with us with it's tangy lemon flavour and something I prepare often when we are having company. Cook times are approximate.

Steps:
- For cake, cream together butter and sugar.
- Beat in egg plus egg yolks.
- Sift together dry ingredients.
- Stir vanilla into milk.
- Add dry ingredients alternately with milk.
- Mix well and pour into a buttered and floured 9 inch round cake pan.
- Bake at 350*F for 25 to 30 minutes, til top springs back when lightly touched.
- REmove from pan and cool completely on a wire rack.
- For filling, stir together in top of double boiler, sugar and flour.
- Stir in egg yolks, water, lemon peel and lemon juice.
- Cook over simmering water until mixture bubbles and thickens.
- Remove from heat.
- Let cool 5 minutes, then stir in butter until melted.
- Mix well.
- Let cool completely.
- For meringue beat together egg whites and cream of tartar until soft peaks form.
- Continue to beat while slowly adding sugar, until stiff peaks form and is glossy.
- To assemble, place cake on oven proof plate, spread with lemon filling then cover completely with meringue.
- Bake at 350*F until meringue is lightly browned, about 10 minutes.
- Remove from oven and cool completely.
- Serve to some very appreciative friends and family!
DOLESTER MILES'S LEMON MERINGUE TART
The celebrated pastry chef Dolester Miles learned to bake in a small town called Bessemer, outside Birmingham, Ala. She took the tastes of desserts passed down from her mother and her aunt, and re-worked them with the techniques she has picked up in her more than 30 years at the Birmingham restaurants Highlands Bar & Grill, Chez Fonfon and Bottega. This lemon meringue tart, reminiscent of a Southern icebox cake but with a French feel, is a perfect example. She stirs in white chocolate to give the curd a luscious mouth feel, and finishes it with a drift of soft Swiss meringue toasted with a blowtorch. A few seconds under the broiler will work, too. She cautions cooks never to take their eyes off the tart during that final step. "It'll get away from you fast," she said.

- In the bowl of a food processor, place flour, confectioners' sugar and salt, and quickly pulse to combine. Add butter and pulse until the mixture resembles coarse bread crumbs, then add egg yolks and pulse until the dough comes together. Form the dough into a disc, wrap in plastic and chill for at least 1 hour.
- Heat oven to 350 degrees.
- Roll out dough on a lightly floured surface to a thickness of 1/8 inch, then transfer it into a 9 1/2-inch tart pan with a removable bottom. Press the dough evenly over the bottom and up the sides of the pan, then trim it by rolling your rolling pin over the top of the tart pan edge. Pierce crust all over with a fork and freeze for 30 minutes. Remove from freezer, place tart pan on a baking sheet, and bake for about 20 minutes until golden. Remove tart from baking sheet and let pan cool slightly on a rack.
- Meanwhile, prepare the filling: Separate the eggs, saving 3 of the whites to use in the meringue. In a small saucepan, stir together 1/2 cup/101 grams sugar, the lemon zest and juice and the egg yolks. Cook over medium heat, whisking constantly, until quite warm. Stir in butter and continue to cook, whisking to prevent burning, for about 7 to 10 minutes or until the mixture becomes thick. Remove from heat and stir in the white chocolate until it melts into the mixture.
- Pour lemon mixture through a fine-mesh strainer into a medium bowl and use a spatula to press until just the solids remain. Discard the solids. Spoon mixture into the prepared tart shell and chill for 4 hours.
- Make the meringue: Set up a double boiler and bring the water in the bottom pan to a boil over medium-high heat. Combine the 3 egg whites with 3/4 cup/151 grams sugar in the top of the double boiler and whisk constantly until the sugar has dissolved and the mixture is hot.
- Pour the meringue mixture into the bowl of a stand mixer fitted with the whisk attachment. Whip at medium-high speed for about 2 minutes then increase speed to high and whip for about 4 to 6 minutes more or until the mixture is stiff. Spoon meringue over tart and spread with an offset spatula.
- Using a kitchen torch, brown the meringue lightly, holding the torch about 2 inches away from the tart. Alternatively, place tart under a preheated broiler with the oven rack placed 8 inches from the heat source. Broil 30 to 45 seconds, watching carefully so the meringue turns golden brown and does not burn. Remove tart ring and serve immediately.
