Easy, easy recipe! But don't skip the first step....toasting the pecans before adding the chocolate is what makes this recipe! From Southern Living October 1985 magazine.

3 tablespoons butter
3 cups pecan pieces
6 (2 ounce) baking chocolate squares

Steps:

  • Melt butter in a 15x10 inch jelly roll pan while oven preheats to 300 degrees. Spread the pecans in the pan, tossing to coat with the butter. Bake at 300 degrees for 30 minutes, stirring twice.
  • Melt the chocolate candy coating in a heavy saucepan over low heat. Cool for 2 minutes; add pecans, and stir until coated. Drop by rounded teaspoons onto wax paper. Cool. Peel from the wax paper and store in an airtight container.

2 tablespoons peanut butter
2 cups chopped pecans

Steps:

  • Melt chocolate and butterscotch in a double boiler.
  • Add peanut butter; stir.
  • Add pecans; mix well.
  • Drop by the teaspoonful onto waxed paper.
  • Allow to cool.

EASY.....and the saltiness with the sweet chocolate is divine. Use very good quality chocolates, like Ghiardelli or better, for best results.

1 cup pecans, coarsely chopped
3 (4 ounce) bars bittersweet chocolate
3 (4 ounce) bars white chocolate
1 teaspoon coarse sea salt

Steps:

  • Preheat oven to 350 degrees.
  • Place pecans in a single layer on a baking sheet. Bake until toasted, 8-10 minutes.
  • Decrease oven temperature to 225 degrees.
  • Line a 17" x 12" jelly roll pan with parchment paper. Break each chocolate bar into 8 equal pieces. You will have 48 pieces total. Arrange in a checkboard pattern in jelly roll pan, alternating white and dark chocolate. Pieces will touch each other like puzzle pieces.
  • Bake chocolate for 5 minutes or just until melted. Remove pan to a wire rack. Swirl chocolates into a marble pattern using a wooden pick. Sprinkle chocolate evenly with toasted pecans and salt.
  • Chill 1 hour or until firm. Break chocolate into pieces. Store in an airtight container in refrigerator for up to one month.

3 (4 ounce) bars white baking chocolate
1 teaspoon coarse sea salt (or kosher salt)

Steps:

  • Place pecans in a single layer on a baking sheet. Bake at 350 degrees for 8 - 10, until toasted.
  • Line a 17x12 jelly roll pan with parchment paper. Break each chocolate bar into eight equal pieces (you will end up with 48 pieces in total). Arrange them in a checker-board pattern on the jelly roll pan. The pieces will touch.
  • Bake at 225 degrees for 5 minutes or just until chocolate is melted. Remove pan to a wire rack. Swirl chocolate with a wooden pick. Sprinkle evenly with pecans and salt.
  • Chill 1 hour or until firm. Break into pieces. Store in airtight container in refrigerator up to one month.

1/2 pound pecan halves
75 caramels
3 tablespoons milk
1 pound dark chocolate candy coating, melted

Steps:

  • On waxed paper, place pecan halves in pairs 2 in. apart. In a heavy saucepan over medium-low heat, cook and stir the caramels and milk until melted. Pour about 2 teaspoons of caramel mixture over each pair of pecans. Let stand until set., With buttered fingers, shape pecan clusters into balls. Dip in candy coating. Place on waxed paper-lined baking sheets. Refrigerate until set. Store in an airtight container.
