SCHINKENNUDELN (GERMAN HAM AND NOODLES CASSEROLE)
Schinkennudeln is an easy German recipe for ham and noodles. This version, which includes Swiss cheese and is baked in the oven until bubbly, is inspired by the one served at the Germany booth at the Epcot Food & Wine Festival at Walt Disney World.

- Preheat the oven to 375ºF (190°C). Spray a 9×13-inch baking dish with cooking spray and set aside.
- Boil the egg noodles in salted water until al dente. Drain, return noodles to the empty pot and set aside off the heat.
- Meanwhile, in a medium skillet over medium-high heat melt the butter and add the chopped ham and onion. Cook, stirring frequently, until the onion has softened, about 4 to 5 minutes. Remove from the heat and set aside.
- To the pot of drained cooked egg noodles stir in the onion and ham, cream or milk, eggs, seasonings, and half the grated cheese. Pour the mixture into the prepared baking dish, cover with foil and bake for 30 minutes.
- Remove from the oven, top with the remaining grated cheese and return to the oven, uncovered, for another 15 minutes until melted and bubbly.
- Allow the casserole to set and cool for about 10 to 15 minutes before cutting into it to serve.

Steps:
- Cook spaghetti according to package directions; drain. Meanwhile, heat oil and butter in a large skillet. Saute onion until translucent; add ham and bacon, if using. Cook until meat is done; quickly stir in seasonings. Remove ham mixture from skillet and keep warm. Add spaghetti to skillet; tom with ham mixture. Let fry without stirring until spaghetti turns golden on bottom. Stir from bottom, mixing everything together; fry until heated through. Just before serving, reduce heat to low and pour in eggs. Stir and cook 3 to 5 minutes, until eggs are cooked. Serve with catsup, if desired.

- Whisk the eggs and heavy cream together and set aside. Dice the ham; finely chop the chives and/or parsley; make sure the al dente pasta is nicely drained.
- Heat the butter in a large skillet over medium-high heat. Add the pasta and ham and pan fry until they begin to get golden brown and crispy. Stir them and turn over while they are cooking to ensure even contact with the bottom of the skillet.
