A little meal for Friday's lunch on the Scarsdale Medical Diet, to go with the required piece of toasted protein bread. It'd be good with chips or pita bread off the diet too!

Number Of Ingredients 4

1 cup frozen spinach (or more)
1/2 cup cheese, shreds assorted (preferably low fat, I reccomend mozarella and "fiesta cheeses")
1/2 tablespoon ground cumin
1 pinch pepper

Steps:

  • Put the spinach in a microwave-safe bowl with a dash of water. Heat on high in the microwave for 8-10 minutes. Mix once during cooking.
  • When the spinach is ready, add the cheeses to the bowl. Mix it up well, and add the cumin and pepper to taste. Pop it in the microwave for another 30 seconds.
  • Spread on something good, like toasted protein bread!

1 (10 ounce) package frozen chopped spinach, thawed
1 1/4 cups grated parmesan cheese (divided use)
1/4 cup finely chopped onion
1 (3 ounce) package cream cheese, softened
3/4 cup mayonnaise
1 teaspoon hot sauce
1 teaspoon dried Italian seasoning
1/2 teaspoon garlic powder
1/4 teaspoon fresh pepper
1 teaspoon paprika

Steps:

  • .Press spinach between paper towels to remove excess moisture, or squeeze with hands thoroughly.
  • Combine spinach, 1 c Parmesan and next 7 ingredients.
  • Spoon into a one quart baking dish.
  • Bake at 350 for 10 minutes.
  • Sprinkle with remaining 1/4 c parmesan and paprika.
  • Bake an additional 10 minutes.
  • Serve hot with crackers.
