- Preheat oven to 325 degrees. Lightly spray a 2 quart casserole dish with cooking spray and set aside. In a small saucepan melt 2 Tablespoons butter over medium heat and which in the flour, salt and pepper. Add the whipping cream and stir for about 2 minutes until it starts to thicken. Add 1/4 cup parmesan cheese.
- Arrange half of the potatoes in the prepared casserole dish overlapping each other. Spread half of the sauce on top followed by 1/2 cup mozzarella cheese. Repeat with another layer of potatoes and sauce topped with mozzarella cheese and remaining parmesan cheese.
- Cover with foil and bake for 40 minutes. Uncover and bake for 25-30 minutes more until the potatoes are fork tender and the top is starting to brown. Sprinkle with chives before serving.

- Preheat oven to 350 degrees. Butter a 12-cup baking dish. Melt butter in a skillet over medium heat. Add leeks, and cook until translucent, 3 to 4 minutes.
- Arrange 1/3 of the potatoes in dish, slightly overlapping slices. Sprinkle with 1/2 of the salt, 1/2 of the nutmeg, and pepper, followed by 1/2 of the leeks and 1/3 of the cheese. Repeat. Top with remaining potatoes in a spiral. Sprinkle with remaining cheese. Combine cream and stock. Pour over cheese and potatoes. Cover with parchment and foil. (Mixture can be refrigerated overnight.)

- Preheat the oven to 180°C/350°F.
- Melt the butter in a saucepan set over medium heat.
- Whisk in the flour then cook for a minute or two until lightly golden.
- Slowly whisk in the cream and milk until the sauce is smooth.
- Add the nutmeg, cayenne, salt and pepper then reduce the heat and cook, stirring regularly, until the sauce is silky and thick.
- Remove from the heat and stir in the grated cheese.
- Peel and thinly slice the potatoes (½cm/¼inch thick).
- Place a layer of potatoes into an oven-proof baking dish (approximately 30cmx20cm / 9x13in) then season with salt and pepper.

- Set the oven rack to the middle position and preheat to 375ºF (191ºC).
- Simmer heavy cream, milk, minced garlic, salt, pepper, nutmeg, and thyme in a medium saucepan over medium-low heat, stirring occasionally, 10 minutes.
- Remove thyme and transfer milk mixture to a large measuring cup. Cool to room temperature while preparing the potatoes.
- Wash and peel potatoes, cut into ¼-inch thick slices.

- Preheat the oven to 350 degrees F. Brush a shallow 2 1/2-quart baking dish with butter. Put the potatoes in a large pot. Julia Child Rules!!! "Gratin Jurassien" Named for the Juras region in Switzerland. A mainly Francophone region in the Jura mountains that border France. Use more cheese if you want to, it won't hurt, especially on the top of the casserole. This is filling and rich and goes wonderfully with beef, pork, lamb, pretty much anything. It also freezes and reheats nicely. You can also saute pearl onions in butter and put them in amongst the potatoes and cheese. An afterthought: try to get waxy potatoes, like reds or golds, to make sure that the slices don't turn to mush when absorbing the cream. (and that should be emmenthal cheese, but I can't get it to correct. Sorry.)

- First: Please read the introduction.
- Slice the potatoes into 1/8 inch slice.
- Place in bowl and cover with cold water.
- Let soak for at least an hour.
- Drain well and pat dry.
- Heat oven to 300°F.

- Preheat oven to 400F and to a 9×13-inch casserole dish or baking pan, arrange the potatoes upright in the pan along one of the long edges. Repeat with the remaining potatoes until you have three columns of potato slices; set aside. Tip - If you have a mandoline, use it here!
- To a saucepan, add and melt the butter, add the onion and garlic, and cook for 5 minutes; stir frequently.

- Peel and thinly slice the raw potatoes.
- Layer the potatoes in a greased glass baking dish, putting minced onion, salt and pepper, to taste, between layers.

- Wash the potatoes and peel the skin if you like. I did not as the golden potatoes have a very thin skin so they didn't need it.
- Slice the potatoes about 1/8 - 1/4 inch thick.
- Place a layer of potatoes on the bottom of the casserole dish.
- Sprinkle some of the cheese.
- Sprinkle a little black pepper on top.
- Repeat layering potatoes and cheese until you fill the dish.
- Pour cream over all the potatoes.
