2 tablespoons butter
2 tablespoons all-purpose flour
1 teaspoon salt
1/2 teaspoon freshly ground black pepper
2 cup whipping cream (can also use half and half)
1/2 cup grated Parmesan cheese (divided)
1 cup shredded mozzarella cheese (divided)
2 pounds russet potatoes (peeled and sliced about 1/8 inch thick)
Snipped fresh chives for garnish

Steps:

  • Preheat oven to 325 degrees. Lightly spray a 2 quart casserole dish with cooking spray and set aside. In a small saucepan melt 2 Tablespoons butter over medium heat and which in the flour, salt and pepper. Add the whipping cream and stir for about 2 minutes until it starts to thicken. Add 1/4 cup parmesan cheese.
  • Arrange half of the potatoes in the prepared casserole dish overlapping each other. Spread half of the sauce on top followed by 1/2 cup mozzarella cheese. Repeat with another layer of potatoes and sauce topped with mozzarella cheese and remaining parmesan cheese.
  • Cover with foil and bake for 40 minutes. Uncover and bake for 25-30 minutes more until the potatoes are fork tender and the top is starting to brown. Sprinkle with chives before serving.

1/8 teaspoon freshly grated nutmeg
Freshly ground pepper, to taste
8 ounces Gruyere cheese, shredded (about 3 cups)
1 cup heavy cream
1 cup homemade or low-sodium store-bought chicken stock

Steps:

  • Preheat oven to 350 degrees. Butter a 12-cup baking dish. Melt butter in a skillet over medium heat. Add leeks, and cook until translucent, 3 to 4 minutes.
  • Arrange 1/3 of the potatoes in dish, slightly overlapping slices. Sprinkle with 1/2 of the salt, 1/2 of the nutmeg, and pepper, followed by 1/2 of the leeks and 1/3 of the cheese. Repeat. Top with remaining potatoes in a spiral. Sprinkle with remaining cheese. Combine cream and stock. Pour over cheese and potatoes. Cover with parchment and foil. (Mixture can be refrigerated overnight.)
  • Bake for 30 minutes. Increase temperature to 425 degrees, uncover, and cook until top is golden brown and potatoes are tender, about 45 minutes. Let rest for 15 to 30 minutes before serving.

1 kg (2lbs) potatoes
4 tbsp butter
4 tbsp flour
1 cup cream
2 cups milk
1 cup grated cheese
½ tsp ground nutmeg
¼ tsp cayenne pepper
salt and pepper (to taste )
4 tbsp grated Parmesan cheese

Steps:

  • Preheat the oven to 180°C/350°F.
  • Melt the butter in a saucepan set over medium heat.
  • Whisk in the flour then cook for a minute or two until lightly golden.
  • Slowly whisk in the cream and milk until the sauce is smooth.
  • Add the nutmeg, cayenne, salt and pepper then reduce the heat and cook, stirring regularly, until the sauce is silky and thick.
  • Remove from the heat and stir in the grated cheese.
  • Peel and thinly slice the potatoes (½cm/¼inch thick).
  • Place a layer of potatoes into an oven-proof baking dish (approximately 30cmx20cm / 9x13in) then season with salt and pepper.
  • Pour over some of the cheese sauce. Repeat until all the potatoes and sauce has been used, covering the last layer of the potatoes with the remaining sauce.
  • Cover the baking dish tightly with foil then place in the oven and allow to bake for 45-60 minutes or until a knife can easily be inserted.
  • Remove from the oven, scatter over the grated Parmesan and place under the broiler for 5-7 minutes or until golden brown.
  • Remove from the oven, allow to cool for 10 minutes then serve.

1 teaspoon kosher salt

Steps:

  • Set the oven rack to the middle position and preheat to 375ºF (191ºC).
  • Simmer heavy cream, milk, minced garlic, salt, pepper, nutmeg, and thyme in a medium saucepan over medium-low heat, stirring occasionally, 10 minutes.
  • Remove thyme and transfer milk mixture to a large measuring cup. Cool to room temperature while preparing the potatoes.
  • Wash and peel potatoes, cut into ¼-inch thick slices.
  • Grease the bottom and sides of an 8-Inch square baking dish with 1 tablespoon of melted butter.

Steps:

  • Preheat the oven to 350°F and set an oven rack in the middle position. Grease an 8-inch (or 2-quart) baking dish with butter.

  • Preheat the oven to 350 degrees F. Brush a shallow 2 1/2-quart baking dish with butter. Put the potatoes in a large pot. Julia Child Rules!!! "Gratin Jurassien" Named for the Juras region in Switzerland. A mainly Francophone region in the Jura mountains that border France. Use more cheese if you want to, it won't hurt, especially on the top of the casserole. This is filling and rich and goes wonderfully with beef, pork, lamb, pretty much anything. It also freezes and reheats nicely. You can also saute pearl onions in butter and put them in amongst the potatoes and cheese. An afterthought: try to get waxy potatoes, like reds or golds, to make sure that the slices don't turn to mush when absorbing the cream. (and that should be emmenthal cheese, but I can't get it to correct. Sorry.)

1 large white or yellow onion, diced small
3 to 4 cloves garlic, finely minced or pressed
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 teaspoons Kosher salt, or to taste
2 teaspoons seasoning blend such as Mrs. Dash, Trader Joe's 21 Salute, or poultry seasoning*
1 teaspoon freshly ground black pepper, or to taste
1 cup vegetable or chicken broth
1 cup heavy cream
1 cup sour cream
1.5 cups shredded Colby Jack cheese, divided
1.5 cups shredded cheddar cheese, divided

Steps:

  • Preheat oven to 400F and to a 9×13-inch casserole dish or baking pan, arrange the potatoes upright in the pan along one of the long edges. Repeat with the remaining potatoes until you have three columns of potato slices; set aside. Tip - If you have a mandoline, use it here!
  • To a saucepan, add and melt the butter, add the onion and garlic, and cook for 5 minutes; stir frequently.
  • Add flour, and cook for another minute, whisking nearly constantly, or until the flour is lightly golden browned. This is what's called a 'roux' and is important so that later on the mixture properly thickens.
  • Add the salt, seasoning blend, pepper, broth, cream, and stir until somewhat thickened, about 3 minutes.
  • Turn off the heat and stir in 1 cup each of the Colby Jack and cheddar cheeses and 1/2 cup of the Parmesan; set aside momentarily.

5 medium baking potatoes
1 quart heavy cream
salt and pepper, to taste
minced onion, to taste
1 cup cheddar cheese

Steps:

  • Preheat oven to 350 degrees.
  • Peel and thinly slice the raw potatoes.
  • Layer the potatoes in a greased glass baking dish, putting minced onion, salt and pepper, to taste, between layers.
  • Pour enough heavy cream over potatoes till it reaches one inch below top of potatoes.
  • Bake at 350 degrees until browned and bubbly and fork tender (1-2 hours). If it becomes browned and tender but is still runny stir and place back in oven until thickened. Once this is done, remove from oven and sprinkle the cheese on top and place back in oven until bubbly.
  • The beauty of this recipe is that you can use any amount of potatoes you want. Put enough heavy cream to come one inch below top of potatoes.
  • I used 5 medium russet potatoes and 3 cups of heavy cream. I then layered mine in a greased 2.75 square glass baking pan. The amount that I fixed cooked for 1 hour 40 minutes.

Super Simple Scalloped Potatoes image

Here's the perfect side dish for your next holiday meal. Scalloped potatoes that are quick and very easy to make.

Number Of Ingredients 4

2.5 pounds of golden potatoes, you could use any potato
1.5 cups cream
2 cups shredded cheese, I used white cheddar
black pepper

Steps:

  • Spray or grease a large casserole dish.
  • Wash the potatoes and peel the skin if you like. I did not as the golden potatoes have a very thin skin so they didn't need it.
  • Slice the potatoes about 1/8 - 1/4 inch thick.
  • Place a layer of potatoes on the bottom of the casserole dish.
  • Sprinkle some of the cheese.
  • Sprinkle a little black pepper on top.
  • Repeat layering potatoes and cheese until you fill the dish.
  • Pour cream over all the potatoes.
  • Cover with foil and place in the middle of a preheat 375 degree oven for about 1 hour.
  • Check with a fork to see if the potatoes are tender.
  • Then remove foil and place until the broiler to brown. This will only take 1-2 minutes.
  • Let cool slightly and serve.
