SCALLOPED POTATOES AND HAM
Short on time? I've included directions to help cut down on baking time. This involves cooking the potato mixture over medium-high heat for about 5 minutes to begin the cooking process. This helps reduce the baking time.

- Preheat oven to 375F. Peel potatoes. Using a mandoline or food processor, slice the potatoes very thin.
- In a large mixing bowl, whisk together 1/2 cup cream and flour, until there are no lumps. Continue whisking in the remaining cream and milk. Add salt.
- Place potatoes, onions, and cream mixture in a large heavy saucepan. Turn on heat to medium-high, and cook, stirring gently and occasionally, for about 5 minutes, until mixture comes to a simmer.
- Stir in ham. Pour mixture into a large casserole dish. Bake for about 50 minutes, until top begins to brown. Remove from oven and cool for a few minutes before serving.
SCALLOPED POTATOES
Here's a great scalloped potato recipe that's so easy and absolutely delicious. The leftovers are just as good, maybe even better, the next day. This is one of my favorite and most prepared recipes, from my 1971 Florence Junior Welfare League cookbook.

Steps:
- In a small sauce pan, melt butter and blend in flour.
- Let sit for a minute.
- Add all of cold milk, stirring with a whisk.
- Season with salt and cayenne.
- Cook sauce on low until smooth and boiling, stirring occasionally with a whisk.
- Reduce heat and stir in cheese.
- Place a half of the sliced potatoes in a lightly greased one quart casserole dish.
- Pour half of cheese sauce over potatoes.
- Repeat with second layer of potatoes and cheese sauce.
- Sprinkle the remaining cheese on top.
- Top with some paprika for color.
- Bake uncovered for about 1 hour at 350°F.
SCALLOPED POTATOES (CURDLE FREE)
This is my Mom's recipe and I've never even wanted to try another. Turns out perfect every time, and is a must at Easter to accompany ham. Kids would kill me if I didn't make it!! I always add lots of thinly sliced onion (ratio 4 cups potato, 2 cups onion!), but I'll submit the recipe as is. Not quite sure how to post yield!

Steps:
- Melt butter in a sauce pan, stir in flour, salt and add milk slowly, stirring constantly until sauce boils and thicken.
- Add potatoes and heat, stirring until the mixture boils again.
- Spoon potatoes into a shallow, greased casserole. Sprinkle 1 T diced butter over top.
- Bake at 350 for 35 minutes. (Mine usually takes longer.).

DAIRY FREE SCALLOPED POTATOES
Comfort food at it's best. Dairy Free Scalloped Potatoes is covered with a homemade creamy white sauce and baked in a casserole. You'll be making it for years to come. Vegan too!

Steps:
- Peel and slice potatoes to measure 6 to 7 cups.
- Place in a large bowl of water as you go along slicing. This will keep the potatoes from turning brown.
- Melt the dairy free butter in a large saucepan.
- Add the flour and stir over medium-heat for a few minutes. Keep stirring so that it is all blended well.
- Pour in the dairy free milk.
- Bring to a low boil stirring often.
- After the sauce comes to a boil turn down the heat to medium and cook until it is smooth and thickens a bit. About 10 to 15 minutes. Add salt and pepper and stir.
- Layer the potatoes in a large 9" x 13" casserole dish, overlapping in a staggered type of style. This lets the sauce get down in between the nooks and crannies.
- Pour the sauce all over the top. Cover with a lid or foil.
- Bake at 350° for 30 minutes.
- Uncover and bake another 60 minutes.
- Remove from oven and sprinkle fresh herbs over the top.
- Let stand for 10 minutes. The sauce will thicken.
