Rutabaga Smash with Bacon image

Bacon provides a simple addition to this tasty side dish that's made with rutabagas and carrots.

2 rutabagas (about 1 lb), peeled, cut into 1-inch cubes
4 large carrots (about 3/4 lb), cut into 1-inch cubes
1 teaspoon salt
1/2 cup butter
1 large sweet onion, thinly sliced, slices cut in half
1/4 cup whipping cream
1/2 teaspoon freshly ground pepper
5 slices thick-sliced bacon, crisply cooked, crumbled (1/3 cup)
Fresh rosemary sprig, if desired

Steps:

  • In 3-quart Dutch oven, place rutabagas, carrots and enough water to cover; add 1/2 teaspoon of the salt. Heat to boiling; reduce heat to low. Cover; simmer 30 to 35 minutes or until tender. Drain.
  • Meanwhile, in 12-inch nonstick skillet, melt 1/4 cup of the butter over medium heat. Cook onion in butter 25 minutes, stirring occasionally, until very tender.
  • In large bowl, mash rutabagas and carrots until almost no lumps remain. Add onion, whipping cream, pepper, remaining 1/4 cup butter and remaining 1/2 teaspoon salt; stir until well blended. Sprinkle with bacon. Garnish with rosemary.

Rutabaga-Potato Mash With Bacon image

For the food historian Jessica B. Harris, humble rutabagas laced with rich, smoky bacon fat were the highlight of every childhood Thanksgiving. The ones her mother cooked were sharper than the ones we buy today, so she cut them with mild potatoes, but you can adjust the proportions to your liking. If bacon is off the menu for you, add butter or olive oil to the pot instead, and more to taste after mashing.

6 strips bacon
2 pounds rutabagas, peeled and cut into 1-inch chunks
2 large baking potatoes, peeled and cut into 1-inch chunks
Pinch of sugar, plus more to taste
Salt and freshly ground black pepper, to taste

Steps:

  • In a large, heavy pot over medium heat, cook bacon until fat is rendered, and bacon is beginning to brown. Add rutabagas and pour in water to cover. Bring to a boil, then lower to a fast simmer and cook 25 minutes.
  • Add potatoes to the pot and cook until both vegetables are very tender, about 20 minutes more. Drain, reserving about 2 cups of cooking liquid. Set bacon aside.
  • Mash the vegetables together until smooth or, for a finer texture, put through a food mill. Add reserved liquid as needed to loosen the mixture. Finely mince bacon and add to the vegetables. Add sugar, salt and pepper and stir well. Taste and adjust the seasonings. Transfer to a serving bowl and serve hot.

3 slices bacon, chopped
2 rutabagas, peeled and diced
2 tablespoons butter
salt and ground black pepper to taste

Steps:

  • Place bacon in a skillet over medium heat; cook and stir until crisp, about 10 minutes. Remove bacon from skillet, reserving 1 to 2 tablespoons bacon grease, to your preference.
  • Bring a large pot of water to a boil. Cook rutabagas in the boiling water until very tender, 15 to 20 minutes. Drain rutabagas and return to the pot.
  • Mix reserved bacon grease, butter, salt, and pepper into rutabagas; blend using an electric mixer until smooth. Stir chopped bacon into the rutabaga mixture.

20 ounces Simply Potatoes Diced Potatoes with Onion
1 (20 ounce) bag frozen rutabagas (turnip)
4 tablespoons butter or 1/2 cup margarine
4 tablespoons flour
1 1/2 cups milk (or use 1-12 oz can of evaporated milk with 2 oz water) or 1 1/2 cups light cream (or use 1-12 oz can of evaporated milk with 2 oz water)
1/2 cup bacon bits

Steps:

  • Combine potatoes and rutabagas in a buttered casserole dish.
  • Cut butter into small pieces and dot vegetables.
  • Sprinkle flour evenly onto vegetables.
  • Pour milk over vegetables.
  • Sprinkle bacon bits over top.
  • Bake for 30-40 minutes until bubbling and slightly brown on top.

I love scalloped and au gratin potatoes. I love bacon. Putting them together makes for some serious comfort food!

5 large potatoes
1 teaspoon salt
1 large onion, sliced
1/2 cup green onion, chopped
3 tablespoons butter
1/3 cup flour
3 1/2 cups milk
1 1/2 cups shredded cheddar cheese
3/4 teaspoon salt
1/8 teaspoon black pepper
6 slices bacon
garlic salt

Steps:

  • Cook bacon until done, but not crispy. Set aside on paper towels to absorb grease and pat dry. Cut into bite sized pieces when cool.
  • Wash potatoes. Bring a large saucepan of water to a boil. Add salt to the boiling water, then add the potatoes. Cook for 10-15 minutes in boiling water (the potatoes will finish cooking in the oven). Set aside and allow to cool. Once you're able to work with the half-cooked potatoes, slice them into 1/2" pieces.
  • In saucepan, melt butter. Saute the onion slices until just tender; remove from pan and set aside. Making sure you still have enough butter in your pan, stir in flour and milk, whisking until smooth. Cook over low heat, stirring/whisking constantly for 1 minute. Add cheese and continue to stir until cheese melts. Stir in 3/4 teaspoon salt and 1/8 teaspoon pepper. Mix in bacon.
  • In a buttered 9x13 quart casserole, layer potatoes, onion, and cheese mixture. Continue to add layers until about one inch from the top, finishing off the top layer with the cheese mixture.
  • Bake in a preheated 350°F oven, covered, for 45 minutes. Take the cover off of the casserole dish, sprinkle with green onions, and bake for another 5 minutes uncovered. Sprinkle lightly with garlic salt before serving, if desired.

  • In a large pot of boiling salted water, cook the rutabagas until crisp-tender, about 5 minutes. Using a slotted spoon, transfer the rutabagas to a large baking sheet and let cool. Add the parsley to the boiling water and cook until tender, about 4 minutes. Drain and let cool slightly. Squeeze dry and coarsely chop.
  • Melt the butter in a large skillet. Add the shallots, jalapeños and garlic. Season lightly with salt and pepper and cook over low heat, stirring occasionally, until softened, about 10 minutes. Add the stock and cook over moderately high heat until reduced by half, about 5 minutes. Add the cream and simmer over low heat until reduced by one-third, about 8 minutes. Stir in the parsley and simmer until thickened, about 4 minutes. Season generously with salt and pepper.
  • Preheat the oven to 400°. Butter a 10-by-15-inch glass baking dish. Arrange half of the rutabaga slices in the dish. Season with salt and pepper. Using a slotted spoon, cover the rutabagas with the parsley and pour half of the cream over the parsley. Top with the remaining rutabagas and pour the remaining cream over them; press gently to even out the slices. Cover with foil and bake for about 1 hour, or until bubbling.
  • Position an oven rack 6 inches from the heat and preheat the broiler. Sprinkle the Parmesan cheese over the rutabagas and broil, rotating the dish as necessary, until browned, about 2 minutes. Let cool for at least 15 minutes before serving.
