10 cups sliced peeled tart apples (about 8 medium)
1/3 cup sugar
2 tablespoons cornstarch
1/2 to 1 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons butter, cubed

Steps:

  • Place apples in a 2-1/2-qt. microwave-safe bowl. Combine the sugar, cornstarch, cinnamon and nutmeg; sprinkle over apples and toss to coat. Dot with butter. Cover and microwave on high for 11-12 minutes or until apples are tender, stirring every 5 minutes.

2 tablespoons butter
2 McIntosh apples, peeled, quartered, cored, and thinly sliced
1 ripe Anjou or Bosc pear, peeled, quartered, and thinly sliced
1/4 teaspoon nutmeg, a few pinches or freshly grated
1/2 teaspoon cinnamon
1/4 cup (a handful) brown sugar
1 pint vanilla ice cream
8 wafer stick cookies, vanilla wafers, or ginger snaps

Steps:

  • Heat a nonstick skillet over moderate heat. Add butter and sliced fruit and saute for 5 minutes until the slices of fruit are tender. Season fruit with nutmeg and cinnamon as it sautes. Sprinkle in brown sugar and cook 2 or 3 minutes longer to coat fruit.
  • Spoon the warm fruit over vanilla ice cream and garnish with a couple of cookies or wafer sticks.
  • Mix and match all apple, all pear, use whichever fruits you have on hand, you can even saute sliced peaches or sliced banana and still use the method provided in this recipe.

3/4 cup plus 2 tablespoons shredded Parmesan cheese, divided
1/2 cup heavy whipping cream
1/2 teaspoon minced fresh thyme or 1/4 teaspoon dried thyme
1/4 teaspoon salt
1/4 teaspoon pepper
4 bacon strips, cooked and crumbled
Chopped fresh parsley, optional

Steps:

  • Preheat oven to 350°. In a small bowl, combine apple slices, sugar and lemon juice; toss to coat. Set aside. In an 8- or 9-in. cast-iron or other ovenproof skillet, heat butter over medium heat. Add onion; cook and stir until crisp-tender, about 3 minutes. Remove from the heat., Alternately arrange potato and apple slices in a single layer in same skillet. Combine 3/4 cup Parmesan cheese, cream, thyme, salt and pepper; pour over top., Bake, uncovered, 50 minutes. Top with bacon and remaining 2 tablespoons Parmesan cheese. Bake until potatoes are tender and top is lightly browned, 5-10 minutes longer. Let stand 10 minutes before serving. If desired, sprinkle with parsley.

¼ cup butter, cut into small cubes

1/4 cup apple cider or 1/4 cup unsweetened apple juice

2 tablespoons white wine (optional)

Steps:

  • Melt butter in a large heavy saucepan over medium heat.

1 teaspoon cinnamon

1 tablespoon fine breadcrumbs
1 tablespoon margarine
1 dash nutmeg

Steps:

  • Preheat oven to 400 degrees Fahrenheit.
