SOBA NOODLE CHICKEN STIR FRY
This Soba Noodle Chicken Stir Fry recipe is an easy, nourishing dish and it's oh so tasty. Its strong flavors make it a snap to get you through the chemo-taste blues. I love soba noodles in any form, in soup, cold with dipping sauce, or in stir-fry as here. In Japan, the water soba is cooked in is considered a tonic, so it makes sense here to reserve some of the liquid to use to moisten the veggies as you sauté them. It will add extra flavor too.

- Fill a medium pot with water. Bring to a boil over a high flame. Once boiling add soba noodles. Cook for about 4 minutes or to packet instructions. Reserve 1 cup of the cooking water. Drain and rinse the soba in cold water to stop the cooking. Set to one side in a colander.
- In a large sauté pan or wok, heat vegetable oil. Add chicken. Sear on both sides until brown and cooked through. Remove from pan and reserve.
- Put the same pan back on the heat and add the carrots, onion, red pepper, ginger, garlic, and red cabbage. Stir and cook for about 5 minutes or until the vegetables are starting to soften. Add soy, sriracha, ½ cup soba water and honey to the pan. Stir to combine with the vegetables. Add chicken and heat through.
- In a separate small nonstick pan, spray with cooking spray and heat on medium. Once hot add eggs. Scramble the eggs. You can do this ahead of time. Once cooked break up the eggs with wooden spoon and add to the pan with the vegetables.
- Add soba noodles and sesame oil to the pan with the vegetables along with a little more soba water if it looks dry. Stir gently to combine with sauce until all ingredients are warmed.

Steps:
- In a large skillet combine sesame oil, canola oil and chili paste; stir-fry 30 seconds. Add garlic and stir fry an additional 30 seconds. Add chicken and 1/4 cup of the soy sauce and stir fry until chicken is no longer pink, about 5 minutes. Remove mixture from pan, set aside, and keep warm.
- In the emptied pan combine the onion, cabbage, and carrots. Stir-fry until cabbage begins to wilt, 2 to 3 minutes. Stir in the remaining soy sauce, cooked noodles, and the chicken mixture to pan and mix to blend. Serve and enjoy!

- Bring a large saucepan of water to a boil. Cook noodles according to package directions.
- While noodles are cooking, in a medium bowl, combine chicken with scallion whites, garlic, ginger, and pepper flakes; season lightly with salt.
- Drain noodles and transfer to another medium bowl. Add scallion greens, soy sauce, and sesame oil.; toss to combine. Season lightly with salt.
- In a large nonstick skillet or wok, heat vegetable oil over medium-high heat. Add chicken, and cook, stirring constantly, until just cooked through, 4-5 minutes. Transfer chicken to a plate.
- Return the pan to the heat. Add cabbage, mushrooms, and water. Cook, stirring until vegetables are wilted, about 4 minutes. Return chicken and noodles to the pan, stir, and cook to heat through, about 1 minute. Toss with lemon juice and serve warm.

- In a large pot or dutch oven cook noodles according to package directions. Drain well and set aside.
- In a large nonstick skillet or wok heat oil over medium heat. Add mushrooms, bell pepper, dried chiles, and garlic cooking for 3 minutes or until the mushrooms are tender. Add the cabbage, cover, and cook for 2 minutes or until the cabbage is wilted.

- Combine first seven ingredients; set aside 3/4 cup.
- Place chicken in remaining marinade.
- Refrigerate 30 minutes.
- Drain chicken and discard marinade.
- Stir-fry chicken in 2 teaspoons oil until no longer pink.
- Remove and keep warm.
- Stir-fry broccoli and carrots in remaining oil.
- Add cabbage and peas.
- Stir-fry until tender crisp.
- Meanwhile cook pasta according to directions.

- Cook the soba noodles: Boil a large pot of water. When it comes to a boil, add the soba noodles and cook according to the directions on the package. (typically 3-6 minutes) Rinse the soba noodles in cold water and set aside.
- Season the sliced chicken with salt and pepper. Heat 1 tablespoon of sesame oil in a large skillet and add the chicken. Allow to brown for 3-4 minutes, then stir fry until it is fully cooked (about 3-4 more minutes). Set cooked chicken aside.
- Prepare the peanut sauce: Combine all the ingredients in a medium bowl and stir until they are well combined. The sauce will look chunky at first until the peanut butter gets mixed with the rest of the liquid ingredients, but it will turn smooth if you keep stirring. Start with 1 Thai chili pepper (or 1/4 tsp red pepper flakes) and see how you like the spiciness. Add the second one if you want more heat.
- In a large wok or skillet with high sides, heat up the other tablespoon of sesame oil. Stir fry the sliced onion for 2-3 minutes, or until it starts to soften. Add all the vegetables - sliced peppers and snow peas - and stir fry for another 2-3 minutes to get them warmed up as well.
