1 medium white or yellow onion
6 tablespoons (3/4 stick) butter
Two 14.5-ounce cans diced tomatoes
One 46-ounce bottle or can tomato juice
3 to 6 tablespoons sugar
1 or 2 tablespoons chicken base, or 3 chicken bouillon cubes
Freshly ground black pepper
1 cup sherry, optional
1 1/2 cups heavy cream
1/4 cup chopped fresh basil
1/4 cup chopped flat-leaf parsley

Steps:

  • To begin, dice the onion. Melt the butter in a large pot or Dutch oven. Throw in the onion and cook until translucent.
  • Now dump in the diced tomatoes and stir to combine. Add the tomato juice.
  • Next - and this is important - in order to combat the acidity of the tomatoes add 3 to 6 tablespoons of sugar. Now, you'll want to start on the low side, then taste and add more as needed. Some tomatoes and juice have more of an acidic bite than others. (For what it's worth, and I realize it's not worth much, I use 6 tablespoons of sugar.)
  • Next, add 1 or 2 tablespoons chicken base to the pot. I added 3, and it wound up being a little too much.
  • Now you can add lots of freshly ground black pepper. Stir to combine, then heat almost to a boil. Then turn off the heat.
  • Add in the sherry if desired. Stir in the cream. Add the basil and parsley and stir.
  • Serve the soup warm!

2 tablespoons olive oil, plus more for serving
1 stalk celery, diced
1 small onion, diced
2 cloves garlic, minced
Kosher salt and freshly ground black pepper
Two 28-ounce cans whole peeled tomatoes, crushed by hand
1 1/2 cups vegetable broth
1 teaspoon fresh thyme leaves
1/2 stick (4 tablespoons) unsalted butter

Steps:

  • Heat the oil in a large heavy-bottomed saucepan over medium heat. Add the celery, onions, garlic and 1/2 teaspoon salt. Cook, stirring often, until the vegetables are softened but not browned, about 10 minutes. Stir in the crushed tomatoes. Add the broth and thyme leaves. Cover and bring to a simmer. Cook, stirring occasionally, for 1 hour.
  • Let the hot soup cool for about 5 minutes or so, then transfer half of it to a blender filling no more than halfway. Add 2 tablespoons of the butter. Remove the center cap from the lid and place it on the blender. Cover the lid with a kitchen towel to catch splatters, and pulse until smooth. Pour into a clean pot or container. Repeat with the remaining soup and butter. Season with salt and pepper.
  • Ladle the soup into bowls and drizzle with more oil before serving.

This soup paired with a grilled cheese sandwich is the best. My family used to always eat the tomato soup in a can, but DH didn't like it, so I was on a mission for a homemade tomato soup and my neighbor gave me his recipe. DH loved it and the whole family was happy. I hope you enjoy too.

1/4 cup chopped celery
2 tablespoons chopped green onions
1 tablespoon butter
2 teaspoons flour
8 ounces stewed tomatoes
1 cup water
1/4 cup dry white wine
1 chicken bouillon cube
2 slices bacon, cooked crisp and crumbled

Steps:

  • Cook celery and onion in butter till tender but not brown.
  • Blend in flour.
  • Add remaining ingredients, except bacon; cook and stir until slightly thick.
  • Reduce heat; cook slowly 15 minutes, stirring occasionally.
  • Garnish with bacon.

This soup has an amazing blend of tomato, roasted garlic and herbs. The balsalmic vinegar gives it that little punch that creates a flavour explosion on your pallet and makes you want more! I've often tried to make it in batches to freeze but it usually doesn't last that long. Served with garlic bread or bruschetta, it is more than just a a satisfying meal. Garnish with thin ribbons of fresh basil and it is a meal you'd be proud to serve your guests!

5 plum tomatoes, sliced in half
10 garlic cloves, minced
1 small onion, sliced
1 tablespoon dried thyme
1/4 teaspoon dried basil
1 teaspoon kosher salt
1 1/2 teaspoons pepper
2 tablespoons balsamic vinegar
1 tablespoon olive oil
2 teaspoons brown sugar, packed
1/2 cup tomato juice (or clamato juice or V8 juice)
1/2 cup canned crushed tomatoes
1/2 teaspoon baking soda
1 1/2 cups evaporated milk (or cream)

Steps:

  • Preheat oven to 350°F Place tomatoes in a shallow baking dish with sides just large enough to hold them. Cover tomatoes with the garlic, thinly sliced onion, thyme, basil, salt, pepper, balsamic vinegar, oil and sugar. Cover the pan with foil and roast in the oven for 30 minutes or until the vegetables are tender. To add an extra layer of flavour, skip covering the pan and cook until some nice colour develops on the onions, garlic and tomatos.
  • Remove pan from oven and cool slightly. Place mixture in a blender, puree then strain into a clean sauce pan. There should be about 2-1/4 cups tomato broth. Add tomato juice and tomato puree, stir. Add baking soda and stir well. Add evaporated milk (or cream). Bring soup to a simmer over med heat. Reduce heat and simmer for 20 minutes. Serve hot and garnish with croutons and thin ribbons of sliced fresh basil.

Yield serves 4 for lunch or 6 as a starter

Number Of Ingredients 9

1-1.25kg/2lb 4oz-2lb 12oz ripe tomatoes
1 medium onion
1 small carrot
1 celery stick
2 tbsp olive oil
2 squirts of tomato purée (about 2 tsp)
a good pinch of sugar
2 bay leaves
1.2 litres/ 2 pints hot vegetable stock (made with boiling water and 4 rounded tsp bouillon powder or 2 stock cubes)

Steps:

  • Firstly, prepare your vegetables. You need 1-1.25kg/2lb 4oz-2lb 12oz ripe tomatoes. If the tomatoes are on their vines, pull them off. The green stalky bits should come off at the same time, but if they don't, just pull or twist them off afterwards. Throw the vines and green bits away and wash the tomatoes. Now cut each tomato into quarters and slice off any hard cores (they don't soften during cooking and you'd get hard bits in the soup at the end). Peel 1 medium onion and 1 small carrot and chop them into small pieces. Chop 1 celery stick roughly the same size.
  • Spoon 2 tbsp olive oil into a large heavy-based pan and heat it over a low heat. Hold your hand over the pan until you can feel the heat rising from the oil, then tip in the onion, carrot and celery and mix them together with a wooden spoon. Still with the heat low, cook the vegetables until they're soft and faintly coloured. This should take about 10 minutes and you should stir them two or three times so they cook evenly and don't stick to the bottom of the pan.
  • Holding the tube over the pan, squirt in about 2 tsp of tomato purée, then stir it around so it turns the vegetables red. Shoot the tomatoes in off the chopping board, sprinkle in a good pinch of sugar and grind in a little black pepper. Tear 2 bay leaves into a few pieces and throw them into the pan. Stir to mix everything together, put the lid on the pan and let the tomatoes stew over a low heat for 10 minutes until they shrink down in the pan and their juices flow nicely. From time to time, give the pan a good shake - this will keep everything well mixed.
  • Slowly pour in the 1.2 litres/ 2 pints of hot stock (made with boiling water and 4 rounded tsp bouillon powder or 2 stock cubes), stirring at the same time to mix it with the vegetables. Turn up the heat as high as it will go and wait until everything is bubbling, then turn the heat down to low again and put the lid back on the pan. Cook gently for 25 minutes, stirring a couple of times. At the end of cooking the tomatoes will have broken down and be very slushy looking.
  • Remove the pan from the heat, take the lid off and stand back for a few seconds or so while the steam escapes, then fish out the pieces of bay leaf and throw them away. Ladle the soup into your blender until it's about three-quarters full, fit the lid on tightly and turn the machine on full. Blitz until the soup's smooth (stop the machine and lift the lid to check after about 30 seconds), then pour the puréed soup into a large bowl. Repeat with the soup that's left in the pan. (The soup may now be frozen for up to 3 months. Defrost before reheating.)
  • Pour the puréed soup back into the pan and reheat it over a medium heat for a few minutes, stirring occasionally until you can see bubbles breaking gently on the surface. Taste a spoonful and add a pinch or two of salt if you think the soup needs it, plus more pepper and sugar if you like. If the colour's not a deep enough red for you, plop in another teaspoon of tomato purée and stir until it dissolves. Ladle into bowls and serve. Or sieve and serve chilled with some cream swirled in. 2 tbsp olive oil
2 onions , chopped
2 carrots , chopped
2 garlic cloves , crushed
2 red peppers , chopped
1 large sweet potato , peeled and chopped
2 x 400g cans tomatoes
1 low-salt veg or chicken stock cube
1 tsp dried oregano
3 rosemary sprigs , leaves picked and chopped
70ml double cream

Steps:

  • Heat the oil in a large pan and cook the onion for 8-10 mins until softened and starting to take on a little colour. Add the carrots, garlic, peppers and sweet potato. Cook for a further 10 mins, stirring often and taking care not to burn the garlic. Add the tomatoes, stock, herbs and 1 litre of water. Bring to a simmer. Cover and cook for 20 mins until the sweet potato is soft.
  • Use a hand blender to whizz the soup until smooth. Stir in the cream and season to taste. Can be chilled for three days or frozen for up to three months.
