PARMESAN SHORTBREAD BISCUITS

Parmesan Shortbread Biscuits image

These buttery biscuits have the texture of shortbread with the kick of parmesan cheese flavour. The biscuits are buttery and have a "soft crumble" when you bite into them. IMPORTANT: Please ensure you measure the ingredients by weight. Cup sizes measure between countries and so for accuracy reasons, I have written the recipe by weight rather than cups because this recipe requires accurate measurement of ingredients to achieve the desired result.

Time 25m

Number Of Ingredients 4

3.5 oz / 100g salted butter (, chopped (Note 1))
3.5 oz / 100g parmesan cheese (, grated (Note 2))
3.3 oz / 95g plain flour
1 tbsp rosemary leaves (, roughly chopped (or 2 1/2 tsp dried rosemary))

Steps:

  • Process the butter, flour and parmesan in a food processor until a wet crumbly dough; OR
  • Alternative method: Place the flour and butter into a bowl and use your fingers to rub the butter into the flour until a crumble dough forms. Then add the parmesan cheese and use your fingers to rub it into the mixture.
  • If you are making rosemary biscuits, add the rosemary at the same time as the parmesan cheese.
  • Lightly flour a surface and turn the dough out onto it. Knead to bring together, then shape into two logs with a diameter of around 3 cm / 1.2" and about 15cm/6" in length.
  • Wrap with cling wrap and refrigerate for 1 hour or until firm. (Note 2)
  • Preheat oven to 180°C/350F. Line 1 large baking tray or 2 ordinary baking trays with baking paper (parchment paper).
  • Remove the log from the fridge and use a sharp knife to cut the log into 7mm/ 1/3" thick rounds.
  • Place the biscuits onto the baking tray at least 2cm / 1" apart.
  • Bake biscuits for 12 minutes or until light golden.
  • Stand on trays for 5 minutes then transfer to a wire rack to cool.

SAVORY PARMESAN SHORTBREAD ROUNDS

Savory Parmesan Shortbread Rounds image

Found this in the December, 2007 issue of Bon Appetite, as I was clearing some space for more recent magazines. I haven't made them, but didn't want to let the recipe get away. Their serving suggestion - with pre-dinner drinks or on a salami platter.

SAVORY SAGE-PARMESAN SABLES

Savory Sage-Parmesan Sables image

Sables are French butter cookies from the northern part of France. They are usually citrus flavored and also go very well with a marmalade coating. Here the sables are turned into a savory treat through the addition of Parmesan cheese and fresh sage. This savory Sage-Parmesan shortbread has a very delicate crumb and makes for a wonderful appetizer to serve to your guests during the Holiday season or cocktail hour. They go very well together with some good red wine and olives. From My German Kitchen in the Rockies; inspired by Ina Garten. Note: These would be good made with fresh thyme, in place of the sage. Prep includes a 30 minute chill time.

Time 1h3m

Yield 24 sables cookies

Number Of Ingredients 6

1/2 cup butter, at room temperature
4 ounces parmesan cheese, freshly grated (don't use anything else!!)
1 teaspoon fresh sage, minced
1/2 teaspoon pepper, freshly ground
1/2 teaspoon salt
1 1/4 cups all-purpose flour

Steps:

  • Cream the butter. You can use your stand mixer with the paddle attachment or a hand held mixer. Add the Parmesan, sage, salt and pepper and mix well. Add the flour and combine until large crumbs form. About 1 minute.
  • On a floured wooden board roll the dough into a 9 inch long log. Wrap the log in plastic or foil and rest in the fridge for at least 30 minutes.
  • Preheat the oven on Convection 350°F Line a baking sheet with a silicon pad or parchment paper.
  • Cut the log in 24 equal slices that are 3/8 inch of thickness. Use a very sharp small kitchen knife.
  • Bake for 18 to 20 minutes or until very lightly browned. Rotate the pan once during the baking time.
  • Cool the shortbread and serve at room temperature. I served mine with olives and a good red wine.
  • Enjoy!

PARMESAN SHORTBREAD

Parmesan Shortbread image

The sugar has been omitted from these butter-rich savory shortbread cookies and replaced with tangy Parmesan cheese! What a yummy snack! We like to eat a few of these lightly salty biscuits with a ripe juicy pear. These would also be good alongside a nice bowl of minestrone. Get authentic Parmigiano-Reggiano cheese if you can.
