Savory Rice Pilaf image

Feel free to skip the squash, substitute mushrooms, or leave them out. You can also add cooked sausage or diced zucchini or even bell peppers!

Provided by One Lovely Life

Number Of Ingredients 9

2 Tbsp olive oil
2 stalks celery, diced
1 smal onion, diced
2 cups rice, rinsed
4 cups vegetable or chicken broth (bonus points for homemade)
salt and pepper, to taste
2 cups diced, roasted squash (or other cooked veggies of choice)
1 cup minced spinach (optional)
1/2 cup toasted almonds (or smoked almonds)

Steps:

  • Heat olive oil in a large saucepan over medium heat. add celery and onion and cook over medium heat until crisp-tender, about 5 minutes. Add rice and stir to coat. Cook 1-2 minutes, to slightly toast the rice (it will probably not color). Pour in broth, along with a pinch of salt and pepper.
  • Cover and bring to a boil over medium heat. Reduce heat to low and let cook another 15 minutes or so, until all the liquid has been absorbed and the rice is tender. Fluff rice with a fork and fold in cooked squash and spinach. Garnish with almonds just before serving.

  • In a large saucepan, cook and stir noodles in oil and butter until lightly browned. Stir in the rice and garlic; cook 2 minutes longer. Add the water, bouillon, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 13 minutes. Stir in parsley; cover and cook 2-5 minutes longer or until rice is tender.

5 ½ cups chicken broth

1/4 teaspoon pepper

Steps:

  • In a 2-quart saucepan, over medium heat, sauté the onion in oil until onion is tender (3 minutes).
  • Add rice and sauté until rice is golden brown (5 minutes).
  • Add all remaining ingredients and bring to a boil; cover.
  • Reduce heat to low, and simmer until all the liquid has been absorbed and the rice is tender (20 minutes).
  • Fluff with a fork before serving.

3 tablespoons butter
1/2 cup chopped onion
1 cup thin sliced celery
1 garlic clove, peeled &, mashed
1 cup rice
2 1/2 cups chicken broth
1 tablespoon candied ginger
2 tablespoons dried lavender blossoms (4 tbsp fresh)
1 teaspoon salt
1/4 cup currants
1/2 cup snipped dried apricot
2 tablespoons lemon juice
1/2 cup toasted almonds or 1/2 cup chopped pistachios
2 tablespoons chopped fresh parsley
2 1/2 tablespoons chopped fresh spearmint

Steps:

  • Melt butter in medium saucepan; gradually add onion and celery; cook until wilted. Add garlic and rice; stir until thoroughly coated with butter.
  • Add broth, ginger, lavender and salt.
  • Bring to boil; reduce heat to low.
  • Cover and cook without stirring until liquid is absorbed.
  • When rice is tender, stir in currants, apricots, and lemon juice.
  • Remove from heat and let stand covered to soften fruits.
  • Add nuts and herbs and mix well.
  • Serve immediately.
