Savory Quinoa Muffins image

These savory quinoa muffins are perfect for breakfast, lunch, or dinner. Packed with nutrition and flavor, they are sure to be a huge hit.

4 cups cooked and cooled quinoa (from 1 cup uncooked)
2 large eggs
1/4 cup canola oil
1/4 cup skim milk
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon finely ground black pepper
1/2 cup frozen peas, thawed
1 cup fresh spinach, chopped
1 teaspoon chopped fresh dill
1 zucchini, grated
1/2 cup reduced-fat crumbled feta

Steps:

  • Preheat oven to 350°F. Spray muffin pans with nonstick cooking spray. You may also use cupcake liners if desired.
  • In a large bowl, whisk together eggs, oil, and milk.
  • In another smaller bowl, whisk flour with baking powder, salt and pepper. Stir in quinoa. Pour this mixture into the wet ingredients and stir until combined. Do not over-mix. Add peas, spinach, dill, zucchini and feta. Stir until just combined.
  • Scoop into prepared muffin tins and bake for 30 minutes or until a toothpick comes out clean when poked in a muffin.

1 ½ cups all-purpose flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
6 tablespoons butter, melted
1 egg
1 cup whole milk
½ cup frozen chopped spinach - thawed, drained and squeezed dry
1 cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 12 cup muffin cups.
  • Mix the flour, baking powder, baking soda, and salt together in a mixing bowl.
  • Stir the melted butter, egg, milk, spinach, and Cheddar cheese together in a large mixing bowl until evenly blended. Slowly stir in the flour mixture to form a batter. Spoon about 2 tablespoons into each muffin cup.
  • Bake in preheated oven until a toothpick inserted into the center of a muffin comes out clean, about 35 minutes.

  • Heat the olive oil in a saucepan set over medium heat, add the dry quinoa and cook, stirring frequently until toasted. Whisk in the water or broth and salt. Bring to a boil, reduce heat to low, cover and simmer for 15 minutes. Remove from heat and allow to sit for 5 minutes to absorb the liquid completely. Fluff with a fork and cool to room temperature. When cooled, add the quinoa to a large bowl.
  • Place the spinach on a large plate or bowl (I used a shallow salad bowl) transfer to the microwave and process on high for 3-4 minutes until wilted. Transfer the wilted spinach to a fine-mesh strainer and drain off the excess liquid. Place drained spinach on cutting board and chop. Add the spinach to the bowl with the quinoa. Add the onions and carrots to the bowl.
  • Combine the egg whites, goat cheese, salt and pepper in a blender or food processor. Pour the mixture over the quinoa-veggie mix, add the thyme leaves and mix thoroughly.
