Here's what you need: butter crackers, egg, unsalted butter, russet potatoes, unsalted butter, sour cream, milk, salt, pepper, shredded cheddar cheese, bacon, green onion

60 butter crackers
1 egg
3 tablespoons unsalted butter, melted
4 russet potatoes, peeled and boiled
1 tablespoon unsalted butter
1 ¼ cups sour cream, divided
½ cup milk
1 ½ teaspoons salt
1 teaspoon pepper
2 cups shredded cheddar cheese
11 strips bacon, cooked and chopped
½ cup green onion, chopped

Steps:

  • Preheat oven to 350°F (180°C).
  • Place butter crackers in a food processor and blend until they are a fine, sandy texture. Transfer to a small mixing bowl.
  • Add egg and melted butter to the crumbled crackers. Stir until crumbs become a clumpy, wet sand texture. Place the cracker mixture in the base of a 9-inch (23-inch) pie dish to create the crust.
  • Use a measuring cup to smooth the surface. Once the surface is smooth, use a fork to prick the base and sides of the crust.
  • Bake for 10 minutes. Remove from oven and let cool for 10 minutes.
  • Mash russet potatoes in a large mixing bowl. Once thoroughly mashed, add butter, ¼ cup(60 gram) sour cream, milk, salt and pepper and mix together with large spoon or spatula.
  • Spread half of the mashed potatoes over the cooled cracker crust, about ¼-inch in thickness.
  • Cover mashed potatoes with a layer of cheddar cheese, making sure to save some for the top.
  • Spread the other half of mashed potatoes over the cheese layer. Sprinkle bacon bits and remaining cheese over the top.
  • Bake for 20 minutes.
  • Serve with sour cream and green onions.

CRUST
1 refrigerated pie crust (from 15 oz. pkg.) --i used marie calendars frozen pie crust
FILLING
2 c water
3 Tbsp butter or margarine
1/2 tsp salt, if desired
1/2 tsp garlic powder
1/8 tsp white pepper (i didn't have white so i just used black pepper)
2 1/2 c mashed potato flakes
1/2 c sour cream
1/4 c purchased real bacon bits, or 4 slices bacon, cooked, crumbled (i used 8 slices...don't tell) hehe
1/2 c thinly sliced green onions
1 c shredded cheddar cheese (4 oz.) --i used 1/2 cup
2 small tomatoes, thinly sliced
GARNISH
2 Tbsp thinly sliced green onions
/2 c sour cream

Steps:

  • 1. Heat oven to 400 F. Bake pie crust as directed. Let cool while preparing mashed potatoes.
  • 2. In large saucepan, combine water, butter, salt, garlic powder and pepper. Bring to a boil. Remove from heat; stir in potato flakes, 1/2 cup sour cream and bacon bits; mix well.
  • 3. Sprinkle 1/2 cup onions over bottom of cooled baked shell; sprinkle with cheese.
  • 4. Spoon and spread potato mixture evenly over cheese. Arrange tomatoes around edge, overlapping if necessary. Brush potato mixture and tomatoes with oil.
  • 5. Bake pie for 15 to 20 minutes or until thoroughly heated in center. Cool 5 minutes. To serve, sprinkle with 2 tablespoons onions.
  • 6. Cut into wedges; top each serving with 1 tablespoon sour cream.

1 tablespoon butter
1 tablespoon finely chopped onion
¼ cup shredded Cheddar cheese

1 pound lean ground beef
2 tablespoons all-purpose flour
1 tablespoon ketchup
¾ cup beef broth
¼ cup shredded Cheddar cheese

Steps:

  • Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain and mash. Mix in butter, finely chopped onion and 1/4 cup shredded cheese. Season with salt and pepper to taste; set aside.
  • Bring a large pot of salted water to a boil. Add carrots and cook until tender but still firm, about 15 minutes. Drain, mash and set aside. Preheat oven to 375 degrees F (190 degrees C.)
  • Heat oil in a large frying pan. Add onion and cook until clear. Add ground beef and cook until well browned. Pour off excess fat, then stir in flour and cook 1 minute. Add ketchup and beef broth. Bring to a boil, reduce heat and simmer for 5 minutes.
  • Spread the ground beef in an even layer on the bottom of a 2 quart casserole dish. Next, spread a layer of mashed carrots. Top with the mashed potato mixture and sprinkle with remaining shredded cheese.
  • Bake in the preheated oven for 20 minutes, or until golden brown.

Hearty, filling and delicious! Cubed ham and finely chopped onions can be added to the potato and cheese mixture if you want more of a one-dish meal. Use American, muenster, havarti, or brie cheese. 6 potatoes, peeled and cut into chunks
¼ cup butter
¼ cup milk, or as needed
salt and ground black pepper to taste
½ cup shredded American cheese
pastry for a 9 inch double crust pie

Steps:

  • Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. I don't know where this recipe originated, but it has been an old stand by on my mom's dinner party tables for years. It actually bakes up to look quite impressive. Please don't try to substitute fresh mashed potatoes (believe me I have tried) the instant box stuff provides the perfect texture.

1 teaspoon garlic powder
2 eggs, beaten
1/2 cup parmesan cheese or 1/2 cup romano cheese
1 1/4 cups mozzarella cheese (divided)

Steps:

  • Make mashed potatoes according to package directions for 7-8 servings.
  • Stir garlic powder, eggs, Parmesan and one cup of the mozzarella into prepared potatoes.
  • Pile mixture into a 9-inch deep dish pie plate.
  • Sprinkle top with 1/4 cup of mozzarella and a sprinkle of paprika for color.
  • Bake at 350°F until golden on top and puffy about 45 minutes.

This recipe was given to me by a French lady that I worked with some time ago, I have been making this recipe ever since, it is one of my husband's favourite meals, I alway's serve it with veggies and a side order of salad.....a wondeful meal!(note: this recipe makes two pies, if desired, this pie freezes great, so pop one in the freezer for another meal)

1 lb ground beef
3/4 lb ground pork
3/4 cup chopped onion
2 celery ribs, chopped
1 tablespoon chopped fresh garlic
6 cups hot mashed potatoes (prepared without milk or butter)
1/4 cup chicken broth
1/2 teaspoon dried rosemary
1/2 teaspoon rubbed sage
1/2 teaspoon dried thyme
1/4 teaspoon dried marjoram
salt and pepper
2 double crust pie crusts (9-in, my butter pie crust recipe posted on Zaar works great #66929)
1 tablespoon cream, for brushing pie crusts

Steps:

  • Set oven to 375 degrees.
  • Line 2 9-in pie plates with pastry.
  • In a skillet, cook first 5 ingredients over med heat until meat is no longer pink, and veggies are tender; drain, remove from heat.
  • Stir in potatoes, broth and seasonings.
  • Line two pie plates with pastry.
  • Divide meat mixture between crusts.
  • Top with remaining pastry; trim, seal and flute edges.
  • Cut slits on top.
  • Brush crusts with cream if desired.
  • Bake for 30-35 mins, or until crust is golden brown.

1 lb lean (at least 80%) ground beef
1 tablespoon finely chopped garlic
2 teaspoons vegetable oil
2 cups sliced fresh carrots
2 cups refrigerated cooked diced potatoes with onions (from 20-oz bag)
1/2 cup cooked real bacon pieces (from 3-oz jar)
3/4 teaspoon dried thyme leaves
3/4 teaspoon pepper
2 cups beef broth (from 32-oz carton)
5 tablespoons cornstarch
1 egg
1 tablespoon water

Steps:

  • Heat oven to 425°F. Prepare pie crusts as directed on box for two-crust pie, using 9-inch glass pie plate.
  • In 12-inch skillet, cook beef and garlic over medium-high heat 5 to 7 minutes, stirring occasionally, until beef is thoroughly cooked; drain. Transfer beef mixture to large bowl. In same skillet, heat oil over medium heat. Add carrots; cook 3 to 4 minutes, stirring occasionally, until crisp-tender. Add carrots, potatoes, bacon, thyme and pepper to beef mixture.
  • In small bowl, mix broth and cornstarch with whisk; pour into skillet. Heat to boiling over medium heat. Cook about 2 minutes or until thickened. Pour over beef and vegetables; stir to combine. Spoon mixture into crust-lined pie plate.
  • Top with second crust; seal edge and flute. Cut slits in several places in top crust. In small bowl, beat egg and water. Brush over top crust.
  • Bake 15 minutes. Reduce oven temperature to 375°F; bake 40 to 45 minutes longer or until crust is browned, placing sheet of foil over entire crust for last 20 minutes. Let stand 10 minutes before serving.
