Awesome and affordable! Crushed tomatoes with a savory-dill twist. If you want a great yet inexpensive meal, this is it. You probably have most of these things on hand already! Based on 365 Easy One Dish Meals recipe. Someone with good camera skills please post a better picture!

Steps:
- In a 10" skillet, cook beef, onion and garlic over medium-high heat stirring often, until beef is browned (about 5 minutes). Drain off excess fat.
- Stir in tomatoes, spinach, dill weed, garlic salt and pepper. Heat to boiling. Add rice and turn heat to low and cover.
- Simmer, covered 25 minutes or until rice is done.
- Top with shredded cheese then re-cover, remove from heat.
- Let sit (off heat and covered) for 10 minutes until cheese has melted.

Steps:
- In a large non-reactive skillet, sauté beef, onion and garlic over medium high heat about 5 minutes, stirring frequently until beef is browned and crumbly.
- Drain off excess fat and stir in remaining ingredients.
- Bring to a boil and reduce heat to low.
- Cover and simmer 30-35 minutes or until rice is tender.

BEEF AND RICE WITH VEGGIES
Steps:
- Heat oil in large pot over high heat. Add onion, capsicum and garlic. Cook for 1 minute.
- Add beef, cook until brown, breaking it up as you go.
- Add tomato paste, salt, pepper, onion powder, oregano, cumin and cayenne pepper. Cook for 1 minute.
- Turn heat down to medium. Add rice and beef broth, mix well. Add frozen veggies and bay leaf, then stir.
- Place lid on, lower heat to medium low so it's simmering gently. Cook for 12 - 15 minutes (might even take longer) until all liquid is absorbed (tilt pot to check). The rice should be just cooked, but will be wet.
- Remove from heat. Quickly toss spinach on top of the rice and put the lid back on. Leave to rest for 10 minutes.
- Fluff rice and mix through wilted spinach with a fork. Adjust salt if desired. Serve!

- In a large bowl, combine the ground beef, shredded cheese, bbq sauce, and seasonings. Don't add too much bbq sauce or the patties will have a hard time taking shape. Shape patties that are about 1 inch thick (about 5 patties). (You can also freeze the patties after shaping them for about 1 hour to help them hold their shape.)
- Turn grill up to high and let it get hot.
- Reduce heat to medium-high and place the burgers on the grill. Allow this side of the patty to cook for about 4-6 minutes, but make sure it does not burn. Then flip the burger over and cook until done.
- For the sauce, combine all sauce ingredients and whisk until well mixed. Taste and adjust ingredients to your liking.
- Assemble the burgers and serve with the special sauce and other hamburger toppings of choice.

- Brown hamburger and onion over medium heat in a large skillet (one with a lid). Drain off excess fat.
- Add the rice, tomato, water, salt and pepper. Mix well and cover pan with lid. Simmer on low for 10 minutes.
- Check halfway to see if you feel it needs a few tablespoons of water added. Stir and then sprinkle the cheese over top. Don't mix in, allow to melt over top while it finishes simmering.

- Preheat oven to 400°F.
- In a non-stick fry pan, soften onion, then brown hamburger. Add frozen spinach, cover and cook until spinach thaws, scraping spinach as it melts.
- Stir in soup, soy sauce, pepper, Cajun seasoning and 1/3 cup cheese. Cook until cheese melts, then place in a greased 2-quart casserole.
- Sprinkle with the 1/4 cup cheese and bread crumbs.
