SAVORY GLAZE RECIPE FOR HAM OR TURKEY BREAST
This is a different variation to the classic glaze recipe for fully cooked spiral sliced ham and turkey breast because it uses mustard to help the mixture adhere to the meat as well as to add a savory flavor.

- Blend and spread on the ham. Put the coated ham on a plate or lazy susan so you can spin it. Use a mini torch with lowest flame to caramelize the mixture. Wave it quickly so the mixture bubbles but does not burn. May take about 10 minutes if you are being slow and careful.
- There are two main options for glazing without a torch. The first is with the broiler and the second is with the stove top. The broiler method involves putting your oven on the broiler option WITH THE DOORS OPEN while you are taking the time to roll the ham or turkey breast in the sugar-mixture. It is important that you aren't heating the oven up because you don't want to cook the meat more - just caramelize the sugar. (best to make sure the rack is in place before turning on broiler). Once the coils are red hot, place the meat in the oven under that area where the coil goes back around and place it as close to the coils as possible without actually touching. Do not step away from the oven. Once you see the sugar bubbling, remove it. If you wait any longer it will start to burn.
- The stove top method is to carefully cook the sugar mixture in a pan and then pour a thin layer over the ham or turkey breast. To caramelize the sugar mixture, place the sugar mixture in a heavy skillet or saucepan. Heat and stir over low heat until the sugar melts and turns a golden brown. This one generally ends up with the thickest "crust" but is preferred by those who are afraid of experimenting directly on the ham or turkey. (if they wreck the sugar mixture, they throw it out and start over but it never touched the meat.).

SPICED AND HONEY GLAZED HAM WITH SAVORY BREAD PUDDING

- For the spiced and honey glazed ham: Preheat oven to 425 degrees F.
- Blend together the honey, Toasted Spice Rub and thyme.
- Place ham on an open brown paper bag or waxed paper for easy clean up. With the tip of a paring knife carefully score a 1-inch grid pattern around the outside of the ham.
- Brush the entire surface of the meat on all sides with some of the honey mixture.
- Add about 1/2 cup of water to the base of a roasting pan. Lay the celery sticks in the bottom of the pan and then place the ham on top of the celery.
- Cook for 1 hour. Every 15 minutes, baste ham with juices that collect in the base of the roaster and the honey. Let rest for 15 minutes before carving as desired.
- For the savory bread pudding: Preheat the oven to 425 degrees F.
- Using a serrated knife, shave off the thicker parts of the crust from the bread loaf. Cut the bread into 1-inch cubes and place in a large bowl. Spread the bread cubes in a single layer on a 13 by 18-inch rimmed baking sheet. Bake until lightly toasted, about 8 minutes. Remove from the oven and place in a large bowl. Leave the oven on.
- In a skillet, melt 4 tablespoons of the butter over high heat and cook, without stirring, until it turns nut brown, about 5 minutes. Reduce the heat to medium, add the onion and a pinch of salt, and cook, stirring occasionally, until the onion begins to brown, about 5 minutes. Add the thyme and cook for 10 seconds to release its fragrance.
- Pour the onion mixture over the toasted bread. Add 3/4 cup of the Parmesan and toss well.
- In a medium bowl, whisk together the milk, eggs, and nutmeg. Pour the milk mixture over the bread and toss well.
- Butter a 9 by 13-inch baking dish with the remaining 1 tablespoon butter. Arrange the toasted bread evenly in the baking dish. Pour the custard evenly over the bread. Scatter the blue cheese and the remaining 2 tablespoons Parmesan over the top. Bake until the bread is golden brown and crispy on top and a thin knife blade inserted into the custard comes out almost clean, about 30 minutes. Remove the dish from the oven and let cool for 15 minutes. Cut into individual servings and serve warm.
- Toast the fennel seeds, coriander seeds, and peppercorns in a small, heavy pan over medium heat. When the fennel turns light brown, work quickly. Turn on the exhaust fan, add the red pepper flakes, and toss, toss, toss, always under the fan. Immediately turn the spice mixture out onto a plate to cool.
- Put mixture into a blender with the chili powder, salt, and cinnamon and blend until the spices are evenly ground. If you have a small spice mill or a coffee grinder dedicated to grinding spices, grind only the fennel, coriander, pepper, and chili flakes. Pour into a bowl and toss with the remaining ingredients. - Brush turkey with oil; tie the drumsticks together. Place turkey breast side up on a rack in a roasting pan. Combine the thyme, 1 teaspoon salt and 1 teaspoon pepper; sprinkle evenly over turkey. Bake, uncovered, at 325° for 2 hours., In a small bowl, combine honey, corn syrup, butter, rosemary, sage, basil, and the remaining salt and pepper. Brush over turkey. Bake until a thermometer inserted in thickest part of thigh reads 170°-175°, about 90 minutes longer, basting frequently with pan drippings. SAVORY SPIRAL CUT HAM
I just love Spiral Cut Ham. I got one on Sunday at a very good price. When I got home I looked on Zaar for a recipe but couldn't find what I wanted. This is a culmination of a recipe that was suggested and my own ideas. This recipe uses an Oven Cooking Bag. I don't know how the recipe will come out if you do not use one. My ham came out so good and moist. The Oven Cooking Bags help to seal in the juices from the ham and any other ingredients you add to it. It keeps the juices from evaporating and drying out in the pan. I also noticed that the ham didn't take as long to bake as I thought it would. You also don't have to turn your oven to a high temp...only 325°F. It kind of slow cooks the ham. Spiral Cut Hams are precooked so you basically just want to warm them up..get them hot.

- You will also need: 1 large Reynolds Oven Cooking Bag (turkey size).
- Heat the oven to 325°F.
- Put the flour into the cooking bag and shake the bag until it is completely covered with the flour.
- Do not remove remaining flour from the bag (I didn't anyway).
- This prevents the bag from exploding in the oven while baking.
- Place the bag in a large cake pan or a roasting pan.
- Open the bag and put the ham in it, cut side down.
- Set aside.
- In a small sauce pan mix the chicken broth, honey glaze mix, mustard and orange juice over medium heat until the glaze mix and orange juice concentrate are dissolved.
- Pour it over the ham.
- With a tie that came with the bag, tightly seal the bag.
- Cut 6-1 inch slits into the top and upper sides of the bag to allow steam to escape.
- Make sure the bag is completely inside the pan.
- Do not allow any of it to hang over the sides of the pan.
- Place on middle rack of the oven, allowing enough room for the bag to expand without touching the top heating coil.
- This prevents the bag from melting.
- Bake for approximately 1 hour or until the ham slices begin to separate and the top of the ham starts to brown.
- Lower the oven temp to 200°F and let the ham sit in the oven until the rest of the meal is ready.
- You could probably lower it to 175°F if you want to.
- Spiral cut ham is precooked so it does not have to reach a certain temperature.
- You are just warming it or making it hot for a hot meal.
- When you are ready, remove the ham from the oven.
- Allow it to cool enough to touch the bag.
- Remove the tie from the bag and slowly tear the bag open at the top of it.
- Remove ham and place it on a large plate or a platter.
- Allow to cool slightly before cutting it.
- Pour the juices from the baking/roasting into a saucepan and make gravy with it or pour it into a container and save it for soup.
- Taste the juice from the ham.
- If it is very strong tasting, (mine was) you may need to add water, a little at a time until it is at your desired strength.
- Save the ham bone to make ham stock or soup with, leaving some of the meat on the bone.
MOLASSES-COFFEE GLAZED HAM (OR TURKEY BREAST)
You can also make this recipe using a 5-6 pound turkey breast, directions on cooking stated below. If you like lots of glaze then double the molasses/apricot jam mixture amount. Cooking time is for ham and the servings are only estimated.

- In a bowl stir together all ingredients except the ham until well blended.
- Reserve 1 cup molasses-coffee sauce in a small bowl; set aside.
- Place the ham in a lightly greased 13 x 9-inch baking pan; pour the remaining molasses-coffee mixture evenly over the ham.
- Bake (lowest oven rack) at 350 degrees for 2 hours or until a meat thermometer reaches 140 degrees, basting with sauce about every 15-20 minutes.
- Cover loosley with lightly greased foil the last 30 minutes of baking to prevent excessive browning.
- Remove ham from baking pan and let stand at room temperature for 30 minutes before slicing.
- Heat the reserved 1 cup molasses-coffee sauce and serve with ham.
- FOR THE TURKEY BREAST; substitute one (5-6 pound) bone-in turkey breast with skin left on.
- Season with black pepper.
- Place the turkey breast in a greased 11 x 7-inch baking pan; cover tightly with foil.
- Proceed with directions above.
- Bake in a 350 degree oven for 1 hour; uncover and bake for another 1 hour or more or until a thermometer reads 170 degrees, basting with molasses-coffee sauce about every 15 minutes the last hour or more of baking.
- Serve with reserved sauce.

SPICY MUSTARD HAM GLAZE (NOT SWEET AT ALL)
I couldn't find a true savory ham glaze, so I made up my own. It turned out so well, I just had to share! I bought a large ham (bone-in of course!) that I wanted to use the left overs, for other yummies later in the week. I don't necessarily like the sweet ham glazes, as it seems to linger with the leftovers. This will be great in scalloped ham and potatoes, ham and beans, omlets, sandwiches.. you name it! - Preheat oven to 350º F.
- Prepare glaze: In small sauce pan over medium heat, add pineapple juice and cornstarch. Stir constantly until mixture becomes thick. Stir in spicy mustard and marmalade. Remove from heat.
- Prepare turkey ham: Score the turkey ham and place in prepared baking dish. Glaze ham with prepared marmalade to lightly cover exposed sides of ham. Bake ham 15 minutes per pound, uncovered.

- Preheat an oven to 325 degrees F.
- Remove the plastic netting and wrap from the turkey roast, if any, but leave on string netting. (Remove and discard gravy packet, if any).
- Rinse the turkey, and pat dry with paper towels.
- Mix together the maple syrup, smoke flavoring, paprika, salt, pepper, garlic powder, onion powder, thyme, and cayenne pepper in a bowl, stirring to combine well.
- Brush the syrup mixture all over the turkey roast.
- Place the roast, skin side up, on a baking rack set in a roasting pan.
- Roast in the preheated oven, basting occasionally, until the roast is golden brown and a meat thermometer inserted into the center of the roast reads 170 degrees F, about 1 1/2 hours.
- Wrap the roast in foil, and let stand 10 minutes before removing the string netting for slicing.
