4 tablespoons extra virgin olive oil
1 large onion, sliced
2 garlic cloves, minced
1 tablespoon fresh rosemary leaf, chopped
1/2 cup fat-free chicken broth
salt and pepper, to taste

Steps:

  • Heat oil in large skillet over medium heat.
  • Sauté chicken in oil for 4 minutes, then turn.
  • Add onion, cover, and cook for 3 minutes longer. Stirring occasionally.
  • Add garlic rosemary and broth.
  • Cover and cook 5 minutes longer, stirring occasionally, until onions are tender crisp.

1 lb boneless skinless chicken breast (4 pieces)
1 1/4 teaspoons lemon-pepper seasoning (McCormick's if you have it)
2 tablespoons butter
1 cup baby carrots, quartered lengthwise (or regular carrots julienned will work)
1/3 cup sliced green onion
3/4 cup chicken broth
1 tablespoon flour
1/4 cup sour cream
1 teaspoon parsley flakes (or 1/4 cup fresh)

Steps:

  • Rub lemon pepper on chicken.
  • In lg skillet, melt butter over medium heat.
  • Saute chicken 7 minutes each side or until done; remove from skillet& keep warm.
  • Add carrots and onions to skillet.
  • Saute 2 minutes.
  • Whisk together broth and flour.
  • Pour over vegetables; bring to boil.
  • Simmer 2 minutes.
  • Add sour cream and parsley.
  • Simmer 2 minutes.
  • Spoon over chicken.

Savory Chicken Patties in Creamy Paprika-Sour Cream Sauce image

This recipe comes from the New York Times International Cookbook, which was published in 1971. I recently rediscovered this cookbook languishing on my bookshelf. I had a note on this recipe from 1974 -- can you imagine? The original recipe bears the name of a Russian innkeeper who was famous for this dish, or so the recipe introduction says. Anyway, it's quite an elegant and delicious way to use humble ground chicken.

1 lb ground chicken
1/4 teaspoon nutmeg, freshly grated
1/2 cup all-purpose flour, seasoned lightly with salt and pepper
1 egg, beaten
1 1/2-2 cups breadcrumbs, fresh
1 1/2 tablespoons all-purpose flour
1 1/2 tablespoons salted butter
1 tablespoon paprika, premium quality Hungarian
1/2 teaspoon dried thyme
1/2 cup chicken stock
1 teaspoon cognac or 1 teaspoon dry sherry
2 teaspoons fresh lemon juice
1/4 cup sour cream, dairy type
1 tablespoon salted butter
1 tablespoon vegetable oil
8 ounces noodles, cooked, curly wide egg type

Steps:

  • Form chicken into 4 oval patties about 1/2" thick. Dredge patties in flour, then egg, then bread crumbs, gently pressing breadcrumbs on. Place on a rack and chill in refrigerator for about 30 minutes or 15 minutes in a blast chiller.
  • Combine about 1 tablespoon vegetable oil and 1 tablespoon butter in a saute pan. When bubbly, add breaded chicken patties. Saute until golden. Flip. Saute until golden. Remove to an oven safe dish. Add more butter and oil if needed during sauteing. Finish cooking patties in a 350 degree oven for about 10 minutes. Test with a meat thermometer for doneness. Meanwhile, make the sauce.
  • For sauce:.
  • Make a roux with the butter and flour in a small saucepan. Allow to bubble gently over low heat, about 2 - 3 minutes, stirring constantly with a wire whisk. Add paprika, thyme, chicken stock, heavy cream, cognac or sherry and lemon juice, whisking constantly. Allow the mixture to come up to a boil, reduce heat and allow to thicken, about 2 - 3 minutes. Thin if needed with additional chicken stock. Remove from heat. Add sour cream and blend thoroughly. Keep warm, but do not allow to boil.
  • Place cutlets on a bed of cooked egg noodles, pour sauce over all and serve.

This is my favorite chicken recipe. It is delicious. My whole family loves it.

4 skinless, boneless chicken breast halves
ground black pepper to taste
4 slices Swiss cheese
1 (10.75 ounce) can condensed cream of chicken soup
¼ cup milk
1 cup dry bread crumbs
3 tablespoons butter, melted

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken breasts in a 9x13 inch baking dish. Season with ground black pepper to taste. Top each breast with a slice of cheese.
  • Mix together the soup and milk and pour mixture over chicken. Sprinkle bread crumbs on top and drizzle with melted butter/margarine. Bake covered in the preheated oven for 30 minutes. Uncover and bake for another 20 minutes or until golden brown.

8 slices bacon
3 lbs boneless skinless chicken breasts
salt and pepper
6 scallions
2 tablespoons white wine or 2 tablespoons chicken stock

Steps:

  • Cut bacon into 1/2 inch pieces.
  • Cut the chicken across the grain into 1/2 inch slices and sprinkle with salt.
  • Cut the scallions, including the green tops, into thin slices.
  • Brown the bacon in a large frying pan.
  • Remove it from pan.
  • Put half the chicken in the pan and cook over medium-high heat, stirring frequently, about 3 minutes.
  • Set aside with cooked bacon.
  • Cook remaining chicken in the same way.
  • Return all the chicken and bacon to the pan and cook for another 5 minutes, until chicken is done.
  • Add the wine or stock and stir to deglaze the bottom of the pan.
  • Stir in the scallions.
  • Season to taste with salt and pepper.

12 ounces pasta (linguine, spaghetti, fettucine, spirals, etc.)
4 chicken sausage
2 tablespoons olive oil
1 medium onion, cut vertically into thin slices
2 coloured bell peppers, cut into 1/2-inch strips
4 garlic cloves, chopped
1 tablespoon minced fresh rosemary or 1 teaspoon dried rosemary, crushed
fresh ground black pepper
2 tablespoons balsamic vinegar

Steps:

  • Cook the pasta according to package directions until cooked but still firm to the bite (al dente). While the pasta is cooking, place the sausages in a small skillet over medium heat and add 1/4 cup water. Cover and simmer for 10 minutes. Turn sausages at 5 minutes and add more water if necessary.
  • Heat the oil in a large nonstick skillet over medium heat. Add the onion and coloured pepper strips and sauté for 10 minutes. Add the garlic and rosemary, and season with black pepper to taste. Lower heat and cook for 5 minutes more.
  • Remove sausages from small skillet and slice in half lengthwise, then crosswise into 1/2-inch slices. Add to the onions and peppers. Add balsamic vinegar and toss. Cook mixture until sausage is no longer pink in the middle. Serve over cooked pasta.
