GARLIC BUTTER BAKED TILAPIA
Garlic butter baked tilapia is great for when you want lots of flavor without a lot of work. Make this recipe for dinner in less than 30 minutes!

- Preheat oven to 425 degrees F. Grease an 9x13 baking pan with cooking spray*. In a small bowl, whisk together butter, parsley, onion powder, paprika, garlic and lemon juice. Set aside.
- Season tilapia with salt and pepper, to taste and place onto the prepared baking dish.
- Pour the butter mixture over the tilapia fillets.
- Place into oven and bake for about 10-12 minutes or until tilapia flakes easily with a fork. Serve immediately with rice, cauliflower rice, mashed potato, mashed cauliflower or roasted veggies.

SAUTéED TILAPIA WITH GARLIC HERB BUTTER SAUCE
Quick and easy sautéed tilapia fillets topped with a garlic butter herb sauce flavored with Dijon and prosciutto.

- Mix butter with parsley, garlic, shallots, Dijon mustard, prosciutto, and lemon juice. Add a pinch of salt and pepper then stir until evenly mixed. Set aside.
- Heat oil in a large non-stick skillet over medium-high heat. Season the tilapia fillets with salt and pepper. When oil is shimmering, add fish fillets top side down and until fish is almost cooked through and the underside is deep golden brown, about 4 minutes. Turn fillets over.
- Using a small offset spatula, spread butter mixture over the top of each fillet, evenly dividing butter among the fillets. Cook for 1-2 minutes more or until fish is just cooked through and butter mixture has melted into the fish. Serve immediately.
BAKED TILAPIA WITH HERB BUTTER

- Preheat the oven to 400 degrees F. In a small bowl, mix the butter and tarragon until combined; set aside.
- Lay out 4 large pieces of foil. Layer the vegetables in the center of each piece of foil, starting with the mushrooms, then the celery and scallions. Dot the vegetables with some of the herb butter (use about half) and season each portion with 1/4 teaspoon salt, and pepper to taste. Lay the tilapia fillets over the vegetables; dot with the remaining herb butter. Sprinkle each fillet with 1/4 teaspoon salt, and pepper to taste.
- Bring the foil ends together, fold over and crimp closed on all sides to make sealed packets. Place the packets on a baking sheet and bake until the fish is cooked through but still moist, 18 to 22 minutes. Remove the packets from the oven and let sit 2 minutes before opening. Transfer the fish and vegetables to plates and drizzle with the cooking juices.

- Place the milk in a shallow dish. Place the cornmeal (seasoned with salt and pepper, as desired) in another shallow dish. Heat the oil in a skillet over medium-high heat. Dip the tilapia fillets first in the milk, turning to coat them completely. Next, dredge them in the cornmeal, pressing the cornmeal so it adheres. Place the coated tilapia in the hot skillet and cook for 5-7 minutes per side, or until well browned. Transfer the fish to a platter and keep warm. Combine the garlic, butter, lemon juice, sugar, salt, pepper, and hot sauce in a small saucepan over medium heat. Cook until the butter is melted and the garlic is fragrant. Spoon the garlic-butter sauce over the fish and serve immediately garnished with the parsley.

PAN FRIED LARGEMOUTH BASS WITH LEMON GARLIC HERB BUTTER SAUCE

- Season the fillets with salt and pepper. Heat a saute pan on top of the grill. When the pan is hot add 2 tablespoons of the olive oil and heat. Dredge the bass fillets in the flour and shake off any excess. Place the fillets in the pan and pan fry about 3 minutes per side, until golden brown. Remove the fish from the pan. Add the rest of the butter to the pan and melt. When the butter is hot, add the sliced garlic. Fry the garlic until it just begins to turn light golden brown. Add the herbs and remove from the heat. Carefully, add the lemon juice. Season with salt and pepper. To serve, place a fillet on a plate and spoon some of the lemon garlic herb butter over the fish.
LEMON GARLIC TILAPIA
Steps:
- Preheat oven to 375 degrees F (190 degrees C). Spray a baking dish with non-stick cooking spray.
- Rinse tilapia fillets under cool water, and pat dry with paper towels.
- Place fillets in baking dish. Pour lemon juice over fillets, then drizzle butter on top. Sprinkle with garlic, parsley, and pepper.
- Bake in preheated oven until the fish is white and flakes when pulled apart with a fork, about 30 minutes.

- Whisk together chicken stock, lemon juice and capers. Lightly crush the capers.
- Season the tilapia fillets with salt and pepper. Then dredge them in flour, shaking off any excess. Set aside.
- In a large skillet, melt one teaspoon of butter over medium heat. Turn up the heat to medium-high and brown the butter (it should be a golden brown color). Add the fillets to the pan. Sauté for about 3 minutes on each side (they are done when the fish flakes easily with a fork). Add olive oil to the pan as needed if the pan becomes too dry. Transfer fillets to plates.
- Pour the broth mixture into pan, being careful of splatter - it will instantly boil, steam and hiss. Scrape the bottom of the pan to loosen any browned bits. Continue heating and stirring until the mixture is reduced to about 1/2 cup. Remove the pan from the burner and whisk in two teaspoons of butter. Spoon two tablespoons of mixture, give or take, over each fillet.

- Rinse tilapia fillets in cold water and pat dry with paper towels. Season both sides of each fillet with salt and pepper. Place the flour in a shallow dish; gently press each fillet into the flour to coat and shake off the excess flour.
- Heat the olive oil in a skillet over medium-high heat; cook the tilapia in the hot oil until the fish flakes easily with a fork, about 4 minutes per side. Brush the melted butter onto the tilapia in the last minute before removing from the skillet. Serve immediately.

GARLIC ALFREDO TILAPIA
My version of Ruby Tuesday's New Orleans Seafood, minus the shrimp. I merged a few different recipes and came up with this. It comes pretty close! Three fillets are usually enough for my husband, my toddler, and myself. I serve this with rice and steamed broccoli, to really feel like Ruby Tuesday's recipe!

- Preheat an oven to 425 degrees F (220 degrees C).
- Brush the tilapia fillets with oil on both sides, season with Creole seasoning to taste, then place into a 9x13-inch baking dish.
- Bake in the preheated oven until the flesh is no longer translucent, and the fish flakes easily with a fork, about 10 minutes.
- Meanwhile, melt the butter in a small saucepan over medium heat. Stir in the garlic, and cook until the garlic has softened and the aroma has mellowed, about 2 minutes. TILAPIA WITH GARLIC LIME BUTTER
This recipe was somewhat of an accident for me. My mom had prepared some homemade garlic butter for some reason and I mistakenly used it instead of regular butter to saute some Tilapia filets. I usually put lemon on my fish, but we were out, so I used lime juice instead. Everyone really liked it, so I make it all the time now. Even my very picky husband requests it! It's easy to adjust this recipe to feed more or less people.

- Melt the butter in a large skillet over medium heat.
- Add tilapia fillets (thawed if frozen) to the pan.
- Sprinkle the fish with garlic powder (use more or less depending on your tastes).
- Pour lime juice over fish (use more or less depending on your tastes).
- Saute the tilapia until the fillets are opaque and easily flake with a fork (I usually turn once during cooking).
- Serve while hot. I like to serve this with a side of rice pilaf and california blend veggies.
VEGETABLE STEAMED TILAPIA

- Preheat oven to 450 degrees F (230 degrees C). Line a baking sheet with aluminum foil and oil lightly with olive oil.
- Arrange tilapia fillets onto prepared baking sheet. Place celery, carrots, bell pepper, and red onion on top of fillets. Season with Greek seasoning, salt, and black pepper. Lay a sheet of aluminum foil over the top and fold edges together to seal the packet.
- Bake in the preheated oven until fish flakes easily with a fork, about 20 minutes.
