¼ cup olive oil
3 scallions, white bulbs and green tops cut separately into thin slices
4 cloves garlic, minced
½ teaspoon dried oregano
24 large shrimp, peeled and deveined
2 ½ tablespoons lemon juice
2 tablespoons white wine
1 tablespoon water
½ teaspoon ground black pepper, or more to taste
¼ teaspoon salt
2 tablespoons butter
1 tablespoon olive oil
1 tablespoon minced fresh parsley

Steps:

  • Place 1/4 cup oil, scallion whites, garlic, and oregano in a large skillet or wok over medium heat. Cook, stirring often, until the oil starts to simmer, about 5 minutes. Add shrimp and increase heat to high. Cook, stirring and turning often, until opaque, 4 to 5 minutes.
  • Add lemon juice and wine to the skillet; simmer for about 1 1/2 minutes. Add water, pepper, and salt; cook for 30 seconds. Stir in butter, 1 tablespoon olive oil, scallion greens, and parsley until even distributed. Arrange the shrimp on warmed plates and spoon the sauce on top.

2 cloves garlic (finely chopped/minced (about 1 teaspoon))
1 teaspoon dried oregano
1/2 teaspoon crushed red pepper ((optional, more or less depending on spice preference))
1 - 1.5 lb. jumbo shrimp (peeled and deveined, tail on or off depending on preference.)
1/4 teaspoon kosher salt (more if needed)
1/2 teaspoon black pepper
2 tablespoons lemon juice ((from about 1 lemon))
1/4 cup dry white wine (or chicken broth, or water in a pinch)

Steps:

  • Heat the oil (2 tablespoons) in a large skillet (I prefer nonstick for this recipe) over medium heat. Add the minced garlic (2 cloves/1 teaspoon), dried oregano (1 teaspoon), and crushed red pepper if using (1/2 teaspoon). Sauté until fragrant and garlic is a little toasted, but not burned (turn heat down to medium-low if necessary), about 2-3 minutes.
  • Meanwhile, pat shrimp dry and season with kosher salt (1/2 teaspoon) and black pepper (1/2 teaspoon).
  • Add the shrimp to the skillet and sauté over medium-high heat, until almost cooked completely though and opaque, about 2 minutes on each side.
  • Add the lemon juice and white wine (1/4 cup). Stir to coat the shrimp in everything, and continue cooking until liquid has reduced almost completely and thickened (about 2-3 minutes), coating the shrimp in a thick sauce. Transfer to a serving platter or individual plates, making sure to drizzle all the sauce from the skillet on top of the shrimp to serve.

1 tsp ground cumin
1 tsp ground coriander
½ tsp sweet paprika
1 lb large shrimp (prawns, peeled, and deveined)
2 tbsp Extra virgin olive oil
½ medium red onion (thinly sliced)
5 garlic cloves (minced and divided)
1 bell pepper (cored and sliced into sticks)
1 to 2 zucchini (halved length-wise, sliced into ½ moons (you can use 1 zucchini and 1 yellow squash))
1 cup cooked chickpeas (from canned chickpeas, drained)
1 ½ cups cherry tomatoes (halved)
Pinch kosher salt
Pinch black pepper
1 large lemon (juice of)
Handful fresh basil leaves (torn or sliced into ribbons (you can use a different herb, depending on what's available to you))

Steps:

  • In a small bowl, combine the spices (oregano, cumin, coriander, and paprika.)
  • Pat shrimp dry and season with kosher salt and 1 ½ tsp of the spice mixture. Set aside briefly or refrigerate till later. (Reserve the remaining spice mixture for the vegetables.)
  • In a large cast iron skillet, heat 2 tbsp extra virgin olive oil over medium heat. Add onions and ½ the amount of garlic and cook for 3 to 4 minutes, tossing regularly till fragrant (do not allow the garlic to burn.)
  • Add zucchini, bell peppers, and chickpeas. Season with salt and pepper and the remaining spice mixture. Toss to combine. If needed, raise the heat just a bit and cook the veggies until tender, tossing regularly (about 5 to 7 minutes.)
  • Transfer the veggies to a large plate for now. Return the skillet to the heat and add a little bit of extra virgin olive oil. Add the seasoned shrimp and remaining garlic. Cook over medium-high heat, stirring occasionally, until shrimp is totally pink (about 4 to 5 minutes).
  • Add the cooked vegetables back to the skillet with the shrimp. Add cherry tomatoes and lemon juice. Give everything a good toss. Finish with the fresh basil.

3 pounds uncooked medium shrimp, peeled and deveined
1 tablespoon olive oil
1 small onion, chopped
2 ribs celery, chopped
2 cloves garlic, crushed and chopped

¼ teaspoon dried basil
¼ teaspoon dried oregano

1/2 cup all-purpose flour
Sea salt and freshly ground black pepper
1 pound jumbo shrimp, peeled and deveined
2 tablespoons unsalted butter
2 tablespoons olive oil
2 garlic cloves, finely chopped
2 shallots, finely chopped
1 lemon, juiced
1/2 cup chicken broth
Chopped fresh flat-leaf parsley, for garnish

Steps:

  • Put the flour on a plate and season with a healthy amount of salt and pepper; mix with a fork to combine evenly. Dredge the shrimp in the seasoned flour to coat all sides.
  • Heat the butter and oil in a heavy bottomed pan over medium heat until butter stops foaming and just starts to turn a light brown. Add the shrimp, and give it a toss, saute for 5 minutes until the shrimp is firm and there is a crispy coating on the outside. Remove the shrimp to a side plate and cover to keep warm.
  • Put the pan back on the heat and add the garlic and shallots. Cook and stir for 1 minute until soft. Add the lemon juice and chicken broth, give it a stir and let it cook down for 1 minute to thicken slightly. Put the shrimp back in the pan and coat in the lemon sauce. Season with salt and pepper and garnish with chopped parsley before serving.

Make this simple shrimp dish often, but only recently did I discover how good it is served on a bed of farro (see page 190), which Lidia Bastianich introduced me to. It's also delicious with rice, grits, or polenta. You'll get a good two meals out of this amount.

About 10 ounces medium shrimp
2 tablespoons light olive oil
1 fat garlic clove, peeled and sliced thin
Salt and freshly ground pepper
A splash of white wine or dry vermouth
A scattering of chopped fresh parsley (or basil or tarragon if you have some)

Steps:

  • Peel the shrimp, leaving the tail intact if you like picking them up and sucking the meat out of the tail end. Remove any black digestive tracts. Heat the oil in a wok or a heavy sauté pan, scatter in the garlic, and toss the slices in the hot oil for about 1 minute without browning them; then add the shrimp, season with salt and pepper, and stir-fry for about 2 minutes, until the flesh has turned opaque and rosy. Splash in the wine, cook down slightly, scatter parsley and/or other herbs on top, and they're ready to go.
  • To make a more substantial dish, scatter in several mushrooms (halved if big), and stir-fry with the garlic for 2 or 3 minutes. When you add the shrimp, toss in about 1/4 cup frozen peas or a small handful of pea pods or sugar snaps and a couple of scallions, sliced lengthwise. Chunks of asparagus are good, too, when in season.
  • A nice shrimp salad is always good. You can also reheat the shrimp and add either fresh ripe chopped tomatoes or a canned tomato squeezed with a little of its juice, to make a sauce for pasta. Recently I had a small treasure trove of cooked shrimp, and I cooked some thin-sliced fennel in a bit of olive oil and water until tender, then added about six shrimp, and had this over some fast-cooking polenta for a very quick supper.
