Easy Sautéed Zucchini with Onions and Parmesan. Healthy and simple, it's the perfect quick summer side dish recipe!

1 tablespoon extra virgin olive oil
2 tablespoons unsalted butter (divided)
1 medium yellow onion (thinly sliced)
4 medium zucchini (or yellow summer squash, or a mix (about 2 pounds), ends trimmed and cut into 1/2-inch-thick rounds)
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/2 teaspoon dried thyme
1/4 cup freshly grated Parmesan cheese

Steps:

  • Heat the olive oil, onion and 1 tablespoon butter in a large nonstick skillet over medium-low heat. Cook gently until the onions begin to brown, about 10 to 11 minutes. Add the zucchini, salt, pepper, thyme, and remaining Less Sodium Butter with Canola Oil.
  • Increase heat to medium. Continue to cook, stirring occasionally, until the zucchini is just cooked through and beginning to brown, about 10 to 15 minutes. Sprinkle with Parmesan. Enjoy immediately

8 medium zucchini, rinsed and dried
2 tablespoons olive oil
2 garlic cloves, minced
1/3 cup lightly packed chopped fresh chives
1/4 cup chopped walnuts
1/2 cup seasoned dry bread crumb

Steps:

  • Slice zucchini into 1/8-inch rounds.
  • In a large skillet over moderately-high heat, heat olive oil.
  • Add garlic and zucchini.
  • Saute until vegetables begin to soften, about 4 minuets.
  • Sprinkle with chives, walnuts and bread crumbs.
  • Cook for 1 to 2 minutes for crumbs to adhere.
  • Turn with a spatula and cook on other side for 2 minutes.
  • Serve immeadiately.

One of my mother's favorites for when she was rushed and wanted a vegetable side dish that was quick, simple and tasty. She didn't measure the soy sauce, just sprinkled it with the plastic "sprinkling top" (I don't know what else to call it) on the bottle, so I'm just guessing at the amount. These days, I use light (lower-sodium) soy sauce. If you like, jazz it up with the herb of your choice, but I like it just as is. (Occasionally I sprinkle with my favorite herb thyme.)
