2 tablespoons olive oil
1 1/2 lbs assorted mixed mushrooms, quartered (or sliced, shiitake, baby bella, fresh button)
3 tablespoons butter
1 small onion, chopped
1 tablespoon sherry wine vinegar or 1 tablespoon red wine vinegar
1/2 teaspoon salt
1/8 teaspoon pepper
1/3 cup heavy whipping cream
1 1/2 tablespoons chopped fresh sage
1/4 cup toasted salted pistachio nut, coarsely chopped

Steps:

  • Heat oil in a large skillet over med-high heat; add in mushrooms; cook 10 minutes (do not stir).
  • Add in butter; stir until butter melts; add in onion and next 3 ingredients; cook/stir occasionally, 4 minutes or until onion is tender.
  • Decrease heat to medium; add in cream and sage, stir well.
  • Cook/stir constantly, 1 minute or until cream thickens.
  • Transfer mushrooms to a serving bowl; sprinkle with pistachios.

1 tablespoon fresh lemon juice
1/2 tablespoon soy sauce
1 teaspoon sugar
2 tablespoons olive oil
10 ounces mushrooms, quartered
1 tablespoon unsalted butter
1 garlic clove, chopped

Steps:

  • Stir together lemon juice, soy sauce, and sugar. Heat a 12-inch heavy skillet over moderately high heat until very hot. Add oil, then sauté mushrooms, stirring, until golden brown, about 5 minutes. Add butter and garlic and saut , stirring, until butter is absorbed. Add lemon mixture to mushrooms, stirring until sauce is absorbed.

  • Bring a pan to medium high heat. No need to add any fat/oil/butter. Throw the quartered mushrooms straight into the hot pan and fry them as is. Mushrooms let go of a lot of liquid so it will be fine. You may have to do this in two different batches as you want to try and crisp up the mushrooms on the outside and not steam them.
  • Add 1/4 tsp sea salt and a pinch of black pepper. Cook for ~2-3 minutes uncovered, flip and cook ~2-3 minutes or until browned. Add balsamic vinegar to the pan. The pan may "hiss". Continue cooking for an additional minute.
  • Toss cooked mushroom with chopped pistachios. Add sea salt to taste and top with sliced basil. Happy Eating! Beckie
