GREEN BEANS WITH POTATO CHIP CRUNCH
Steps:
- Add the oil, garlic and onions to a small saute pan. Turn the heat to low and cook, stirring or swirling the pan frequently to ensure the garlic does not burn, until the garlic and onions turn golden brown and slightly crispy, about 40 minutes.
- Remove from the heat and strain the liquid into a bowl. Place the garlic and onions on a paper towel-lined plate to drain and crisp.
- Heat a medium skillet over medium-high heat and add the almonds, coriander seeds and sesame seeds. Toast, swirling the pan, until brown and aromatic, 7 to 10 minutes. Remove from the heat and add to a medium bowl.
- Add the garlic and onions, potato chips, Aleppo pepper, salt and some pepper and toss to combine.
- Meanwhile, heat a large saute pan over medium-high heat and add 1 tablespoon of the reserved garlic-onion oil. Add the green beans and saute until slightly tender, about 7 minutes. Add the lemon zest and juice and mix to combine. Season with salt.
- Transfer the green beans to a serving plate. Top with the potato chip mixture and the parsley. Enjoy!

- Heat a large pan over high heat. When it's hot, add the oil and green beans. Cook the green beans, tossing occasionally, until soft and starting to blister and turn black in a few spots, about 5 minutes.

- Bring a medium saucepot of salted water to a boil. Add the green beans and cook until crisp-tender, about 4 minutes. Drain and rinse under cold water until the beans are cool. Drain well.
- Heat the olive oil in a large skillet over medium heat. Add the shallot and cook, stirring occasionally, until lightly browned and tender, about 2 minutes. Add the green beans and garlic and increase the heat to medium-high. Cook, stirring occasionally, until the garlic has softened and the beans are heated through, about 4 minutes. Season with salt and pepper.

STRING BEANS WITH GARLIC
Steps:
- Blanch the string beans in a large pot of boiling salted water for just 1 1/2 minutes. Drain immediately and immerse in a large bowl of ice water to stop the cooking. When they are cool, drain and set aside.
- Heat the butter and olive oil in a very large saute pan over medium heat and cook the garlic for 1 to 2 minutes, tossing occasionally, until lightly browned. Add the string beans, sprinkle with salt and pepper, and toss together. Reheat the string beans and serve.
SAUTEED GREEN BEANS WITH GARLIC AND PEPPER
Steps:
- Heat the oil and 1 tablespoon butter in a large skillet over medium heat. Add the garlic and cook until fragrant, about 1 minute. Add the green beans, then season with salt and pepper and stir to combine.
- Add the stock, then bring to a simmer and cover the skillet. Cook until the green beans are bright green and just slightly tender, about 5 minutes. Uncover the skillet and cook until the liquid evaporates and the green beans are tender, 10 minutes more. Stir in the lemon juice and remaining tablespoon butter and season with additional salt and pepper.

- Blanch beans: Bring a large saucepan of water to the boil with 1 teaspoon of salt. Add beans, cook for 4 minutes (they will turn bright green), drain, then rinse under cold tap water to cool. (There's really no need to shock in ice water). Shake off excess water.
- Sauté: Heat oil in a large skillet over medium high heat. Add green beans and garlic. Toss (or stir!) for 2 minutes until the garlic is golden and crispy. Add salt and pepper, then toss.
- Serve: Transfer beans to serving dish. Serve warm!
- Prepare ahead: Blanch beans per step 1, cool and dry, store in fridge until required. When ready to serve, just toss with garlic. It's an instant on-demand side!
