SAUSAGE CASSEROLE SLOW COOKER RECIPE
This slow cooker sausage casserole is the perfect way to feed a crowd while also keeping costs low. This casserole has a thick flavor packed gravy that is so good you will find yourself going back for seconds.

Steps:
- In a frying pan, cook the sausages until they are golden brown.
- Remove and allow to cool slightly before cutting into thick slices.
- Add the butter, onion, garlic and cook for about 1 minute.
- Add the flour and stir in. Cook for about 2 minutes.
- Slowly stir in the beef stock and the Worcestershire sauce. Once done, transfer to the slow cooker.
- Add the diced carrot, thyme, sausages, bay leaf, and peas to the slow cooker.
- Cook for 6 hours on low.
- Season with salt and pepper.
- Serve & Enjoy.

SLOW-COOKER SUNDAY GRAVY
This sauce showcases tomatoes three ways: sun-dried tomatoes add sweetness and body, toasted tomato paste adds intense flavor, while crushed tomatoes melt down into this hearty sauce.

- Heat a large skillet or a 5 1/2- to 6-quart stovetop-safe slow cooker insert over medium-high heat. Add the oil and sausage and cook, turning occasionally, until brown all over, 7 to 8 minutes. Push the sausage to the side of the cooker. Add the tomato paste and cook, stirring, until brick red, about 1 minute. Add 1/2 cup water and bring to a boil, stirring to scrape up the browned bits.
- Add the short ribs, Italian herbs, garlic, sun-dried tomatoes, crushed tomatoes, onions, bay leaf, 1 tablespoon salt and some pepper to the insert and put it into the slow cooker. If you're using a skillet, transfer the tomato mixture to the slow cooker at this point. Cover the cooker, set it on low and cook until the beef is very tender, 6 to 8 hours.
- When ready to serve, bring a large pot of salted water to a boil. Add the pasta and cook, stirring occasionally, until al dente, about 10 minutes. Drain.
- Transfer the sausage and beef to a cutting board, slice into serving portions and arrange on a serving platter. Toss the pasta with some of the sauce and transfer to a serving bowl.
- Serve the meat and pasta with the Parmesan and remaining sauce on the side. Freeze any leftover sauce for up to 1 month.
SLOW-COOKER SAUSAGE CASSEROLE

- Fry the onion and celery in the oil over a low heat until it starts to soften and cook, about 5 mins, then spoon it into the slow cooker. Fry the carrots briefly and add them too.
- Brown the sausages all over in the same frying pan - make sure they get a really good colour because they won't get any browner in the slow cooker. Transfer to the slow cooker and add the sweet potato and tomatoes.
- Put the purée in the frying pan and add 250ml boiling water, swirl everything around to pick up every last bit of flavour, and tip the lot into the slow cooker. Add the herbs, stock cube and some pepper. Don't add salt until the casserole is cooked as the stock can be quite salty. Cook on high for 4 hrs or on low for 8 hrs, then serve or leave to cool and freeze.

SAUSAGES WITH STICKY ONION GRAVY

- Fry sausages for 15 mins or until browned, then remove from pan and keep warm. Heat onions in same pan, then add flour, stirring for 1 min. Add thyme, then gradually add stock. Bring to boil then simmer for 5 mins until smooth. Add Worcestershire sauce, season and serve with sausages.
- For the onions: Makes 600g, which is 3 batches. Prep time 5 mins, cook time 30 mins. Melt the butter in a large, deep frying pan and stir through the onions. Cover with a lid and cook gently for about 10 mins, until softened. Remove lid, add sugar, then cook 15-20 mins, stirring, until all of the liquid has evaporated and onions have turned golden. Divide into 3 batches to make the recipes, right. Will keep in the fridge for up to 5 days, or freeze for up to 1 month.

- 1. Heat oil in a large pan on a medium heat, fry the sausages 5 mins turning frequently.
- 2. Scatter over the onion, and cook for another 5 mins until softened.
- 3. Increase the heat and add the rosemary and apples, and cook for 3-4 minutes till the apple changes colour.
- 4. Add the cranberry sauce and mustard to the stock and stir, then add the stock to the pan too.
- 5. Bring to the boil and simmer uncovered for 10 mins.
- 6. Season to taste and serve with mashed potatoes (sweet potatoes work well with this dish)

- In 10-inch skillet, break up sausage and cook over medium-high heat 6 to 8 minutes, stirring occasionally, until no longer pink. With slotted spoon, remove sausage from skillet to small bowl; set aside.
