Crispy filo pastry filled with sausagemeat, sage and chunks of juicy apple makes a simple yet tasty weeknight supper

1 tbsp sunflower oil
1 medium onion , finely chopped
1 small eating apple , peeled, cored and cut into 1.5cm chunks
3 sheets filo pastry
454g pack extra-lean pork sausages
1 tbsp finely chopped sage
bag of mixed salad leaves, to serve

Steps:

  • Heat oven to 200C/180C fan/gas 6. Line a large baking tray with baking parchment. Heat 1 tsp of the oil in a small non-stick saucepan and gently fry the onion and apple for 6-8 mins, stirring regularly, until softened and lightly browned. Leave to cool for 5 mins.
  • Place 1 sheet of pastry on your work surface, with the short end closest to you, and brush lightly with oil. Place another sheet on top, but off-set roughly 6cm to the right, and brush with a little more oil. Top with the final sheet, off-set another 6cm to the right. The pastry rectangle should be roughly 40 x 45cm.
  • Squeeze the sausagemeat from the skins into a large bowl. Add the onion, apple and sage, and mix well. Form the pork mixture into a large sausage shape and place across the pastry, about 8cm in from one short end and 8cm from each side.
  • Fold up the bottom of the pastry until it begins to cover the filling, then fold in the sides. Roll the pastry from the bottom, gently but firmly, to enclose the filling. Place on the baking tray and brush with the remaining oil. Bake for 30 mins or until the filling is cooked and the pastry is golden brown and crisp. Serve with mixed salad leaves.

4 raw chicken sausages (about 1 pound), any flavor
2 tablespoons vegetable oil, plus more as needed
1 medium yellow onion, sliced 1/4-inch-thick
Sea salt
2 tablespoons apple cider vinegar, or to taste
1/2 head red cabbage, sliced 1/4-inch-thick
3 medium Granny Smith or any tart apples, cut into 1/2-inch-dice
2 teaspoons brown sugar
1 tablespoon fresh sage, sliced thin, reserving some for garnish
Crusty bread, toasted, for serving

Steps:

  • Sear the sausages in the oil in a large skillet over medium-high heat until the internal temperature is 150 degrees F, about 5 minutes per side. Remove the sausages from the skillet and set aside. Return the skillet to medium-low heat and add more oil if the pan is dry. Add the onions and salt to taste and cook the onions until translucent and just beginning to brown, about 5 minutes.
  • Deglaze the skillet with the vinegar, scraping the bottom to get all the brown bits (fond), which equals flavor. Add the cabbage and apples and stir to combine. Let it cook down a bit, stirring occasionally, about 4 minutes. Season with salt and sugar and cook until the cabbage and apples start to soften, another 5 minutes. Return the sausages and any juices that have collected to the skillet. Cover and cook to heat through. Sprinkle in some sage and cook until the internal temperature of the sausages is 165 degrees F, about 5 minutes more. Garnish with additional sage. Adjust the salt if needed, then serve with crusty bread.

1 kg pork belly
1 large onion
1 large cooking apple
2 teaspoons marjoram
2 teaspoons dried sage
2 teaspoons dried herbs
grated nutmeg (about an eigth of a nut)
ground black pepper
ground sea salt
100 g white breadcrumbs
sausage, skin (my friendly butcher lets me buy some from them)

Steps:

  • First make the breadcrumbs in a food processor, so they are fine.
  • Mince (or grind) the pork, then add the onion to the grinder, and finally the apple (peeled and cored). Add all the herbs and nutmeg and salt and pepper to taste.
  • Fill your sausage filler (either machine or hand operated one) and put the skins over the end of the nozzle.
  • Fill slowly so that the skins do not burst, and twist the finished sausages into the required size.
  • Since nothing has been pre-frozen, these will freeze well.
  • Various adaptations can be made, by adding either sun-dried tomato puree, or garlic puree for instance.
  • Prior to cooking, pierce the skins to prevent bursting.

1 tablespoon olive oil
1 pound ground sweet Italian sausage
1 shallot, minced
2 ounces calvados
1/2 cup golden raisins
1/2 cup toasted pistachios, chopped
2 tablespoons julienned fresh sage
Kosher salt and freshly ground black pepper
4 Fuji apples
1 cup seasoned rice vinegar
Eight 1/4-inch slices Camembert cheese
Fresh thyme leaves, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • Heat a 12-inch skillet over medium-high heat. Add the oil, then the sausage. Saute the meat until browned but still a little pink, about 5 minutes. Add the shallot and continue to cook until the sausage is fully cooked, another 5 minutes. Off the heat, deglaze with the calvados and scrape up any bits on the bottom of the skillet. Add the raisins, pistachios and sage. Season with salt and pepper and set aside to cool in a bowl.
  • Halve the apples from stem to bottom and core. Carefully hollow them out using a melon baller, reserving the apple "balls." Chop up the apple "balls" (you should have about 3/4 cup) and add to the sausage mixture. Stuff each hollowed-out apple half with some of the sausage mixture.
  • Pour the vinegar into the bottom of a 9-by-13-inch baking dish and add the stuffed apples skin-side down. Bake until the apples are just soft, about 25 minutes. Top each apple with a slice of cheese and continue to bake until melted, another 5 minutes. Garnish with fresh thyme leaves.

SAUSAGE AND APPLES, NORMANDY-STYLE

Calvados is the famous apple brandy from Normandy. A well-stocked liquor store will generally have it on hand, but you can substitute applejack brandy (or even a good fresh apple cider.) "I can buy boudin blanc in many places in New York," Joseph says, "but depending on where you live, it may not be so easy for you. If I had to substitute, I suppose I would use bockwurst, which is a similarly, delicately flavored German veal sausage. Potatoes mashed with butter and cream is what we always eat with this."

3 or 4 links (about 1 pound) fresh French white sausage (boudin blanc) or bockwurst, cut into 3/4-inch slices
4 small Granny Smith or other firm, tart apples, about 1 1/2 pounds, peeled, cored, halved, and cut into 1/4-inch crosswise slices
Ground cinnamon
1/4 cup Calvados, applejack or good apple cider
1/4 cup heavy cream
Chopped fresh parsley leaves, for garnish

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large cold skillet, arrange the sausage slices in 1 layer. Set over medium-high heat, and cook, turning the slices once or twice until they are crisp and nicely browned on both sides, about 10 minutes. Remove from the heat and set aside.
  • In a 2-quart casserole, arrange a layer of about 1/4 of the sausage slices. Cover the sausage with a layer of about 1/4 of the apple slices. Sprinkle lightly with cinnamon. Continue in this manner to make 4 layers, ending with the apple slices.
  • Stir the Calvados into the skillet in which the sausage was browned, scraping up any crusty, brown bits that cling to the bottom of the pan. Stir in the cream until well blended, Pour this mixture evenly over the casserole.
  • Cover, and bake for 1 hour until the apples have cooked down and the mixture is bubbling. Sprinkle with parsley before serving.

One 16-ounce bag stuffing cubes
6 tablespoons unsalted butter, plus more for greasing the pan and topping
1 pound fresh sage sausage, casings removed
1 medium onion, chopped
2 cooking apples, such as Gravenstein, Rome, or Golden Delicious, peeled, cored, and chopped
1 to 2 ribs celery with leaves, chopped
Kosher salt
3 cups chicken broth, homemade or low-sodium canned
1/4 cup chopped fresh flat-leaf parsley
1/2 cup walnut pieces, toasted (see Cook's Note)
2 large eggs, beaten

Steps:

  • Preheat the oven to 325 degrees F.
  • Put the stuffing cubes in a large bowl and set aside. Butter a 3-quart casserole dish.
  • Melt 2 tablespoons of butter in a large skillet over medium-high heat. Add the sausage and break it up with a wooden spoon. Cook until it loses most of its pink color, but not so much that it's dry, about 5 minutes. Add the sausage and pan drippings to the stuffing cubes. Melt the remaining butter in the pan. Add the onion, apple, celery, and 1/2 teaspoon salt. Cook until the vegetables get soft, about 5 minutes. Add the broth and parsley and bring to a boil.
  • Pour the vegetable mixture over the stuffing cubes and toss until evenly moistened. Mix in the walnuts and eggs. Loosely pack the dressing in the prepared pan and cook uncovered until the top forms a crust, about 40 minutes. Drizzle about 2 tablespoons of turkey pan drippings or melted butter over the top. Cook until the top is crisp and golden, about 20 minutes more.

1 Granny Smith apple, peeled and cored
2 tablespoons olive oil, plus more as needed
2 tablespoons butter
Pinch sugar
24 small sage leaves

Steps:

  • Slice the pork sausage into 1/4-inch/1/2 cm-inch slices on the bias. Cut the apple into 24 cubes. Heat the oil in a saute pan and fry the sausage slices on both sides until golden brown, remove to a platter. Wash the pan before melting the butter in the pan for the apples. Add the sugar, and fry the apple cubes, tossing occasionally, until golden on all sides. Add a little more oil to the pan, if needed, and fry the sage leaves until slightly crisp, 30 seconds to 1 minute.
  • Lay a fried sage leaf on each sausage slice. Top with a cube of sauteed apple. Pierce with a toothpick and serve.
