1 pound sausage (I used pork)
1 small onion (diced)
3 stalks celery (diced)
2 garlic cloves (minced)
1 can chicken broth (14.5 ounce)
1 can cream of celery soup*
1 cup uncooked rice
1/4 cup slivered almonds

Steps:

  • Preheat oven to 350 degrees. In a medium-sized skillet over medium-high heat add the sausage and cook halfway. Add the onion, celery, and garlic and continue to cook until the vegetables are tender and the sausage is no longer pink.
  • Add the sausage to a 2-quart casserole dish. In a small bowl, whisk together the chicken broth and cream of celery. Add the rice to the sausage and soup. Mix together until incorporated. Top with slivered almonds. Cover tightly with aluminum foil and bake for 60 minutes. Let rest for 10 minutes before serving.

This Chinese sausage fried rice is the ultimate fried rice of them all. It is flavour packed comfort food, quick and easy!

2 cups Leftover (overnight) rice ((note 1))
2 Chinese sausage (lap cheong) (Thinly sliced (note 2))
2 eggs (whisked)
1/2 brown onion (finely diced)
1 clove garlic (finely minced)
1 spring onion/scallion (large, thinly sliced (note 3))
1 tbsp soy sauce
2 tbsp oil (such as canola or sunflower)
1/4 tsp salt (guide, adjust for personal preference)
1/4 tsp black pepper

Steps:

  • Optional: remove the casing of the sausages by soaking it in warm to hot (not boiling) water for 2 minutes then peel at either ends. Discard casing. (note 4)
  • Scramble eggs in a hot non-stick pan with 1 tbsp of oil. Once it has formed shape but not completely cooked through, remove and set aside. This takes about 10 seconds.
  • In the same pan, add remaining oil and saute onions and garlic on high heat.
  • Once onions and garlic has turned slightly golden, add chinese sausages and white parts of the sliced spring onions/scallions. Saute on medium heat for 1 - 2 minutes.
  • By now you the smell from the pan (or wok if using) should be heavenly. Push ingredients in the pan to the edges of pan/wok to make room for rice.
  • Pour leftover rice in the middle of pan/wok and turn the heat back up to high and stir fry for 1 minute. Push clumps of rice down with the flat side of spatula to break rice apart.
  • Add in soy sauce, salt and pepper. Stir fry for 2 more minutes. Make sure each and every grain of rice has touched the hot pan/wok.
  • Add scrambled eggs back into the pan/wok along with green parts of sliced spring onions/scallions.
  • Break eggs apart into similar size as sausages. Stir fry and mix through for about 20 - 30 seconds.
  • Serve on its own or your favourite Chinese meat or vegetable dish.

Therefore, I have made this simple fried rice with some Chinese sausage, and hope that this is the recipe you are looking for after preparing all the complicated Chinese New Year dishes.

2 tbsp cooking oil (or shallot oil)
2 cloves garlic, minced
1 Chinese sausage, cut into diagonally
2 eggs, lightly beaten
250g (9 oz) overnight, leftover steamed rice
2 tsps light soy sauce
1/2 tsp ground white pepper,
1/4 tsp salt
2 tbsp chopped scallion
2 tsp fried shallot

Steps:

  • Break the lumps of cooked rice with your hand.
  • Deep-fried the shallot until crispy. Use the shallot oil to fry the rice.
  • Place the Chinese sausage in boiling water for twenty seconds. The casing will bulge out and detached. Remove it from the pot and let it cools.
  • Cut the Chinese sausage into small dices.
  • Stir-fried the Chinese sausage until the oil rendered.
  • Remove the Chinese sausage and keep the oil in a wok. Add some shallot oil if it is not enough.
  • Saute the chopped garlic until aromatic.
  • Pour the beaten egg into the wok. Add the rice.
  • Stir-fry it over low heat until the egg is fully cooked and encase each grain of rice.
  • Return the sausage to the wok.
  • Seasoned rice with light soy sauce, salt, and ground white pepper.
  • Now turn to high heat to stir-fried rice until aromatic.
  • Add the scallions.
  • Dish out immediately. Garnish with more chopped scallions and fry shallots.

This is an easy to prepare fried rice dished passed down by my Japanese mother. You won't find anything like it in the restaurants. Every time we have a family get-together or a covered dish luncheon at work, I am always requested to bring this rice. Being half Japanese, my family would eat this rice as the main part of our meal. Most people would make this as more of a side dish. This recipe makes a lot, so feel free to cut down on the quantities. The beautiful lady in the picture is my mother who I lost to cancer in 2002.

1 lb pork sausage
8 eggs, scrambled
3 tablespoons vegetable oil
1/2 head cabbage, cored and shredded
3 carrots, chopped
6 cups cooked white rice, MUST be chilled
1/4 cup soy sauce (to taste)
1 (14 1/2 ounce) can bean sprouts, drained
1/2-1 cup frozen green pea
ground black pepper
3 green onions, chopped

Steps:

  • In a skillet over medium-high heat, cook the sausage until evenly browned. Drain, and remove sausage from the pan. In the same pan, scramble the eggs, stirring frequently until cooked through. Remove eggs from pan and set aside.
  • Heat the oil in a very large skillet or electric skillet over medium to medium-high heat. Stir fry the cabbage and carrots just until the cabbage has wilted. Add the cold rice, and fry, sprinkle some soy sauce over the mixture and break up clumps in the rice. (Rice must be cold or the dish will come out gummy.) Mix in the sausage and sprinkle some more soy sauce over all. Stir in bean sprouts and eggs, mixing well so there are no big chunks. Gently mix in the peas. Season with pepper, and stir in green onions just before removing from the heat. Add more soy sauce, if desired, to taste, and serve. This dish reheats well in the microwave.
  • Tip 1: To save time, instead of chopping up cabbage and carrots, you can buy a 16 oz. package of coleslaw mix which has the cabbage and carrots already shredded.
  • Tip 2: If you are using the quantitites listed above, it would be easier if you break it down into 2 or 3 batches. This makes enough fried rice to fit into a large crockpot. I place the rice in a crockpot to keep it warm for cookouts.
  • Tip 3: This recipe is very versatile. You can add, leave out or change ingredients according to your taste. Instead of sausage, this rice works well with chicken, beef, shrimp, etc. If you like you can add water chestnuts or bamboo shoots. A great way to use up leftovers.

1 tablespoon extra-virgin olive oil or vegetable oil, 1 turn of the pan
1 pound bulk breakfast sausage, such as maple sausage
8 large eggs
A splash half-and-half or whole milk
A few drops hot sauce
Salt and pepper
6 ounces (1/3 pound) Cheddar, diced
1 plum tomato, seeded and diced

Steps:

  • Preheat a nonstick skillet over medium high heat. Add extra-virgin olive oil or vegetable oil, 1 turn of the pan, add sausage and brown and crumble the meat, 5 or 6 minutes. Remove the sausage from the pan and drain off some of the fat. Return pan to heat and reduce the temperature to medium low.
  • Whisk together the eggs, half-and-half or milk, hot sauce, salt and pepper. Scramble the eggs until soft, then add cheese and continue to scramble another minute or so to finish cooking eggs and to begin to melt the cheese bits. Remove pan from heat and combine sausage and eggs. Garnish servings of the eggs with a few pieces of diced fresh tomato. Serve plates of sausage scrambles with pancakes, or for a simple supper, serve with toasted whole grain bread, buttered and drizzled with honey.
