Here's a great recipe for crackers to use at Christmas. I've made this several ways, instead of just hamburger I've used a combination of ground deer and ground beef or ground moose and beef. You could probably use any combination of meat but I suggest adding a non-lean ground meat such as beef or pork because you don't want it to be too dry. I have cooked this on the second day and it's pretty much the same as the fourth day but you should let it sit for a minimum of 24 hours with at least one good mix during that time.

5 lbs ground beef (or 5 lbs ground meat combination-see note above)
4 -5 teaspoons curing salt, rounded
5 tablespoons mustard seeds
2 teaspoons fresh coarse ground black pepper
1 1/2 teaspoons garlic powder or 2 1/2 teaspoons garlic salt
1 tablespoon hickory smoke salt or 1 tablespoon liquid smoke

Steps:

  • 1st day: Mix all ingredients into a large bowl and refrigerate.
  • 2nd day: Mix (Can be cooked on this day).
  • 3rd day: Mix.
  • 4th day: Form into logs and bake in oven at 140-150 F for 8 hours, 4 hours per side.

1 pound ground beef
1 small white onion (finely diced)
1 can green chiles (7 oz, finely chopped)
1 10.5 oz can condensed cream of mushroom soup
1 10 oz can Rotel tomatoes
3 pounds Velveeta (cubed)

Steps:

  • Brown sausage, ground beef, and onion in a large skillet over medium heat. Break up the meat and don't stir until the meat starts to brown. Drain, if necessary.
  • Add browned meat and onion along with all other ingredients into a slow cooker. Heat on LOW until cheese is melted and leave on LOW in the pot to serve.
  • Garnish with jalapenos, chopped green onions, or chopped cilantro if desired.

½ pound bulk spicy pork sausage
½ pound ground beef
1 onion, diced
1 (2 pound) loaf processed cheese food (such as Velveeta®), cubed
1 (28 ounce) can diced tomatoes with green chile peppers (such as RO*TEL®)
1 (10.75 ounce) can condensed cream of mushroom soup

Steps:

  • Heat a large skillet over medium-high heat. Crumble sausage and ground beef into the skillet; add the onion. Cook and stir the beef mixture until the meat is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease. Pour into a slow cooker.
  • Layer cheese food cubes atop meat mixture.
  • Blend diced tomatoes with green chile peppers in a blender until smooth; pour over the cheese cubes along with the cream of mushroom soup. Stir the mixture.
  • Cook on High, stirring occasionally until the cheese is completely melted, about 90 minutes.

2 (8 ounce) packages cream cheese
2 (10 ounce) cans Mild Ro*Tel tomatoes (If you want a spicy dip, use Original or Hot)
1 package taco seasoning (or 2 Tablespoons homemade)

Steps:

  • In a skillet over medium heat, cook ground sausage and ground beef until no longer pink.
  • Drain off excess fat and transfer mixture to crock pot.
  • Cut Velveeta and cream cheese into chunks and place into crock pot on top of meat.
  • Pour in diced tomatoes (with juices) and taco seasoning.
  • Turn crock pot to low and cook for 1 hour.
  • Stir well to incorporate all cheeses and seasonings.
  • Cook for 30 more mintures or until cheese is melted and hot.

  • Brown hamburger meat with chopped onion.
  • Brown breakfast sausage.
  • Place hamburger and sausage in crock pot.

  • Turn back to low and serve.

1 lb breakfast sausage, hot
1 lb Velveeta cheese, cubed
1 teaspoon oregano
1 teaspoon crushed red pepper flakes
1 (9 1/2 ounce) box crackers, Triscuts

Steps:

  • Cook ground beef and sausage together, drain.
  • Add Velvetta cheese a few cubes at a time. Melt into mixture then add more cheese. Do this until all cheese has been melted into meat mixture.
  • Add oregano and crushed red peppers. Mix together and cook about 30 minutes. Make sure to stir a few times while it is cooking.
  • You can serve from the pot you cooked in or place in one of those dip crock pots. The crock pots you can keep the dip warm longer without worrying about burning.
  • Place on a Triscut and you are done. You can use whatever cracker you want but the flavor of the Triscut with the dip is really a treat.
