GRILLED SMOKED SAUSAGE WITH APPLE FENNEL "SAUERKRAUT"



Grilled Smoked Sausage with Apple Fennel

1 large fennel bulb
1 tablespoon olive oil
1 large Vidalia onion, chopped
5 Granny Smith apples, grated
1/2 lemon, juiced
1 1/2 tablespoons butter
1 teaspoon caraway seeds
1/2 cup hard cider or apple juice
Kosher salt and freshly ground pepper
8 smoked sausages
2 tablespoons butter, melted
8 poppy-seed hot dog buns or French rolls
Spicy brown or Dijon mustard

Steps:

  • Clean and cut the fennel in long strips (julienne) and trim tops, reserving for later use.
  • Heat oil in heavy-bottomed saucepan over medium heat, add onion and kosher salt. Cook until onion begins to brown, add strips of fennel, stir, and let cook covered for about 5 minutes or until fennel begins to wilt, reduce heat to medium-low.
  • Meanwhile, mix grated apple with lemon juice and add to pan, cover and cook, stirring occasionally for 15 minutes. Add butter, mixing well. Add caraway seeds, reserved fennel tops and hard cider or apple juice. Cook for an additional 5 minutes, uncovered. Season, to taste, with salt and pepper. Remove from heat and let sit to allow the flavors to mingle. (The sauerkraut can be made up to 2 days in advance and kept covered in the refrigerator until ready to use.)
  • Build charcoal fire or preheat gas grill. Just before serving, warm sauerkraut and grill sausages. To grill sausages, place on the cooking grate over direct medium heat for 6 to 8 minutes, turning occasionally to mark all sides of the sausage. Meanwhile, split the buns and brush a little butter on the inside. Toast until lightly browned. When ready to serve, place 1 sausage and a generous amount of the sauerkraut on the bun and serve with mustard on the side. Enjoy immediately.

2 tablespoons olive oil
12 (3.5 ounce) links sweet Italian pork sausage, casing removed
1 cup dry white wine
2 tablespoons olive oil
6 large cloves garlic, peeled
¼ teaspoon red pepper flakes, or to taste
1 cup olives, chopped
3 bulbs fennel, trimmed and cut into 1-inch pieces
1 tablespoon water, or as needed
salt and ground black pepper to taste

Steps:

  • Heat 2 tablespoons olive oil in a large skillet over medium-high heat and add sausage. Cook and stir until the meat is browned, about 10 minutes. Pour in wine and bring to a boil; cook, stirring often, until wine has reduced by half, about 10 more minutes. Transfer sausages and liquid to a separate container.
  • Heat 2 tablespoons olive oil in same skillet over medium-high heat. Cook and stir garlic until fragrant, about 1 minute. Stir in red pepper flakes; cook and stir for 30 seconds. Stir in olives. Mix in fennel, stirring to incorporate. Cover and simmer, adding 1 to 2 teaspoons water occasionally to prevent burning, until fennel is soft, 6 to 8 minutes.
  • Return sausage and its cooking liquid to skillet and toss with fennel mixture. Cook and stir fennel and sausage mixture until fennel is browned and coated with reduced sauce, 5 to 8 minutes. Serve with a slotted spoon if desired to allow some of the drippings to drain off.

1 onion, thinly sliced
1 red bell pepper, cored and thinly sliced
1 tablespoon tomato paste
12 ounces hot Italian sausage (if links, remove casings)
12 ounces sweet Italian sausage (if links, remove casings)
8 slices provolone
1/4 cup mayonnaise
3 tablespoons pesto
4 ciabatta rolls, buttered and lightly toasted
Pickled banana peppers, for topping

Steps:

  • Heat the oil in a large skillet over medium-high heat. Add the onions and peppers and saute until the onions are translucent and the peppers are tender, 6 to 8 minutes. Stir in the tomato paste and cook for 1 minute longer. Remove from the heat.
  • Preheat an outdoor grill to medium high.
  • Combine both sausages in a bowl. Form into 4 patties. Grill until cooked through, 4 to 5 minutes per side. Top each burger with some of the onions and peppers and 2 slices of cheese, cover the grill and cook until the cheese melts.
  • In a bowl, add the mayo and pesto and stir to combine. Spread the rolls with the pesto mayo, add the burgers and banana peppers and serve immediately.

1 fennel bulb ((medium to large)(cut into thin matchsticks or shredded))
2 apples ((crisp type)(peeled, cored and cut into thin matchsticks))
⅓ cup red onion ((thinly sliced))

2 tbsp dill ((chopped))
3 tbsp parsley ((chopped))
salt & pepper
1 tbsp white wine vinegar

  • Chop the fennel into thin matchsticks or shred into very thin slices. Keep some of the leaves and chop (if the fennel didn't have any leaves - don't worry!)Peel and de core the apples then cut into thin slices. Cut the thin slices into very fine matchsticks then squeeze over half of the lemon and mix well.Very finely slice the red onion and add a little lemon over, mix well.Now combine all the ingredients in a bowl. 12 ounces sourdough bread, cut into 1/2 inch pieces. You can use pre-cut, pre-toasted bread as well
3 Italian sausage, links. (I use two sweet and one hot)
5 teaspoons extra virgin olive oil, divided
4 cups chopped onions
1 1/4 cups sliced fennel bulbs (One large bunch)
1 1/4 cups chopped carrots
2 tablespoons chopped fresh sage
1/2 teaspoon crushed fennel seed
5 garlic cloves, minced
1/2 teaspoon black pepper
3 cups chopped golden delicious apples (about 3 apples)
1 1/2 cups chicken broth (I use low sodium)
2 tablespoons sugar
2 large eggs

Steps:

  • 1. Preheat oven to 400°.
  • 2. Arrange bread cubes in a single layer on a baking sheet coated with cooking spray. Bake at 400° for 16 minutes or until golden, stirring after 8 minutes. Place in a large bowl.
  • 3. Heat a large skillet over medium-high heat. Remove casings from sausage. Coat pan with cooking spray. Add sausage to pan; cook 8 minutes or until browned, stirring to crumble. Add sausage to bread.
  • 4. Return pan to medium-high heat. Add 3 teaspoons oil to pan; swirl to coat. Add onion and next 5 ingredients (through garlic). Add 1/4 teaspoon pepper; sauté 8 minutes or until vegetables are tender, stirring occasionally. Add vegetables to sausage mixture.
  • 5. Return pan to medium-high heat. Add remaining 2 teaspoons oil to pan; swirl to coat. Add apple and sugar; sauté 5 minutes or until apple caramelizes, stirring occasionally. Add to the sausage mixture.
  • 6. Combine broth (NOT TOO MUCH! It will be mushy) and eggs in a small bowl, stirring with a whisk. Add broth mixture and remaining 1/4 teaspoon pepper to sausage mixture; toss well to combine.
  • 7. Spoon sausage mixture into a 13 x 9-inch glass or ceramic baking dish coated with cooking spray. Cover with foil. Bake at 400° for 20 minutes. Uncover dish; bake at 400° for 20 minutes or until browned and crisp.
  • 8. Enjoy!

1/4 teaspoon salt
3/4 teaspoon black pepper
4 hamburger buns
Accompaniment: mustard
Special Equipment
4 (6- to 8-inch) wooden skewers; a large (2-burner) well-seasoned ridged grill pan (preferably cast iron)

Steps:

  • Uncoil sausage and cut into 4 equal lengths. Re-coil each piece into a round and secure with a skewer horizontally through coil.
  • Toss together fennel, onion, oil, salt, and pepper in a bowl.
  • Lightly oil grill pan and heat over moderately high heat until hot but not smoking. Arrange sausages and fennel and onion in grill pan (vegetables can be in a shallow pile). Steps:

  • For the marinade: Whisk the oil, parsley, chives, soy sauce, garlic, lemon zest and pepper in a medium bowl.
  • For the skewers: Alternating the vegetables and meat, thread 3 pieces each of sausage, zucchini and lemon, and 2 pieces each of fennel and bell pepper onto each skewer. Pour or brush the marinade over the skewers. Refrigerate for at least 1 hour until ready to grill.
  • Preheat a gas or charcoal grill. Oil the grill with vegetable oil. Grill the skewers, turning occasionally, until the sausage is cooked through, 15 to 20 minutes.

  • Halve onions and slice thinly
  • Fry gently in a splash of oil with the fennel seeds and crushed garlic for 5 mins
  • Add pricked sausages - I like to twist my sausages in the middle so each one becomes two smalled fatter ones!
  • The idea is to brown the sausages all over whilst they absorb some of the flavour of the fennel etc
  • Peel and slice the potatoes into long wedges
  • Add potatoes, zest and juice of 2 lemons and a cupful of water, stir to coat - don't be tempted to add too much water at this stage, add 1/2 teaspoon salt
  • Transfer to casserole if necessary (I use a cast iron one that goes on the hob too) and cook at 180C(fan) 200C(standard)gas6 for about 45 mins. Check occasionally and stir gently to get all potatoes in liquid - add a bit more if needed.
  • Once potatoes are tender adjust seasoning, stir in parsley if needed and serve with green salad or veg of choice
