One-Skillet Cheesy Sausage, Rice & Cauliflower Casserole image

We like the whole-grain goodness of brown rice, but white rice also works; if you use it, start with 2 cups of chicken stock in step 1 and reduce the cooking time to 12 minutes. Also, you can use whatever frozen vegetables you have on hand.

Steps:

  • Coat a large ovenproof skillet with cooking spray. Heat the pan over medium heat. Cook the onion and garlic, stirring occasionally, until softened, about 5 minutes. Add the sausage and cook, stirring, until lightly browned, about 3 minutes. Add the rice, salt, black pepper, and 3 cups stock; bring to a boil. Reduce the heat to medium-low, and cook, stirring occasionally, until the rice is almost tender, about 30 minutes. Stir in the cauliflower; cover and cook until the cauliflower and rice are tender, about 5 minutes.
  • Preheat the broiler to high. In a small bowl, whisk the flour and remaining 1/2 cup stock. Stir the stock mixture into the rice mixture. Increase the heat to medium-high and bring to a boil; cook until the sauce thickens, about 2 minutes.
  • Sprinkle the cheese over the rice mixture. Broil until the cheese melts, 1 to 2 minutes. Garnish with the parsley, if desired.
  • Serving size: about 1 cup

2 tablespoons olive oil
1 lb bulk sweet Italian sausage
1 medium white onion, diced small
4 garlic cloves, minced
1 medium head cauliflower (about 2 pounds, cut in to small florets)
1 (28 ounce) can whole Italian tomatoes (crushed and broken up with your hands)
1 cup chopped Italian parsley, divided
2/3 cup panko breadcrumbs
1/4 cup grated parmesan cheese
salt, pepper to taste

Steps:

  • Preheat oven to 375 degrees Fahrenheit. Heat a large dutch oven on medium high. Add 2 tablespoons of olive oil along with the sausage and onions. Cook, breaking up the sausage as you go, about 10 minutes, adding garlic halfway through. Remove mixture from pan and set aside.
  • Add cauliflower to the reheated pot and brown on both sides, about 2 to 3 minutes, seasoning to taste with salt and freshly ground black pepper.
  • Add the broken up tomatoes with their liquid, along with the cooked sausage mixture. Bring simmer and adjust for seasoning. Mix in half the parsley and spread the mixture in to a 13x9 baking dish.
  • In a small bowl, mix together the panko breadcrumbs, Parmesan cheese, and remaining parsley. Sprinkle the mixture evenly over the top of the sausage and cauliflower and bake until golden brown on top and crispy on top, about 30 minutes. Remove from the oven, let sit for 5 to 10 minutes, then serve.

6 lean turkey sausages (cut into circles)
1/2 sweet onion (diced)
2 cloves garlic (minced)
1 red bell pepper (diced)
1 orange bell pepper (diced)
1 12 oz package of cauliflower rice
1 19 oz can red kidney beans (drained and rinsed)
1 28 oz can diced tomatoes (drained)
2 tbsp cajun seasoning
Salt and pepper (to taste)
Hot sauce (for serving)

Steps:

  • Preheat oven to 425 F.
  • Heat the olive oil over medium high heat and add the sausage bits. Cook just until lightly browned, about 1-2 minutes per side and set aside.
  • Add the onion and garlic and saute for 1-2 minutes or until fragrant and soft.
  • To a lightly greased 13x9" casserole dish, add the cooked sausage, onions, garlic, cauliflower rice (still frozen), bell peppers, kidney beans, diced tomatoes (without the juice), cajun seasoning and a generous pinch of salt and pepper. Mix to combine and break up any cauliflower rice chunks. Press lightly down.
  • Bake for 20 minutes or until the cauliflower rice is tender and hot, and the sausage is cooked through.

I got this recipe from a friend also. I love it because it makes two casseroles. It freezes well or you can give one to a friend. The rice krispies were a pleasant surprise.

1 lb hot sausage, browned
1 lb mild sausage, browned
2 cups cooked rice (or more)
5 cups Rice Krispies
2 (10 ounce) cans cream of celery soup
1/4 cup milk
2 (8 ounce) packages sharp cheddar cheese, grated
4 eggs, beaten

Steps:

  • Brown sausage and onion together; drain.
  • Mix sausage mixture with rice.
  • Layer with Rice Krispies and cheese, dividing between 2 (2 qt.) casserole dishes.
  • Mix together eggs, milk and soup and spoon over tops of csseroles.
  • Bake at 350 degrees for 40 minutes.

1 (16 ounce) package hot pork sausage (such as Jimmy Dean®)
1 (12 ounce) package frozen riced cauliflower
1 red bell pepper, diced
½ sweet onion, diced
12 large eggs
¼ cup milk
½ cup shredded Cheddar cheese, divided
1 pinch salt and ground black pepper to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish with cooking spray or butter.
  • Heat a large skillet over medium-high heat. Cook and stir sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Reserve grease in the pan; place sausage into the prepared dish.
  • Cook and stir cauliflower rice in the bacon grease over medium heat, actively stirring, until most of the moisture has been removed, 3 to 4 minutes. Place cauliflower in the casserole dish; mix in bell pepper and onion.

I had a half a pound of smoked sausage and didn't want to just fry and serve it up. I did a bit of " Freezer Diving " ;) and found a bag of cauliflower. So, I combined that with the smoked sausage, a few extras, and a cheese sauce and this is what I came up with. :)If you wanted to, you can cook about 1/8th. to 1/4th cup of finely chopped onion with the sausage. And to make this a One- Dish meal, just add some frozen peas. I want to thank Chef#64642 ( Molly53 ) and Chef#546010 ( Chicagoland du Jour ) for coming up with the name for this recipe.I know that this looks complicated, but it's really easy to make.Submitted to Food.com ( a.k.a.   • Remove from heat and add 1 cup of cheese, salt and pepper and stir until well blended.

1 butternut squash
3 cups chicken broth
1 cup water
1 tablespoon chopped fresh sage or 1 teaspoon dried rubbed sage
2 teaspoons olive oil, divided
1 lb mild sausage, crumbled or sliced (I prefer Aidell's brand chicken and apple sausage)
1 cup diced onion
1 small sweet apple, diced (gala, pink lady, or golden delicious, for example)
2 garlic cloves, minced
1 cup uncooked arborio rice or 1 cup other short-grain rice
1/4 cup dry white wine
1 teaspoon chopped fresh thyme
cooking spray
1/2 cup grated fresh parmesan cheese

Steps:

  • Preheat oven to 350 degrees.
  • Place squash on a baking sheet and bake for 30 minutes or until tender. After allowing squash to cool, cut it in half lengthwise, seed, quarter and peel it. Then cut it into 1/2-inch cubes and set aside.
  • Increase oven temperature to 400 degrees.
  • In a medium saucepan over low heat, bring broth, water, and sage to a simmer without allowing it to come to a boil.
  • In a large nonstick skillet or wok, heat 1 teaspoon of the olive oil over medium-high heat and brown the sausage; set aside.
  • In the same skillet, saute onion in remaining olive oil over medium-high heat until tender.
  • Add the apple and garlic, and saute for two minutes.
  • Add the rice, and saute for an additional minute.
  • Stir in the sausage, squash, broth mixture, wine, chopped thyme, salt, and pepper, and cook for 5 minutes, stirring occasionally.
  • Place the casserole mixture in a 13 x 9-inch baking dish coated with cooking spray.
  • Bake at 400 degrees for 30 minutes.
  • Remove casserole from oven, stir mixture gently, and sprinkle with cheese.
  • Return to oven and bake for an additional five minutes, or until cheese is melted and bubbly.
  • Allow to cool for ten minutes before serving.
