Steps:

  • Combine all ingredients and mix thoroughly.
  • Press lightly into a greased ring mold.
  • Bake 1 hour at 350F degrees.
  • Cool about 15 minutes and then invert onto plate to serve.

2 lbs pork sausage, any flavor
1 1/2 cups cracker crumbs
2 eggs, slightly beaten
1/2 cup milk
1/4 cup minced onion
1 cup finely chopped apple
8 -10 eggs
1 1/2 cups shredded cheddar cheese
2 tablespoons parsley
salt and pepper
paprika

Steps:

  • Combine the sausage, cracker crumbs, 2 eggs, milk, onion, and apple and mix thoroughly.
  • Press sausage mixture lightly into a greased ring mold. Unmold into a shallow baking pan.
  • Bake at 350 degrees for 1 hour.
  • 10 minutes before sausage is done, scramble the 8-10 eggs with the cheese and parsley.
  • Remove the sausage ring from the oven and place on a serving dish. Fill center of ring with scrambled eggs and sprinkle with paprika.

I came across this hearty breakfast when we were on vacation in Tennessee, and I adapted the recipe to our tastes. Now it's one of our most favorite breakfasts-especially when we have overnight guests. My husband and I are busy with our own construction company. So I appreciate recipes like this that can be made up in advance and frozen. It's quick and easy to thaw this breakfast ring overnight and then cook it in the microwave while preparing the eggs to be placed in the center.

2 large eggs, lightly beaten
1-1/2 cups crushed butter-flavored crackers
1 cup shredded peeled apple

  • Line a 2-1/2-qt. ring mold with plastic wrap or waxed paper. Combine all ingredients; mix well and press firmly into mold. 1 lb pork sausage
18 ounces refrigerated buttermilk biscuits
2 cups monterey jack cheese (shredded)
6 eggs

Steps:

  • Cook sausage and eggs together and set aside. Flatten each biscuit into 3 inch circles. Grease the bottom and up the sides of a tube pan. Put half of the biscuits on the bottom and 2 inches up the sides of the pan. Spoon sausage and eggs evenly on top of biscuits in the pan, then sprinkle shredded cheese evenly over sausage and eggs. Top with remaining biscuits.
  • Cook in oven at 350°F for 45 minutes or until biscuits are golden brown.
  • Let cool for 10 minutes before inverting pan onto a serving plate. Serve with sausage gravy.

1 (8 ounce) package wide egg noodles
1 ½ pounds sweet Italian sausage, sliced
¾ cup white sugar
1 teaspoon ground cinnamon
2 tablespoons butter, melted
4 apples - peeled, cored, and thinly sliced
2 tablespoons butter, cut into pieces

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C).
  • Fill a large pot with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the egg noodles, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 5 minutes. Drain well in a colander set in the sink.
  • Place a large skillet over medium-high heat; cook the sausages until completely cooked, 5 to 7 minutes.
  • Stir together the sugar and cinnamon in a small bowl.
  • Pour the melted butter into the bottom of a 9x13 inch baking dish; layer half of the cooked egg noodles into the bottom of the dish; top with half of the sausage slices and half of the apple slices; sprinkle about half of the cinnamon-sugar mix over the dish. Repeat layers with remaining noodles, sausage, apples, and cinnamon-sugar. Dot with the butter pieces.
  • Bake in the preheated oven until the apples are soft, 30 to 45 minutes.
