This recipe is from the package of Liptons Onion Soup, though I have written it in my own words with some tune ups for clarity. The children really like it, though I prefer it using the hot italian sausage rather than the sweet.

1 lb Italian sausage (hot or sweet)
4 medium potatoes
1 package dry onion soup mix
2 cups water

Steps:

  • Cook sausage in a little bit of water until just done.
  • Cook off water, or pour out of pan and pan fry sausage until well browned.
  • Wash potatoes (or peel if desired) and cut into bite sized chunks.
  • Remove sausage from pan.
  • Mix soup mix with water and use to deglaze the pan.
  • Add potatoes.
  • Bring to a boil, cover, then simmer for about 10-15 minutes , until potatoes are done.
  • Cut Sausage into disks about 1/2 inch to and inch thick.
  • Add to pan and stir well.
  • Simmer, with the cover off until sausages are heated through and the liquid is slightly thick.
  • Serve with crisp green salad and saute'd onions and peppers with crusty italian bread.

This is an Italian comfort food classic! The smell of this cooking in my kitchen transports me back to playing on the street in front of my Papa and Gigi's house in Brooklyn. I make 2 trays of this for every family get-together, and it's gone in a flash!

2 teaspoons olive oil
2 pounds Italian sausage links, cut into 2-inch pieces
¼ cup olive oil
4 large potatoes, peeled and thickly sliced
2 large green bell peppers, seeded and cut into wedges
2 large red bell peppers, seeded and cut into wedges
3 large onions, cut into wedges
½ cup white wine
½ cup chicken stock
1 teaspoon Italian seasoning
salt and pepper to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Heat 2 teaspoons olive oil in a large skillet over medium heat, and cook and stir the sausage until browned. Transfer the cooked sausage to a large baking dish.
  • Pour 1/4 cup of olive oil into the skillet, and cook the potatoes, stirring occasionally, until browned, about 10 minutes. Place the potatoes into the baking dish, leaving some oil in the skillet.
  • Cook and stir the green and red peppers and onions in the hot skillet until they are beginning to soften, about 5 minutes. Add the vegetables to the baking dish.
  • Pour wine and chicken stock over the vegetables and sausage, and sprinkle with Italian seasoning, salt, and pepper. Gently stir the sausage, potatoes, and vegetables together.
  • Bake in the preheated oven until hot and bubbling, 20 to 25 minutes. Serve hot.

4 russet potatoes, washed and scrubbed
1 cup leftover apple sauerkraut from the Turkey Sausage with Apple Sauerkraut recipe
2 leftover cooked sausages from the Turkey Sausage with Apple Sauerkraut recipe, finely chopped
1/2 cup shredded Cheddar

Steps:

  • Preheat the oven to 350 degrees F.
  • Using a paring knife, poke 3 small slits into each potato. Bake in the oven for 1 hour and 15 minutes. Remove the potatoes from the oven and turn the oven temperature up to 425 degrees F. Let the potatoes cool for 5 minutes.
  • Using a fork punch some holes in the top of each potato. Press inward on the ends of each potato so that the tops break open. Divide the apple sauerkraut evenly between the potatoes and then top them with the sausage and Cheddar. Arrange the potatoes on a sheet pan and bake until the cheese is melted, about 5 minutes. Remove from the oven to a serving platter and serve.

1 lb of smoked turkey sausage, cut into rounds
1 large onion, peeled and chopped
3 medium potatoes russet
1 tablespoon olive oil
1/2 teaspoon fine sea salt
1/2 teaspoon freshly ground black pepper
1 teaspoon sweet paprika

Steps:

  • Preheat the oven to 400*F.
  • Line a large baking sheet with tin foil, and spray with cooking spray. Set aside.
  • Cut sausage into rounds. Chop the onions and potatoes the same size. This helps with cooking time.
  • Add the sausage rounds, onions, and potatoes into a large bowl. Drizzle with a tablespoon of olive oil and season with salt, pepper, and paprika. Toss together with your hands until everything is evenly distributed. Pour this out onto the sheet pan and spread out the sausage and potatoes.
  • Place into the heated oven and roast for 45 minutes to an hour, stirring every 15 minutes or so, until the potatoes are golden brown and tender. Turn off the oven.
  • Makes 8 servings, divide into 8 equal servings

3 large baking potatoes, peeled and thinly sliced
ground black pepper to taste
1 cup shredded Cheddar cheese
1 pound Polish kielbasa
½ teaspoon dried dill weed
¼ teaspoon caraway seed
⅔ cup milk

Steps:

  • Preheat oven to 375 degrees F (190 degrees C). Using two long sheets of aluminum foil on top of each other, fold one long edge together and open out to make a large sheet of foil. Line a 13x9 pan with the foil, allowing edges to hang outside pan
  • Arrange the sliced potatoes, overlapping slightly, in bottom of pan. Pepper to taste. Top with half of the cheese. Cut sausage in half crosswise and lengthwise and place, cut side down on top. Top with remaining cheese, the dill weed, caraway seed and milk. Seal edges of foil tightly.
  • Bake at 375 degrees F (190 degrees) for 1 hour.

1 small zucchini, cut into 1/4-inch slices

  • In a small saucepan, combine potatoes and enough water to cover; bring to a boil.   • Preheat the oven to 400°F. Line a large baking tray with sides with foil and spray with cooking spray. Put the sausage slices, onions, and potatoes into a large bowl. Drizzle with olive oil and season with salt, pepper, paprika, and dried thyme. Toss together and pour on to the baking tray. Place into the preheated oven and roast for 45 minutes to an hour, stirring half way through, until the potatoes are golden brown and tender. Scatter the cheese over top and put back into the oven a few minutes to melt the cheese.

Easy Italian Sausage and Potato Skillet image

1½ pounds any type potato (Russet, new red, yellow, all purpose, etc.)
2 tablespoons olive oil
1½ pounds Italian sweet sausage, cut into thick slices on the bias
1 pound onion, sliced into thick slices
2 large green peppers, cut into thick strips
¼ cup chicken or vegetable stock
3 tablespoons butter
1 teaspoon seasoned salt
½ teaspoon garlic powder
½ teaspoon dry oregano
¼ teaspoon paprika

Steps:

  • In a large skillet with a tight fitting lid, fill half full of water.
  • Peel potatoes (if using small new red potatoes, no need to peel) and cut into wedges about the same size as a steak fry. Place in water as you cut. Place pan on stove, and bring to a boil, then cover and lower to a medium boil and boil for five minutes. Potato wedges should still have a good bite. They will be cooked again later. With a strainer, remove to a plate. Discard water.
  • Wipe out the pan and add the olive oil. Heat over medium high and add the sausage pieces. Brown on both sides, then reduce heat and continue to cook and turn until they are cooked through. Remove to a medium bowl.
  • Add onions and peppers and sauté for about 8-10 minutes or until the peppers just start to lose their crunch. Add the stock and stir to loosen up any brown bits from the pan. Pour this mixture in the bowl with the sausages.
  • Add butter to pan and add seasoned salt, garlic powder, oregano and paprika. Place drained partially cooked potatoes in butter mixture and toss lightly to coat both sides then cook until potatoes are browned and cooked through, turning occasionally to brown both sides.
  • Add the sausage, peppers and onions back with the potatoes and stir lightly without breaking up the potatoes and serve.
