This is the stuffing recipe for the turducken. Chicken broth, beer, or water can be used in place of turkey broth.

1 pound pork sausage
16 ounces unseasoned dry bread stuffing mix
2 (8 ounce) cans oyster pieces, liquid reserved
2 cups chopped celery
1 onion, chopped
4 tablespoons butter, melted
1 ½ cups turkey broth
salt and pepper to taste
Creole seasoning to taste

Steps:

  • Place sausage in a large, deep skillet. Cook and crumble over medium high heat until evenly brown.
  • In a large bowl combine the dry bread stuffing with the sausage and pan juices. Stir in the oyster pieces and liquid, chopped celery, chopped onion, and butter.
  • Add the broth/liquid a little at a time until the dressing is moist but not soggy. Season to taste with salt, pepper and Creole seasoning. Refrigerate until cold and stuff in turducken.

1 envelope onion soup mix
2 cups boiling water
1/2 cup butter, cubed
10 cups cubed day-old bread, toasted
1 can (8 ounces) whole oysters, drained
1/2 pound bulk pork sausage, cooked and drained
1/2 cup minced fresh parsley
3/4 teaspoon poultry seasoning

Steps:

  • Preheat oven to 375°. Place soup mix in a bowl; add boiling water and let stand for 5 minutes. In a Dutch oven, melt butter. Stir in bread cubes and onion soup mixture. Cover and cook over low heat for 5 minutes, stirring occasionally. Gently stir in the oysters, sausage, parsley and poultry seasoning. , Transfer to a large greased cast-iron skillet or 2-1/2-qt. baking dish. Cover and bake until heated through, 40-50 minutes.

1 (16 ounce) package bulk mild pork sausage (such as Jimmy Dean®)
1 (16 ounce) package bulk hot pork sausage (such as Jimmy Dean®)
1 (16 ounce) package plain croutons
1 pint shucked oysters, drained with liquid reserved
2 cups diced celery
2 eggs, beaten
¼ cup chopped onion
1 ½ cups chicken broth, or as needed
½ cup butter, melted

Steps:

  • Preheat oven to 325 degrees F (165 degrees C). Grease a 9x13-inch baking dish.
  • Place the pork sausage in a skillet over medium heat, and brown the sausage, breaking it up into crumbles as it cooks, until the sausage is thoroughly mixed together and no longer pink, about 10 minutes. Drain grease, and transfer the sausage to a large bowl. Mix in the croutons, oysters, celery, eggs, and onion until thoroughly combined. Mix together the reserved oyster liquid and enough chicken broth to total 2 cups in a bowl, and pour into the dressing; stir in the butter. Transfer the dressing into the prepared baking dish.
  • Bake in the preheated oven until hot, browned, and the oysters are cooked, about 30 minutes.

8 cups 1/2-inch cubes Cornbread, recipe follows
4 cups 1/2-inch cubes Italian bread
1 pound breakfast sausage, crumbled
4 large stalks celery, diced (about 2 cups)
2 medium yellow onions, diced (about 4 cups)
1 tablespoon fresh sage leaves, chopped (about 5 large leaves)
1 tablespoon fresh thyme leaves, chopped (about 7 sprigs)
1/2 teaspoon crushed red pepper flakes
1/4 teaspoon freshly grated nutmeg
2 cloves garlic, minced (about 3 teaspoons)
3/4 cup white wine
3 cups turkey or chicken broth, warmed
24 oysters, shucked, drained, oyster liquor reserved
2 large eggs, beaten
1 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 cup yellow cornmeal
1 cup all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon baking soda
1 cup buttermilk
4 tablespoons unsalted butter, melted
2 large eggs, lightly beaten

Steps:

  • Preheat the oven to 300 degrees F. Butter a 3-quart baking dish. Put cubed Cornbread and Italian bread on 2 separate rimmed baking sheets and bake until very dry, about 20 minutes. Let cool and combine in a large bowl. Increase the oven temperature to 375 degrees F.
  • Meanwhile, cook the sausage in a large skillet over medium heat until nicely browned and the fat has rendered out, 15 to 18 minutes. Transfer the sausage to a paper-towel-lined plate using a slotted spoon. Pour off all but 1 tablespoon of the sausage fat.
  • Melt 4 tablespoons of the butter in the skillet with the sausage fat. Add the celery and onions and cook, stirring occasionally, until the vegetables are softened, 8 minutes. Stir in the sage, thyme, red pepper flakes, nutmeg and garlic and continue cooking and stirring until the herbs are fragrant, 2 minutes. Pour in the white wine, bring to a simmer, and cook until the liquid is almost completely absorbed, 5 minutes. Remove from the heat.
  • Melt the remaining 4 tablespoons butter and add to the bread cubes along with the sausage, vegetables, turkey broth, oysters, oyster liquor and eggs. Season with the salt and black pepper and toss to coat.
  • Spread the dressing mixture into the baking dish and bake, covered with foil, 25 minutes. Remove the foil and continue baking uncovered until well browned and crusty, about 30 minutes longer.
  • Preheat the oven to 450 degrees F. Place a large 12-inch cast-iron skillet into the oven.
  • In a medium bowl, whisk together the cornmeal, flour, sugar, baking powder, salt and baking soda. Combine the buttermilk, 2 tablespoons of the melted butter and the eggs in a spouted measuring cup. Whisk the buttermilk mixture into the cornmeal mixture until just combined.
  • Carefully remove the cast-iron skillet from the oven and pour in the remaining 2 tablespoons melted butter. Pour the cornbread batter into the skillet and spread evenly. Bake until the top is browned and a toothpick inserted into the center comes out clean, 20 minutes. Let the cornbread cool in pan for 10 minutes before turning out onto a cooling rack.

This is my own creation, tho I am sure that there are hundreds out there just like it. Please use 1/2 box (one bag) Mrs. Cubbisons Seasoned Cornbread Stuffing Mix, and Jimmy Dean Bold Sausage. This recipe is very easy to double.

6 ounces seasoned stuffing mix (1/2 box, Mrs. Cubbison's Seasoned Cornbread preferred)
1/2 cup celery, chopped
1/2 cup onion, chopped
1/2 cup butter
6 ounces mushrooms, sliced
6 ounces sausage (Jimmy Dean Bold Country Sausage preferred)
1 (8 ounce) jar oysters, with part of the juice
1 -2 cup chicken broth

Steps:

  • Melt butter in skillet, add celery and onion and mushrooms. Sauté till crisp/tender.
  • Meanwhile, break sausage into pieces and brown in a separate skillet over med heat.
  • Put Stuffing mix into a large bowl.
  • Add the celery, onion and sausage.
  • Chop oysters and add. Add as much of the juice as you like.
  • Moisten with chicken broth, add more or less according to your liking.
  • Put in buttered loaf pan and bake for about 25 min at 350°F.

1 sprig sage plus 1 tablespoon thinly sliced sage leaves
1 sprig rosemary
1 pound breakfast sausage, casings removed
1/4 cup (1/2 stick) unsalted butter
2 medium onions, finely chopped
1 1/2 cups finely chopped celery
1/4 cup finely chopped flat-leaf parsley
2 tablespoons finely chopped fresh thyme
Kosher salt, freshly ground pepper
4 dozen small shucked oysters in their liquor (about 1 cup liquor)
4 large eggs, whisked
12 cups savory (not sweet) cornbread cut into 3/4" cubes, stale or toasted in a 300° oven until dry

Steps:

  • Preheat oven to 350°. Combine broth, sage sprig, and rosemary sprig in a small saucepan; bring to a boil. Remove pan from heat and let stock steep until ready to use.
  • Meanwhile, heat a large skillet over medium heat and cook sausage, breaking it up with a spoon, until cooked through, 7-8 minutes. Using a slotted spoon, transfer sausage to a large bowl, leaving any rendered fat in pan.
  • Melt butter in skillet; add onions and celery and cook until softened, about 10 minutes. Add onion mixture, sliced sage, parsley, and thyme to bowl with sausage. Mix well; season with salt and pepper. Add oysters with liquor, reserved broth (sprigs removed), and eggs; toss to combine. Add cornbread; toss until well blended and cornbread absorbs most of liquid.
  • Spoon stuffing into a 3-quart baking dish. If any liquid remains in bowl, drizzle 1/4 to 1/2 cup over to moisten cornbread (amount varies depending on dryness of cornbread). Bake until browned and liquid is absorbed, 1 hour-1 hour 15 minutes, tenting with foil if top gets too dark.

Here, raw chopped oysters are mixed with toasted unsweetened cornbread, sausage, and aromatic vegetables and herbs. The oysters add a wonderful savory flavor and subtle brininess.

1 recipe Southern-Style Unsweetened Cornbread (about 2 1/2 pounds; 1 1/4 kilograms), cut into 3/4-inch dice
1 stick unsalted butter (113 grams), plus more for greasing dish
1 pound (500 grams) sweet Italian sausage, removed from casing
1 large onion, finely chopped (about 2 cups; 300 grams)
2 large stalks celery, finely chopped (about 1 cup; 200 grams)
1/2 medium fennel bulb, finely chopped (about 1 cup; 200 grams)
2 medium cloves garlic, minced (about 2 teaspoons; 10 grams)
1 teaspoon minced fresh thyme leaves
3 cups homemade chicken stock or low-sodium broth (700 milliliters), divided
4 large eggs
2 tablespoons minced fresh tarragon leaves
1/4 cup minced flat-leaf parsley leaves (about 1/4 ounce; 8 grams), divided
2 cups raw oysters and their liquor (470 milliliters; about 32 medium oysters), oysters chopped (see note)

Steps:

  • Adjust oven racks to lower-middle and upper-middle positions. Preheat oven to 425°F (220°C). Spread cornbread evenly over 2 rimmed baking sheets. Stagger sheets on oven racks and bake until lightly toasted, about 10 minutes. Remove from oven and allow to cool.
  • In a large Dutch oven, melt butter over medium-high heat until foaming subsides, about 2 minutes, without allowing butter to brown. Add sausage and mash with stiff whisk or potato masher to break up into fine pieces (largest pieces should be no bigger than 1/4 inch). Cook, stirring frequently, until only a few bits of pink remain, about 8 minutes. Add onion, celery, fennel, garlic, and thyme and cook, stirring frequently, until vegetables are softened, about 10 minutes. Remove from heat and add half of chicken stock.
  • Transfer dressing to a buttered 9- by 13-inch rectangular baking dish or 10- by 14-inch oval dish. The dressing can be covered with aluminum foil and refrigerated for up to 2 days at this point (the flavor will improve as it sits). When ready to bake, preheat oven to 375°F (190°C). Uncover dressing and bake until an instant-read thermometer reads 150°F (66°C) when inserted into center of dish and dressing is crisped on top, about 45 minutes. Remove from oven, let cool for 5 minutes, sprinkle with remaining parsley, and serve.

Steps:

  • Cook and drain sausage. (When using oysters, add them without cooking.) Melt 1 stick of the butter in a pan. Add the onion and celery saute until tender. Add seasonings and parsley. Cook another 5 minutes.
  • Meanwhile have the kids or other adults break the loaves of bread into pieces and place in an extra large bowl. Add the cooked butter and vegetables. Add the sausage or oysters, eggs, and water. Mix together. Stuffing should be moist but not soggy. If not add more water a tsp. at a time.
  • Place the stuffing in a large buttered casserole dish. Add the other stick of melted butter to the top. Bake at 350°F for 20 minutes.
