Steps:
- Cook rigatoni according to package directions., Meanwhile, in a large skillet, cook sausage over medium heat 4-6 minutes or until no longer pink, breaking into crumbles; drain and remove sausage from pan., In same skillet, heat butter over medium heat. Add mushrooms, garlic, salt and pepper; cook, covered, 4 minutes, stirring occasionally. Uncover; cook and stir 2-3 minutes or until mushrooms are tender and liquid is evaporated., Stir in cream; bring to a boil. Reduce heat; cook, uncovered, 8-10 minutes or until slightly thickened. Return sausage to skillet; heat through. Drain pasta; serve with sauce. If desired, sprinkle with parsley.

MUSHROOM & SAUSAGE PASTA

- Dry-fry the sausage meat in a non-stick pan for 8-10 mins until browned, breaking it up with a wooden spoon, then remove and set aside. Fry bacon and mushrooms for 5-8 mins until golden, return the sausage meat and keep warm.
- Cook the pasta following pack instructions. Make the sauce by beating together the Parmesan, egg yolks, most of the parsley and the crème fraîche. When the pasta is cooked, drain, reserving a ladle of the cooking water.
- Combine the pasta and meat mixture over a low heat and add the sauce. Season and quickly mix, adding a splash of cooking water if it's a little thick. Spoon into bowls and eat with the extra Parmesan shavings and remaining parsley on top.

SAUSAGE-AND-MUSHROOM PASTA BAKE
Steps:
- Heat oven to 375°F.
- Remove and discard casings from sausage if necessary; crumble into large skillet. Cook on medium heat until evenly browned, stirring frequently. Remove sausage from skillet with slotted spoon; set aside.
- Add mushrooms to reserved drippings in skillet; cook 3 to 4 min. or until mushrooms are lightly browned, stirring frequently. Remove from heat. Add pasta, pasta sauce, sausage and 1/2 cup cheese; mix lightly.
- Spoon into 8-inch square baking dish sprayed with cooking spray; top with remaining cheese.
- Combine bread crumbs and oil; sprinkle over pasta mixture.
- Bake 20 min. or until heated through.

- Cook the pasta according to pack instructions, then drain. Heat oven to 200C/fan 180C/gas 6, then melt a little butter in a large saucepan. Fry the mushrooms for a couple of mins, then scoop out and set aside. Use some kitchen paper to wipe out the pan.
- Melt the remaining butter in the pan, then add most of the onions and soften for 1 min. Stir in the flour for another min, then gradually stir in the milk until you have a lump-free sauce. Increase the heat and bubble the sauce, stirring for a few mins to thicken. Turn off the heat, stir in the ham and most of the cheese, then season to taste.
- Tip the pasta and mushrooms into a large ovenproof dish, then pour over the sauce and mix well in the dish. Scatter over the remaining cheese and spring onions, then bake for 10 mins until golden.

Steps:
- Saute sausage in heavy large pot over medium-high heat until brown, about 12 minutes.
- Using slotted spoon, transfer sausage to large bowl.
- Add oil to drippings in pot.
- Add mushrooms and onions; saute until tender and brown, about 15 minutes.
- Stir in 1 cup chopped basil, oregano, and garlic; sauté 1 minute.
- Add wine; cook until almost absorbed, about 4 minutes.
- Add sausage and crushed tomatoes; cover and simmer over medium heat until thickened, about 25 minutes.
- Add diced tomatoes and butter; simmer until tomatoes are soft, stirring frequently, about 15 minutes.
- Season with salt and pepper.
- (Can be made 1 day ahead. Cool slightly. Chill uncovered until cold, then cover and refrigerate. Bring to simmer before continuing.).
- Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally.
- Drain well; return to pot.
- Pour sauce over pasta; toss to coat.
- Add 1/2 cup cheese and 1/2 cup basil; toss to combine.
- Season with salt and pepper.
- Transfer pasta to serving dish.
- Serve, passing remaining cheese separately.

- Heat the oven to 200C/180 fan/gas 6. Whisk together the vinegar and half the olive oil. Put the squash in a roasting tin and toss with the dressing, the chilli and seasoning. Squeeze the sausagemeat out of the skins, roll into small meatballs (you should have about 35). Arrange around the squash and roast for 35-40 mins, turning halfway, until the squash is tender and the meatballs are caramelised.
- Meanwhile, melt the butter in a saucepan over a medium heat, until bubbling. Add the sage and allow to sizzle for a few minutes, or until crisp. Remove using a slotted spoon and set aside on a plate lined with kitchen paper. By this point, the butter should have browned. Stir in the flour and cook for a few seconds, then gradually pour in the milk, whisking continuously until you have a smooth sauce, about 7-10 mins. Add the nutmeg and some seasoning, stir in the parmesan until melted, then stir in the mustard.
- Oil a medium-sized baking dish. Cook the pasta following pack instructions until al dente, then drain and run under cold running water. Heat the remaining oil in a pan over a medium heat and fry the mushrooms with a pinch of salt for a few minutes, until softened and caramelised. Add the garlic, then the greens, stirring until the greens wilt, then add to the white sauce along with the squash, pasta and half the fried sage, adding up to 50ml milk or water if it's too thick.
- Pour into the baking dish, then add the meatballs. Scatter over the remaining sage, the reserved squash seeds, and grate over the extra parmesan. Roast for 25-30 mins, until golden and bubbling. Allow to settle for 10 mins before serving.
