FAST FIX MICROWAVE MEATBALLS
I cannot remember where I found this recipe, but I am glad I did. Any cream soup can be used, but I prefer the Cheddar. It is very nice over buttered orzo.

Steps:
- Combine meat, onion, salt, pepper, bread crumbs,and egg.
- Shape into small meatballs.
- In a 11x7 inch glass dish melt the butter in the microwave: approximately 30- 45 seconds.
- Add the meatballs.
- Cook 4 minutes, turning after 2 minutes to cook evenly.
- Blend the soup, milk and parsley; pour over meatballs.
- Cover with waxed paper.
- Cook for an additional 5 minutes.
- Stir.
- Cook an another 5 minutes, then stir again.
- Let stand 5 minutes covered.
- Serve and enjoy!

Steps:
- Mix ground meat, bread crumbs, water, basil, oregano, parsley, garlic powder, and egg.
- Form mixture into about 15 meatballs.
- Put meatballs in a microwave safe baking dish.
- Cover with spaghetti sauce and parmesan cheese.
- Cover dish with plastic wrap and microwave at 70% power for 12 minutes.
- Uncover; add Mozzarella cheese.
- Microwave at 70% power for 1 to 1-1/2 minutes or until the cheese is melted.

- In a large bowl, combine the eggs, bread crumbs, salt and pepper. Crumble beef over mixture and mix well. Shape into 1-in. balls. , Place on a greased rack in a shallow baking pan. SAUCY MEATBALLS
This is one of my adopted Zaar recipes. I suggest using Basic Meatballs recipe #8060 for the meatballs listed in this recipe as it is almost identical to the recipe that I use. I would also suggest serving this over noodles with a salad and crusty rolls for an easy no-fuss meal that will come together quickly.

- Prepare the Basic Meatball recipe.
- Combine the cooked meatballs, soup, milk, and nutmeg in a large skillet; heat to boiling, stirring occasionally.
- Reduce the heat; cover and simmer for 15 minutes.

- Preheat the oven to 350 degrees F (175 degrees C).
- In a medium bowl, gently mix by hand the ground beef, bread crumbs, Italian seasoning, garlic, parsley, Parmesan cheese, and egg. Shape into 12 meatballs, and place in a baking dish.
- Bake for 15 to 20 minutes in the preheated oven, or until cooked through. Meanwhile, cut the baguette in half lengthwise, and remove some of the bread from the inside to make a well for the meatballs. Brush with olive oil, and season with garlic powder and salt. Slip the baguette into the oven during the last 5 minutes of the meatball's time, or until lightly toasted.
- While the bread toasts, warm the spaghetti sauce in a saucepan over medium heat. When the meatballs are done, use a slotted spoon to transfer them to the sauce. Spoon onto the baguette and top with slices of provolone cheese. Return to the oven for 2 to 3 minutes to melt the cheese. Cool slightly, cut into servings, and enjoy!

SAUCY PARTY MEATBALLS
This party dish is embarrassingly simple to make, but guests love them! I invented this "recipe" years ago after tasting similar meatballs at my friend Pam's Christmas party. She shared her "secret" ingredient - grape jelly - and let me guess the rest.

- In a crock pot, mix ketchup, mustard, jelly, and brown sugar. Cover, heat on high, stirring occasionally, until the jelly is melted. Then, reduce heat to low or simmer. Taste the sauce, and adjust the sweetness to your liking using additional mustard and/or brown sugar.
- While the jelly melts, bake the bite-size meatballs according to the package directions.
- When the jelly is melted and the meatballs done, mix the meatballs into the crock pot of sauce. Be careful not to transfer excess grease to the sauce.
- Cover, let the meatballs simmer, with occasional stirring, for at least 2 hours before your guests arrive.
