Tuscan Chicken with White Beans and Kale image

Provided by Karen Tedesco

Categories     Chicken

Time 40m

Number Of Ingredients 11

2 pounds boneless, skinless chicken thighs
Kosher salt and fresh ground black pepper
Extra virgin olive oil
½ red onion (thinly sliced)
2 garlic cloves (grated on a Microplane or finely chopped)
3 cups homemade marinara or 1 24-ounce jar prepared sauce
1 15-ounce can white beans (cannellini) (drained)
1 tablespoon chopped fresh rosemary
4 cups Tuscan lacinato or curly kale, torn into pieces
2 thick slices crusty sourdough bread (toasted)
¼ cup freshly grated Parmigiano cheese

Steps:

  • Pat the chicken dry with a paper towel. Season evenly on both sides with salt and pepper.
  • Put 2 tablespoons of the olive oil in a large, deep skillet (12-inches) and place over medium-high heat. When the oil starts to shimmer, add the chicken and cook without disturbing 6-8 minutes, or until it takes on a golden-brown color.
  • Flip the chicken over and add the onion and garlic to the pan, stirring to coat with the pan juices. Cook 2 or 3 minutes, until the onion softens.
  • Add the sauce, beans, rosemary and 1/2 teaspoon salt to the pan, scraping up any browned bits from the bottom of the pan. Cover and reduce the heat to medium-low. Cook 10 minutes.
  • Uncover the pan and continue to simmer 10 more minutes to thicken the sauce.
  • Drizzle the bread with olive oil and cut into 1/2-inch cubes.
  • Remove the chicken from the heat and stir in the kale until it wilts. Serve in shallow bowls topped with some of the bread and sprinkled with the cheese.

Tuscan Chicken White Bean Skillet

Provided by Rachel Maser - CleanFoodCrush

Categories     Dinner

Number Of Ingredients 11

4 (6-oz.) skinless, boneless chicken breast halves
1 medium yellow onion, finely chopped
3 Tbsps chopped fresh thyme, divided
4 fresh garlic cloves, minced
1/3 cup dry white wine
1 cup low sodium chicken bone broth
2 (15-oz.) cans cannellini white beans, rinsed and drained
12 ounces baby spinach or chopped kale leaves
1 (15-oz.) jar diced tomatoes with juices
2 Tbsps olive oil, divided
sea salt and freshly grounded black pepper, to taste, about 1/4 teaspoon each

Steps:

  • Season your chicken with sea salt and pepper to taste; set aside.
  • Heat a tablespoon of oil in a large skillet over medium-high heat.
  • Place your seasoned chicken breasts into the hot oil and sear each side until nicely browned, about 4 minutes on each side.
  • Add in your onions, half of the fresh thyme, and then the garlic and cook until fragrant, just a few minutes.
  • Pour in the wine and simmer until reduced, about 2-3 minutes.
  • Next pour in the stock, cover and reduce the heat to LOW. Allow the chicken to simmer in this sauce until cooked through and no longer pink in the inside, about 10 minutes.
  • Remove chicken from the skillet and set aside.
  • Add in the beans and diced tomatoes, then simmer uncovered, stirring occasionally for about 5 minutes.
  • Stir in spinach/kale, and cook until just wilted.
  • Sometimes I use a potato masher, and mash just a bit of the beans to create a thicker, creamier sauce at this point. This step is completely optional.
  • Season with sea salt and pepper to your taste, then return chicken back into the sauce and continue to simmer for a couple of minutes, until just heated through and bubbly.
  • Garnish with remaining fresh thyme and serve immediately.
  • Place leftovers in glass meal prep containers in your fridge, and use within 3-4 days.

SKILLET CHICKEN WITH WHITE BEANS AND CARAMELIZED LEMON

Skillet Chicken With White Beans and Caramelized Lemon image

One of the best parts of cooking skin-on chicken in a skillet, aside from the obvious (crispy skin), is the delicious fat left behind. To maximize the amount of fat yielded, be sure to cook the chicken on the medium side of medium-high heat, which gives the fat plenty of time to render before the skin browns. All this extra time on the stove means you won't have to finish your chicken in the oven. (The only exception are extra-large pieces, which may need a brief stint in a 350-degree oven to completely cook through.) While just about anything is great tossed in this liquid gold, using it to caramelize thick slices of lemon and wedges of shallot takes the dish to an even more complex, savory, tangy place. You can let the seasons or your pantry dictate what gets added next: hearty leafy greens, chunks of summer squash or a simple can of chickpeas or beans are all welcome to the party.

Categories     dinner, weekday, weeknight, poultry, main course

Time 45m

Yield 4 servings

Number Of Ingredients 9

1 lemon, thinly sliced, seeds removed
1 shallot, peeled and cut into thin wedges
Kosher salt and black pepper
2 1/2 pounds bone-in, skin-on chicken thighs or breasts (about 4 to 6)
1 tablespoon canola oil
1 (15-ounce) can small white beans (such as Great Northern, navy or cannellini) or chickpeas, drained and rinsed
1 bunch kale, ribs removed, leaves torn into large pieces
Flaky sea salt
Olive oil, for drizzling

Steps:

  • Toss lemon slices and shallots together in a small bowl and season with salt and pepper; set aside. (This will lightly pickle the shallot and soften the lemon while you cook the chicken.)
  • Season the chicken with salt and pepper. Heat oil in a large skillet over medium heat and add chicken, skin-side down. Using kitchen tongs or a spatula, press the chicken evenly into the skillet so it makes good contact with the hot surface (which will promote browning). Cook, resisting the urge to check too frequently, until the skin is deeply golden brown (think of the color of a well-baked croissant), 5 to 8 minutes, depending on the size of the chicken pieces. At this stage, most of the fat should be rendered and the skin should be crispy. Flip and continue to cook until pieces are cooked through, another 7 to 10 minutes.
  • Using kitchen tongs, transfer chicken to a plate to rest, leaving all the fat behind. Add lemon and shallot to the chicken fat, standing back if you need because it will sizzle. Cook, swirling the skillet, until the lemon has started to caramelize and brown, 3 to 5 minutes. (It'll smell like a mix of lemonade and caramel.)
  • Add the beans to the skillet and season with salt and pepper. Cook, tossing occasionally, until the beans have started to brown a bit and soak up all of that caramelized lemon chicken fat, 3 to 4 minutes. Working in batches, add kale and toss to wilt, seasoning with salt and pepper as you go.
  • Return the chicken to the skillet, along with any juices that have collected on the plate, and cook for a minute or two, just so everything gets to know each other in there.
  • Divide the chicken, beans and kale between plates, making sure to top each serving with a few lemon slices. Sprinkle with flaky salt and a final few turns of pepper, and drizzle with olive oil.

SKILLET CHICKEN THIGHS WITH WHITE WINE-BUTTER SAUCE

Skillet Chicken Thighs with White Wine-Butter Sauce image

The stovetop-to-oven cast-iron skillet technique in this recipe is our go-to for achieving crispy, juicy chicken thighs. If you're tight on time, the chicken is delicious without the butter sauce (simply plate the thighs straight out of the oven). But to truly impart restaurant-worthy flavor, try your hand at the classic white wine and butter sauce known as beurre blanc in French. The recipe makes a plentiful amount of sauce; nestle the chicken into some of it, then spoon more over every other component of your dinner.

Provided by Food Network Kitchen

Categories     main-dish

Time 45m

Yield 4 servings

Number Of Ingredients 10

4 skin-on, bone-in chicken thighs (about 2 pounds)
Kosher salt and coarsely ground black pepper
1/3 cup champagne vinegar
1/3 cup dry white wine
2 shallots, finely chopped
1/2 lemon, juiced
2 bay leaves
1/2 cup heavy cream
1/2 pound (2 sticks) unsalted butter, cubed
1/4 cup chopped chives

Steps:

  • Preheat the oven to 450 degrees F.
  • Pat the chicken dry with paper towels. Sprinkle them on both sides with 1 1/2 teaspoons each salt and pepper.
  • Heat a large oven-proof skillet (preferably cast iron) over medium-high heat. Add the chicken thighs to the skillet skin-side down and cook, moving them around once or twice to ensure even browning, until the skin is very golden brown, 11 to 12 minutes.
  • Turn off the heat. Grasp a wad of paper towels with tongs and mop up excess fat in the bottom of the skillet-this will prevent the grease from spattering all over your oven; carefully discard the paper towel. Repeat several times until there's only a thin film of oil over the bottom of the skillet.
  • Transfer the skillet to the oven and roast until the chicken is almost cooked through, 6 to 8 minutes. Flip the thighs so they are skin side up, then continue roasting until no longer pink near the bone, another 6 minutes. Remove the skillet from the oven and transfer the chicken thighs to a plate, skin side up. Wipe out the skillet and set aside.
  • Meanwhile, start your sauce. Combine the vinegar, wine, shallots, lemon juice and bay leaves in a heavy 2-quart saucepan. Simmer over medium heat until the mixture is reduced to a wet paste, 8 to 10 minutes. Add the cream and continue to simmer until the mixture is reduced to about 2 tablespoons.
  • Reduce the heat to low and remove the bay leaves. Add a few chunks of the butter and whisk constantly until melted, then add a few more chunks and whisk again until melted. Continue adding and whisking the butter, which should melt into a creamy emulsion, until all the butter is incorporated, about 4 minutes. Do not let the sauce go over 130 degrees F or it will separate. If the sauce starts to break, remove from the heat, add 2 ice cubes and whisk until it cools down and comes back together.
  • Season the sauce with 1/2 teaspoon salt and a pinch of pepper. Transfer it to the cast iron skillet, nestle the chicken on top and sprinkle the whole dish with chives. Serve immediately.
