12 chicken drumsticks (about 2 pounds)
4 large cloves garlic, grated
Kosher salt
8 Do-si-dos® or Peanut Butter Sandwich cookies
1/3 cup peanut butter, softened
3 tablespoons low-sodium soy sauce
4 tablespoons fresh lime juice
2 tablespoons red wine vinegar
1 to 1 1/2 tablespoons hot sauce
2 teaspoons garlic powder
1/2 teaspoon red pepper flakes
1 large knob fresh ginger, peeled and grated

Steps:

  • Position an oven rack in the middle of the oven and preheat the oven to 400 degrees F. Line a baking sheet with aluminum foil.
  • Rub the drumsticks with the garlic, season with salt and arrange far from one another on the prepared baking sheet. Bake on the middle rack until the chicken is cooked through (165 degrees F) and the juices run clear, 25 to 30 minutes.
  • In a medium bowl, mix the cookies with 1/2 cup warm water; crush the cookies with the back of a spoon until they form a paste. Whisk in the peanut butter and soy sauce with an additional 1/4 cup warm water if needed. Stir in the lime juice, red wine vinegar, hot sauce, garlic powder, red pepper flakes and ginger. Taste for seasoning.
  • Toss the chicken in the sauce and serve immediately.

2 sticks butter
Juice of 2 to 3 lemons
1/2 teaspoon salt
1 teaspoon black pepper
1 teaspoon cayenne pepper
4 cloves garlic, minced
24 whole chicken legs

Steps:

  • Preheat the oven to 450 degrees F. Line baking sheets with foil.
  • Melt the butter in a saucepan. Add the lemon juice, salt, black pepper, cayenne and garlic, and stir. Set aside.
  • Rinse and pat the chicken legs dry. With metal tongs, dip them one by one into the butter mixture and place on the prepared baking sheets.
  • Once all of the chicken legs are coated and on the baking sheet, take a pastry brush and give them one last coating of the butter mixture.
  • Place them into the oven for 30 to 35 minutes, basting a couple of times during roasting. If they need a bit more color, turn on the broiler for a couple minutes and watch them closely.
  • Remove them when they are nice and golden brown and fully cooked.

6 cloves garlic, crushed
3 tablespoons ginger
1 red chili
3 tablespoons honey
½ cup soy sauce
sesame seed
spring onion

Steps:

  • In a mixing bowl, combine the garlic, ginger, chili, honey, and soy sauce.
  • Mix in the chicken drumsticks.
  • Cover with cling film and leave to marinate in the fridge for 4-6 hours, or overnight.
  • Fry the chicken in a large pan, on all sides for about 10-15 minutes, stirring often to prevent the marinade from burning, until golden brown.
  • Remove from the pan and pour in the marinade.
  • Bring to a boil and stir, until the marinade is thick and resembles a sauce.
  • Throw the chicken back in the pan and fry for a further 5-10 minutes in the sauce, making sure each drumstick is evenly coated and cooked through.
  • Garnish with sesame seeds and spring onions.
  • Enjoy!

4 chicken legs, with thighs
2 tablespoons vegetable oil
1/2 cup onion, chopped
1 (10 ounce) can cream of chicken soup
1 teaspoon paprika
1/2 teaspoon salt
2 tablespoons lemon juice
1/2 teaspoon dried dill
1/2 cup chicken broth
1/2 cup sour cream

Steps:

  • Oven at 350 degrees.
  • Over medium heat, heat oil in large skillet, then brown the chicken on all side. Will take about 15 minutes.
  • Put chicken in one layer in casserole dish.
  • Saute onion in drippings for about 5 minutes, then add the soup, paprika, salt, lemon juice, and dill, and mix them together thoroughly.
  • Reduce heat to low, then stir the broth and sour cream into the skillet mixing well.
  • DO NOT BOIL, but heat the sauce to about serving temperature.
  • Gently pour the sauce over the chicken, actually spooning is best if you are not too lazy, like I am.
  • Cover and bake until chicken is tender, about 20 minutes.

1 (14 ounce) can Italian-style diced tomatoes, undrained. (I look for the one with the lowest sodium)
1 (6 ounce) can tomato paste (same here on the low sodium)
1 medium chopped white onion
1 tablespoon bottled minced garlic (I used 4 cloves through a press)
1 teaspoon dried Italian seasoning
1/4 teaspoon salt
