Unbelievable Fat-Free Cauliflower Soup image

This is a simple, healthy recipe. I couldn't believe that cauliflower and water could be so creamy and flavorful. I added curry powder after pureeing the cauliflower. You could also add chicken boullion to the water and/or fresh herbs.

Number Of Ingredients 5

1 head cauliflower
water
1 -1 1/2 teaspoon salt (or to taste)
1 tablespoon pepper (or to taste)
curry or other spices

Steps:

  • Add cauliflower to food processor and pulse until finely chopped.
  • Transfer to a large pot and cover with water.
  • Boil until cauliflower is completely tender and there are no more floating pieces - about 30 minutes (the time will depend on the size of the cauliflower bits).
  • Take mixture back to food processor and puree until completely smooth. It's important to fully puree the the cauliflower - until it's very creamy.
  • Season with salt and pepper to taste, adding more water if necessary.
  • Serve.

This creamy cauliflower based dip is so delicious you'd never guess it to be low fat! Delicious as a dip for veggies, pita chips, pretzels, etc. It is also fantastic used in wraps and as a sandwich spread. (great flavourful alternative to mayo!) This is also a great way to sneak some veggies to your kids when served with crackers or chips. :)

Number Of Ingredients 5

1/2 head cauliflower, chopped
1 green onion, with top, chopped into 1 inch pieces
3 tablespoons fat free sour cream
2 tablespoons dry ranch dressing mix
salt and pepper, to taste (optional)

Steps:

  • Break cauliflower into florets. In medium saucepan, bring about 2 inches of water to a boil. Add cauliflower, cover and simmer until tender, about 15 minutes. Run under cold water to stop the cooking; drain well.
  • In a food processor, puree cauliflower and green onion until fairly smooth. Scrape down sides, add sour cream and dressing mix. Process until combined. season with salt and pepper, if desired.
  • Remove to serving bowl and refrigerate until chilled.
  • Serve with fresh veggies, crackers, pita chips or anything else you want to dip. :).

1 lb cauliflower floret
4 tomatoes, peeled, seeded and chopped
1/2 teaspoon salt (or to taste)
1/4 teaspoon pepper
2 tablespoons parmesan cheese, grated
1/4 cup swiss cheese, shredded
1/4 cup dry breadcrumbs
2 teaspoons unsalted butter, melted

Steps:

  • Preheat oven to 350F.
  • Place cauliflower in a steamer basket over boiling water.
  • Cover saucepan and steam 4-5 minutes or until cauliflower is almost tender.
  • Arrange cauliflower in a buttered shallow baking dish.
  • Arrange tomatoes over cauliflower.
  • Sprinkle with salt and pepper.
  • Combine cheeses in a bowl and sprinkle over cauliflower mixture. Sprinkle with breadcrumbs, drizzle with butter and bake 20-25 minutes or until top is golden.

1 small cauliflower, broken into florets
3 cups water
1 tablespoon salt, to taste
1 cup frozen tiny peas
2 cups plain low-fat yogurt
1 clove garlic, finely minced
1/2 teaspoon ground turmeric
1/2 teaspoon ground cumin
1/2 teaspoon fresh ground black pepper
1/8 teaspoon cayenne pepper, to taste

Steps:

  • In a large pot over high heat, bring the water with 2 teaspoons of the salt to a boil.
  • Drop in the cauliflower florets and the frozen tiny peas, return to a boil, and cook for only 2 minutes.
  • Drain in a colander and run under cold water to stop the cooking and cool.
  • Let the vegetables drain in the colander while you prepare the dressing.
  • In a serving bowl, whisk together the remaining ingredients, whisking until the mixture is creamy.
  • Fold in the vegetables gently to coat.
  • Serve immediately or cover with plastic wrap and refrigerate for up to 4 hours, lightly tossing again before serving.

1/2 cup fat free sour cream
2 teaspoons Dijon mustard
1/2 cup fat-free cheddar cheese

Steps:

  • Heat the oven to 375.
  • Use Pam to spray an 8x8 oven dish.
  • Put the cauliflower in the dish.
