INDONESIAN SAMBAL SAUCE

Indonesian Sambal Sauce image

This sauce is really hot, but the sweetness plays off the heat very well. Use as a general condiment like Thai Sriracha sauce.

Provided by profken

Categories     Sauces

Time 25m

Yield 3/4 cup

Number Of Ingredients 7

1/2 cup small dried hot red chili pepper, stemmed and seeded (even better if you can find them bottled in brine instead of dried)
1 small onion, coarsely chopped
2 garlic cloves, coarsely chopped
1/3 cup sugar
1/4 cup lemon juice
1/4 cup water
1 teaspoon salt (omit if you use brined chilies)

Steps:

  • Combine all ingredients in a blender.
  • Blend at high speed until ingredients are well chopped and blended.
  • Pour mixture into a saucepan and bring to a boil, stirring frequently.
  • Reduce heat and simmer, stirring frequently, until sauce is reduced by half, around 10-15 minutes. Sauce should be thick and uniform.
  • Pour into a bowl and cool to room temperature.

MALAYSIAN SAMBAL SAUCE

Malaysian Sambal Sauce image

A popular condiment in Malaysia, Indonesia, and Singapore, sambal is a hot sauce made from chiles, spices, herbs, and aromatics.

Provided by Connie Veneracion

Categories     Sauce     Condiment

Time 45m

Number Of Ingredients 11

5 cloves garlic (crushed)
2-inch piece fresh turmeric (chopped)
2-inch piece galangal (chopped)
1 stalk lemongrass (thinly sliced; use only the bottom 3 inches of the stalk)
1/2 ounce dried chiles (about 10 dried chiles, soaked in hot water for 5 minutes)
2 ounces fresh chiles (about 8 fresh chiles, roughly chopped)
10 shallots (roughly chopped)
5 tablespoons vegetable or canola oil
Fish sauce (to taste)
3 tablespoons palm sugar (or 2 tablespoons brown sugar)
2 tablespoons tamarind paste

Steps:

  • Gather the ingredients.
  • Add the garlic, turmeric, galangal, lemongrass, hydrated dried chiles, fresh chiles, and 2 tablespoons water to a food processor or blender. Pulse, then process, scraping down the bowl frequently with a silicone spatula until a smooth paste forms, 8 to 9 minutes. Add the shallots and pulse, scraping down the bowl occasionally, until the mixture is just combined, and the shallots are still coarse and visible, about 1 minute more.
  • Heat the oil in a wok or medium nonstick frying pan over very low heat. When the oil is moderately hot, add the paste mixture and cook, stirring occasionally, until just fragrant, about 10 minutes.
  • Add the fish sauce, palm sugar, and tamarind paste.
  • Continue to cook the paste on very low heat, stirring occasionally, until the sugar melts and the solids begin to separate from the oil, about 5 minutes. Remove from the heat. Use immediately or let cool, then refrigerate or freeze for future use. Enjoy.

CHICKEN SAMBAL

Chicken Sambal image

Provided by Valerie Bertinelli

Categories     main-dish

Time 1h35m

Yield 4 servings

Number Of Ingredients 20

2 tablespoons unsalted butter
1/2 onion, finely chopped
1 1/2 cups basmati rice (or any long-grain white rice)
1 cup chicken broth
Kosher salt and freshly ground black pepper
2 tablespoons finely chopped fresh cilantro
1/4 cup ponzu sauce or soy sauce
1/4 cup sambal (Asian chili sauce)
1/4 cup light brown sugar
1 tablespoon fish sauce
1 pound bone-in, skin-on chicken breasts (about 2 breasts), halved crosswise
1 pound bone-in, skin-on chicken thighs (about 4 large thighs)
Kosher salt and freshly ground black pepper
1 tablespoon melted coconut oil
1 1/2 cups diced yellow onion (about 1 medium onion)
3 tablespoons minced garlic (3 to 4 cloves)
2 tablespoons minced lemongrass (1 stalk)
1 tablespoon grated galangal (a 1-inch piece) or ginger
One 28-ounce can crushed tomatoes
Lime wedges, chopped scallions and cilantro, for garnish

Steps:

  • For the basmati rice: Melt the butter in a saucepan over medium heat. Add the onions and cook, stirring occasionally, until softened, about 5 minutes. Add the rice and cook, stirring, until well coated, about 1 minute. Add the chicken broth, 1 1/2 cups water, 1/2 teaspoon salt and some pepper. Increase the heat to medium-high and bring to a boil. Cover, reduce the heat to low, and cook until the liquid has been absorbed, about 12 minutes.
  • Remove from the heat and let stand, covered, for 3 minutes. Stir in the cilantro and season with salt and pepper.
  • For the chicken sambal: Whisk together the ponzu, sambal, brown sugar and fish sauce in a small bowl. Set aside.
  • Sprinkle the chicken breasts and thighs liberally with salt and pepper on both sides.
  • Heat the coconut oil in a large Dutch oven over medium-high heat. In two batches, add the chicken, skin-side down, and sear until golden brown, about 6 minutes; flip and sear on the reverse side, another 2 minutes. Transfer the chicken to a plate.
  • Reduce the heat to medium and stir in the onions, garlic, lemongrass and galangal. Saute until the onions have softened and the garlic, lemongrass and galangal are lightly toasted, 5 minutes. Add the crushed tomatoes and the sambal mixture; bring to a boil, then reduce the heat to a simmer. Return the chicken to the pot, skin-side up, and simmer for 20 minutes to finish cooking through.
  • Serve over the rice, garnished with lime wedges, scallions and cilantro.
