Oatmeal Cookies with Sea Salt and Olive Oil image

Take your typical oatmeal cookie to a whole new level. Made with honey and sprinkled with sea salt, these cookies strike the perfect balance of salty and sweet. Makes 24 cookies.

1 large egg
1 tsp. vanilla extract
2 Tbsp. hot water
2 Tbsp. honey
1/2 cup sugar
1/4 cup + 3 Tbsp. Bertolli® Olive Oil Extra Light Taste
1 cup all-purpose flour,
1/2 tsp. cinnamon
1/4 tsp. salt
1 cup rolled oats
1/2 cup almond meal
1/2 tsp. baking soda
2/3 cup chocolate chips
Bertolli® Olive Oil Spray Extra Light Taste
1-2 tsp. coarse sea salt for sprinkling

Steps:

  • 1 Preheat the oven to 325°.
  • 2 In a large bowl, mix the egg, vanilla, water, honey and sugar. While mixer is still on low, slowly pour in olive oil. In a separate bowl, sift the flour, cinnamon, salt, oats, almond flour and baking soda together. Gradually add the dry mixture to the wet mixture and stir until well combined. Lightly mix in the chocolate chips until just incorporated.
  • 3 Prep cookie sheet by spraying with Bertolli Extra Light Tasting Olive Oil. Drop about 2 tablespoons of the dough onto the cookie sheets, leaving at least an inch of space between them. Sprinkle cookies lightly with sea salt before baking. Bake for 12-15 minutes, or until the edges of the cookies start to turn golden brown.

2 cups rolled oats/traditional oatmeal (not quick-cooking or instant)
1 cup all-purpose flour
3/4 cup brown sugar
1 1/4 teaspoons fine sea salt
1/4 teaspoon baking soda
3/4 cup shortening or butter
1/4 cup very hot or boiling water

Steps:

  • Preheat an oven to 375 F. In a large bowl, combine the oats, flour, sugar, salt, and baking soda. Add the shortening or butter and use 2 knives, a large fork, or your fingers to work the fat into the dry ingredients.
  • Pour in the hot water and stir until everything comes together into a thick, sticky dough.
  • You can roll the dough out on a well-floured surface, cut it into shapes, and set them on a large baking sheet. Or keep things simple and simply press the dough into an even 1/4-inch layer on a baking sheet. Score this large "cake" into smaller pieces: Use a knife to cut the dough into squares or rectangles or whatever shapes you like, but don't bother to separate the pieces; the pieces will bake back together but be easy to cut or break along that original cut line.
  • Bake until golden, about 12 minutes. You can take them out now for chewier oatcakes or reduce the oven temperature to 325 F and bake until lightly browned, about 10 more minutes, for crisper oatcakes.
  • When they have finished baking, if you've cut them into shapes, let them cool; if you've scored them, cut them apart while warm so they cool into squares (or rectangles or triangles or whatever you've cut them into).
  • Serve and enjoy.

Epi associate editor Emily Johnson liked her family cookie recipe, but thought it could be even better. So she started making it with butter instead of margarine, increased the salt, and used chopped chocolate instead of chips. This new version has since become her new favorite cookie recipe-and she thinks her family (and yours) will agree.

1 1/2 cups all-purpose flour
1/2 cup whole wheat flour
1 tsp. baking powder
1/2 tsp. baking soda
1 tsp. kosher salt
1 cup (2 sticks) salted butter, room temperature
1 1/2 cups (packed) light brown sugar
1/2 cup granulated sugar
2 large eggs
2 cups old-fashioned oats
1 Tbsp. vanilla extract
6 oz. semisweet chocolate (at least 60% cacao), chopped

Steps:

  • Whisk all-purpose flour, whole wheat flour, baking powder, baking soda, and salt in a medium bowl.
  • Using an electric mixer on medium speed, beat butter, brown sugar, and granulated sugar in a large bowl until light and fluffy, 3-4 minutes. Add eggs one at a time, beating after each addition to incorporate before adding the next. Reduce mixer speed to low and gradually add dry ingredients, beating until just incorporated. Add oats and vanilla and beat just to combine. Fold in chocolate with a spatula.
  • Turn dough out onto a work surface and flatten to a disk. Freeze 15-20 minutes to prevent dough from spreading too much as it bakes, or ideally chill 24-36 hours.
  • Meanwhile, place racks in upper and lower thirds of oven; preheat to 350°F. Line 2 rimmed baking sheets with parchment paper.
  • Drop 1/4 cupfuls of dough onto prepared sheets. Bake cookies, rotating sheets front to back and top to bottom halfway through, until just golden brown around the edges, 12-15 minutes (cookies will firm up as they cool). Let cookies cool on baking sheets 5 minutes, then transfer to wire racks and let cool completely. Let baking sheet cool completely before lining with fresh parchment and spooning on dough for third batch.
  • Do Ahead: Dough can be made 3 months ahead. Wrap tightly with plastic and freeze. Cookies can be made 1 day ahead. Store in an airtight container at room temperature, or freeze up to 3 months.

3/4 cup unsalted butter (COLD)
1 cup light brown sugar (packed)
1/2 cup granulated sugar
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon cinnamon
2 eggs
1 teaspoon vanilla
1 3/4 cups all-purpose flour
2 cups rolled oats
kosher salt
chocolate chips (optional)
raisins (optional)

Steps:

  • Preheat oven to 375 (rack on the 2nd position from top).
  • Slice "cold" unsalted butter into small pieces and whip in your mixer for a minute or so. Because it's cold it will stick a bit, but don't fret -- scrape and mix.
  • Add both sugars, baking powder, baking soda and the cinnamon. With mixer combine at medium speed until the mixture has a crumbly texture.
  • Add the eggs and vanilla and mix again until combined.
  • With mixer on low speed, slowly add flour. If your mixer sounds like it's over-working, you may have to continue by hand and use a spoon.
  • DON'T OVER MIX or cookies will get tough!
  • Gently fold in the oats, and optional add-ins of chocolate chips or raisins.
  • Chill the dough for at least an hour.
  • Drop dough by the heaping tablespoon onto cookie sheet.
  • "Lightly" sprinkle cookies with Kosher salt.
  • Bake on 2nd rack from top at 375 for 12-15 minutes. (Cookies should still be soft to the touch).
  • Carefully transfer them to a cooling rack and enjoy!

1 teaspoon baking powder

Steps:

  • In the large bowl of a stand mixer fitted with the paddle attachment, beat the butter for a few minutes on medium-high speed until light and fluffy. Scrape down the sides of the bowl and add the sugars, baking powder, baking soda and cinnamon, beating until the mixture is well blended. Reduce the speed to medium and add the eggs and vanilla extract, mixing until well incorporated. Reduce the speed to low and add the flour and oats, scraping down the sides of the bowl as necessary and mixing just until they are incorporated. Cover the bowl with plastic wrap and chill the dough for at least an hour before baking.
  • Preheat the oven to 375 degrees. Line a large baking sheet with parchment paper.
  • Form the dough into golf ball-size balls and place about 2 inches apart on the baking sheet. Sprinkle sea salt generously on top of each ball of dough, as you would sugar. Bake 1 sheet at a time for 15 minutes or until the cookies are puffed and beginning to turn golden, being careful not to overbake. (The cookies should have a tender interior.) Transfer the cookies, still on the parchment paper, to a wire rack to cool completely.

2 tablespoons honey

1 stick (4 ounces) unsalted butter, at room temperature
1/2 cup (110 grams) light brown sugar

Steps:

  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper.
  • Mix together the oats, coconut and cashews in a large bowl, then drizzle with the honey. Mix to combine, then spread on one of the prepared cookie sheets.
  • Toast the mixture in the oven until the coconut begins to brown and the mixture becomes fragrant, about 8 minutes. Allow to cool about 10 minutes.
