1 tablespoon olive oil
1 small onion, diced
3 cloves garlic, minced
1 fennel bulb, trimmed and cut into 1/2-inch pieces (reserve fronds for garnish)
1 pound russet potatoes, peeled, halved lengthwise, and thinly sliced
1 can (14 1/2 ounces) reduced-sodium chicken broth
2 tablespoons tomato paste
3 strips orange zest, 1/2-inch-wide
Coarse salt
4 skinless, boneless cod fillets, (6 ounces each)

Steps:

  • In a 12-inch skillet, heat oil over medium heat. Add onion and garlic. Cook, stirring frequently until onion is soft, about 7 minutes. Add tomato paste; stirring to combine. Add fennel, potatoes, chicken broth or water, and orange zest; season with salt and pepper; stirring to combine. Cover, and simmer until vegetables are tender, about 10 minutes.
  • Season fish with salt and pepper. Place on top of vegetables in skillet; reduce heat. Cover; simmer until fish is opaque throughout, 8 to 10 minutes. Serve with chopped reserved fennel fronds.

1 1/2 lb large boiling potatoes

6 tablespoons extra-virgin olive oil
2 lb skinless cod fillet (1 inch thick), cut into 6 portions

Special Equipment
a Japanese Benriner* or other adjustable-blade slicer; a 3-quart shallow baking dish (2 inches deep)

Steps:

  • Preheat oven to 400°F.
  • Cut fennel bulbs crosswise into 1/16-inch-thick slices with slicer. Peel potatoes and cut crosswise into 1/16-inch-thick slices with slicer.
  • Transfer fennel and potatoes to baking dish and toss with garlic, salt, pepper, and 4 tablespoons oil. Spread vegetables evenly in dish and bake, covered with foil, in middle of oven until just tender, 25 to 30 minutes.
  • Season fish with salt and pepper and arrange on top of vegetables. Drizzle with remaining 2 tablespoons oil and bake, uncovered, until fish is just cooked through, 12 to 15 minutes.

1 large build fennel, trimmed of tough tops -- reserving 2 tablespoons of the fronds
2 tablespoons extra-virgin olive oil
1 medium to large yellow skinned onion, thinly sliced
Salt and pepper
1 cup white wine
1 large or 2 medium russet potatoes, peeled and very thinly sliced
1 cup chicken stock
1 1/2 to 1 3/4 pounds cod, cut into 4 portions, 6 to 8 ounces each
1/4 cup chopped flat-leaf parsley, a couple of handfuls
Crusty bread, to pass at table

Steps:

  • Heat a large, deep skillet over medium high heat and preheat oven to 425 degrees F.
  • Cut tops off the fennel bulb. Reserve a few tablespoons of fronds (lacy dill-like greens) and chop. Quarter the bulb, then cut into each quarter on an angle to remove the core. Thinly slice the fennel.
  • Add extra-virgin olive oil, fennel and onion to the pan and saute them, stirring frequently, 5 minutes. Season with salt. Add wine and reduce by half. Add potatoes to the pan in thin layers, completely covering the fennel and onions, working all the way to the edges of the pan. Pour the stock evenly over the pan. Season fish with salt and pepper. Arrange the fish on the potatoes. Bring the liquids to a bubble. Cover the pan and transfer to oven. Bake fish 15 minutes, until opaque, then uncover and bake for 2 or 3 minutes more. Transfer fish and vegetables to shallow bowls or dinner plates and garnish with parsley and fronds. Spoon juices down over the food. Serve with crusty bread for dipping.

1/2 pound skinless boneless salt cod (preferably center cut), rinsed well and cut into 1-inch pieces
1 pound large red potatoes
1 large egg
1/4 cup milk
1 fennel bulb (sometimes called anise), stalks trimmed flush with bulb, reserving any fennel fronds for use, and bulb cut into 1/4-inch dice
1 teaspoon fennel seeds, ground fine in an electric coffee/spice grinder
3 tablespoons olive oil
1/4 cup water
1/4 cup chopped reserved fennel fronds if desired
ten 7- by 3 1/2-inch sheets dried no-boil lasagne
3 cups milk
1/2 stick (1/4 cup) unsalted butter
4 tablespoons all-purpose flour

Steps:

  • In a large bowl cover salt cod with cold water by 2 inches. Chill cod, changing water several times, at least 1 day and up to 2.
  • In a colander drain salt cod and in a saucepan simmer in water to cover by 1 inch until cod just flakes, about 3 minutes. Drain cod in colander and cool. Flake cod.
  • Peel potatoes and cut into 1 1/2-inch cubes. In a saucepan simmer potatoes in salted water to cover by 1 inch until tender, about 15 minutes. Drain potatoes in colander and force through a ricer or food mill fitted with medium disk into a bowl. In a small bowl whisk together egg and milk and add to potatoes, stirring until combined well.
  • In a 9-inch skillet cook fennel bulb, fennel seeds, and salt to taste in oil over moderate heat, stirring, until fennel is pale golden. Cover skillet and cook fennel mixture, stirring occasionally, until tender, about 5 minutes more. Add cod and sauté over moderately high heat, stirring, 2 minutes. Add 1/4 cup water and deglaze skillet, scraping up brown bits.
  • Stir cod mixture and reserved fennel fronds into potato mixture until combined well and season with salt and pepper. Filling may be made 1 day ahead and chilled, covered.
  • In a large flat-bottomed dish soak lasagne sheets in very hot water to cover until soft and pliable, about 15 minutes.
  • Remove 1 lasagne sheet from water and halve crosswise to form 2 squares. Spread a scant 1/4 cup filling lengthwise along 1 edge of each square and roll each square to enclose filling, leaving ends open. Arrange both cannelloni, seam sides down, in a buttered 3-quart gratin dish, 15 by 10 by 2 inches, or other shallow baking dish. make 18 more cannelloni with remaining 9 lasagne sheets (halved crosswise) and filling in same manner.
  • Preheat oven to 400°F.
  • In a small heavy saucepan bring milk just to a simmer over moderately low heat. Remove pan from heat and keep warm, covered. In a heavy saucepan melt butter over moderately low heat and whisk in flour. Cook roux, whisking, 3 minutes and whisk in warm milk. Bring sauce to a boil, whisking, and simmer, whisking, 3 minutes. Season sauce with salt and pepper and pour evenly over cannelloni. Cannelloni may be prepared up to this point 1 day ahead and chilled, covered.
  • Bake cannelloni in upper third of oven 30 minutes, or until bubbling and lightly browned.

4 medium-size fennel bulbs, trimmed and cut into 1-inch chunks
2 small baking potatoes, peeled and cut into 1-inch chunks
4 cups chicken broth, homemade or low-sodium canned
8 cloves roasted garlic, peeled
1 teaspoon salt, plus more to taste
Freshly ground pepper to taste
6 ounces salt cod, soaked in water overnight (water changed several times), drained
1/4 cup bread crumbs
2 teaspoons olive oil
4 teaspoons pitted and chopped green olives

Steps:

  • Place the fennel, potatoes and chicken broth in a large saucepan and bring to a boil. Reduce heat and simmer until the vegetables are tender, about 25 minutes. Place in a food processor with the roasted garlic and process until smooth. Return to the saucepan and season with the salt and pepper to taste. Keep warm over low heat.
  • Shred the salt cod with a knife. Place in a bowl and toss with the bread crumbs. Heat the olive oil in a medium-size nonstick skillet over medium heat. Add the cod and saute until the crumbs are browned, about 5 minutes. Divide the soup among 4 bowls and top with the salt cod and olives. Serve immediately.

French Salt Cod and Potato Brandade image

Your feelings about salt cod may depend on where your roots are. If your memories of the dish evoke words like bland and woolly, you likely had it in the Midwest. If you grew up in a Portuguese or Caribbean community, you may have more fond recollections. This recipe, common in France, is an opportunity to give salt cod a second chance, or to try it for the first time. The cod should be rinsed and soaked overnight, but that doesn't take much effort. For tender fish, the trick is not to overcook it. Keep the flame low, just under a simmer. Cooking the fish in a combination of milk and water, along with a few aromatics like bay leaf, thyme, clove and peppercorns, will keep the fish sweet. While the cod is warm, flake it into a bowl and roughly mash with potatoes and moisten with garlicky olive oil and cream. A bit of cooking liquid is added to lighten the mixture. Serve smooth or chunky, as you like.

1 pound skinless, boneless salt cod
1 cup milk
1 large thyme sprig
1 bay leaf
5 peppercorns
2 allspice berries
1 clove
1 pound potatoes, peeled, cut in 1-inch cubes
6 large garlic cloves, peeled
Salt and pepper
1/3 cup olive oil
Pinch cayenne
Grated nutmeg
1/2 teaspoon grated lemon zest
1/2 cup crème fraîche, plus 2 tablespoons
3 tablespoons cold butter
1/2 cup coarse dry bread crumbs

Steps:

  • Rinse salt cod well and rub off any salt. Soak in 2 quarts cold water. Drain and change water every few hours (an overnight soak without changing is fine). Total soaking time should be at least 8 hours.
  • In a medium saucepan, heat milk plus 1 cup water over medium-high heat. Add soaked salt cod, thyme, bay leaf, peppercorns, allspice berries and clove. Adjust heat to maintain a bare simmer. Cook until fish flakes easily, about 15 minutes. Remove fish and hold at room temperature.
  • Meanwhile, in another pot, cover potatoes with water and bring to a boil. Add garlic cloves and a good pinch of salt. Drain potatoes when they are soft, about 15 minutes, reserving cooking liquid and garlic.
  • Put cooked garlic cloves in a small saucepan and crush with a fork. Add olive oil and heat over a medium flame until quite warm to the touch. Set aside.
  • Put potatoes in a large mixing bowl. With your fingers, flake cooked salt cod on top. With a potato masher, roughly blend potatoes and fish. Drizzle in warm garlic oil and mash again. Add cayenne, nutmeg to taste and lemon zest. Stir in ½ cup crème fraîche and beat well to combine. Beat in about ½ cup cooking liquid to lighten mixture so it has the texture of soft mashed potatoes. Taste and adjust seasoning - it will probably need salt and pepper.
  • Heat oven to 400 degrees. Use 1 tablespoon butter to grease a low-sided 1-quart baking dish or pie pan. Transfer brandade mixture to dish and smooth with a spatula. Paint the top with 2 tablespoons crème fraîche, and sprinkle with bread crumbs. Dot top with remaining butter. (May be prepared up to a day ahead and stored in the refrigerator; bring to room temperature before baking.) Bake until golden and bubbling, about 20 minutes.

1/2 lb new potato, peeled if desired (halved if smallish or cut into 1/2-inch chunks)
3 tablespoons virgin olive oil
1 teaspoon kosher salt, for the potatoes
1/2 teaspoon black pepper, for the potatoes
1/4 teaspoon red pepper flakes (optional)
1/2 teaspoon lemon pepper seasoning
8 ounces cod fish fillets (skin removed if needed)
1/2 teaspoon fresh garlic, minced
lemon zest
1 tablespoon fresh chives, chopped

Steps:

  • Heat oven to 425 degrees.
  • Put the potatoes in a roasting pan or on a baking sheet. Drizzle with 2 tablespoons of the oil and toss to coat. Sprinkle with 1/2 teaspoon of the salt and 1/4 teaspoon of the pepper. Roast for 20 minutes. Stir and roast for 10 minutes more.
  • Meanwhile, rinse the cod fillets and pat them dry with paper towels.
  • After the 30 minutes of roasting, move the potatoes to the sides of the pan and place the fillets in the center. Drizzle with the remaining oil and sprinkle with the remaining salt and pepper, adding the red pepper flakes if using. Redistribute the potatoes around the fillets. Add garlic if using at this point. Stir.
  • Distribute oil (in pan with potatoes) over cod filets on both sides using a paint brush or paper towel, adding lemon pepper seasoning on both sides.
  • Roast until the fillets are the same color throughout and flake easily, about 10 minutes. Top with the lemon zest and chives.
  • Tip: Serve this roasted version of fish and chips with ketchup for the youngsters and malt vinegar for the party of adults!
