1 tablespoon flaked sea salt
2 teaspoons finely cracked black pepper
1 teaspoon crushed red pepper flakes, or to taste
1 teaspoon Chinese five-spice powder
1 teaspoon ground paprika
1 tablespoon vegetable oil
4 skinless, boneless chicken breast halves -- trimmed and cut into quarters
1 pound broccoli florets, cut in half
3 small carrots, peeled and cut into matchstick-sized pieces

Steps:

  • Stir together the sea salt, black pepper, red pepper flakes, five-spice powder, and paprika in a shallow bowl until blended.
  • Heat vegetable oil in a large skillet or wok over medium heat. Gently press both sides of the chicken pieces into the seasoning mix, and place into the hot skillet. Cook, stirring occasionally to flip the chicken pieces over, until the chicken is browned on both sides and the meat is no longer pink in the center, about 10 minutes. Stir in the broccoli and carrots, and cook and stir until the vegetables are tender, 10 to 12 minutes.

500g skinless, boneless chicken thighs
1 tsp flaky sea salt
1 tsp Sichuan peppercorns (use normal peppercorns if you can't find these)
1 tbsp cornflour
1 tsp Chinese five-spice powder
1 tsp sesame seeds
1 tbsp olive oil
1 tbsp soy sauce
1 tbsp honey
250g Asian greens such as pak choi
handful chopped coriander , sliced spring onions and cooked rice (to serve)

Steps:

  • Cut the chicken thighs into strips. Crush the salt with the peppercorns in a pestle and mortar, then mix with the cornflour and five-spice and tip into a sandwich bag. Tip the chicken into the bag and shake well to coat in the flour mixture.
  • Toss the sesame seeds in a pan over a medium heat and lightly toast, for around a minute, then add the olive oil. Add the chicken and cook for 7-8 mins until golden brown.
  • Mix the soy and honey and tip into the pan along with the Asian greens, cook for 2-3 mins further until everything is well coated and the greens are cooked through. Serve topped with coriander and sliced spring onions alongside some cooked rice.

1/2 onion, finely chopped
3 garlic cloves, minced
2 lbs boneless skinless chicken breasts, cut into 3/4 inch pieces (you can use thighs)
1 tablespoon soy sauce, plus more for seasoning
1/4 teaspoon toasted sesame oil
salt and pepper
1 tablespoon finely grated lemon zest, plus
1 teaspoon finely grated lemon zest
2 tablespoons fresh lemon juice
1 scallion, thinly sliced
steamed rice, for serving

Steps:

  • In a large skillet, heat the olive oil.
  • Add the onion and cook over moderate heat, stirring until softened, 4 minutes.
  • Add the garlic and cook for 1 minute.
  • Add the chicken and cook over moderately high heat, stirring occasionally, until browned all over, 3 minutes.
  • Stir in the soy sauce and sesame oil, season with salt and pepper and stir=fry until the chicken is cooked through, 3 minutes longer.
  • Remove from the heat and stir in the lemon zest and lemon juice.
  • Season with salt, pepper and soy sauce.
  • Transfer the chicken to a platter, top with the slice scallion and serve with rice.

This dish balances salty, sweet, tangy and spicy ingredients. It is truly wonderful! :) Recipe is from Barbara Lauterbach, Cooking Light Magazine, April 2009 edition. She suggests that it be served alongside a quick rice pilaf. Cook a 10 oz package frozen white rice (such as Birds Eye SteamFresh) according to package directions. We had rice already made since there is white rice always around!! Combine cooked rice, 2 Tablespoons drained chopped water chestnuts, 1/2 teaspoon crushed red pepper flakes, 1/4 teaspoon salt (or perhaps one of Mrs Dash's 13 choices) and 1/4 teaspoon freshly ground black pepper and a sprinkling of chopped green onions. Make sure you have it all chopped and ready so that cooking it will be a breeze. ;)

Steps:

  • Heat a large skillet to medium-high heat and add 1 tablespoon oil. Once hot, sauté peppers for 2 minutes. Add kale and peas and sauté for an additional 2 to 3 minutes. Remove the vegetables to a plate. Set aside.. Add the remaining 2 tablespoons oil to the skillet. Pat chicken dry and sprinkle with salt. Sear chicken for 2 to 3 minutes on each side, or until cooked through.. In a medium bowl, whisk together all sauce ingredients except the cornstarch.. In a small bowl, combine the cornstarch with 2 tablespoons water and whisk to create a slurry. Add the slurry to the sauce mixture. . Add the sauce to the skillet with the chicken.
