12 frozen cooked meatballs (1/2 oz. each)
1/4 cup A.1. Thick & Hearty Steak Sauce
1/4 cup TACO BELL® HOME ORIGINALS® Thick 'N Chunky Salsa
4 oz. KRAFT Natural 2% Milk Blend of Reduced Fat Monterey Jack, Mild Cheddar & Colby Cheeses, cut into 12 slices
24 RITZ Crackers
12 stuffed green olives, sliced

Steps:

  • HEAT oven to 350F. Cook meatballs as directed on package; cut in half. Place in large bowl. Add steak sauce and salsa; toss to coat. Cut cheese slices in half. PLACE crackers in single layer on baking sheet; top with cheese and meatballs. BAKE 4 to 5 minutes or until cheese is melted. Top with olives.

Steps:

  • Heat oven to 350ºF.

Salsa Meatballs Browned in Garlic Oil image

The meatballs have just a hint of salsa they are moist and tender. I came up with this when I jarred some salsa. I had some extra that didn't fit into the jars so into the ground meat it went. I was thinking I was making hamburgers but made it to moist so in went bread crumbs next thing I knew I was rolling them into balls and browning them in garlic flavored oil. You can serve just browned, in your favorite sauce over pasta or in a sandwich.

vegetable oil (for frying)
6 garlic cloves, lightly crushed
2 cups ground beef
3/4 cup seasoned bread crumbs
3/4 cup salsa, strained (reserving liquid for pasta sauce)
1 egg, slightly beaten
1 tablespoon Worcestershire sauce
1 tablespoon olive oil
1 large onion, diced
1 tablespoon dried Italian herb seasoning
1 tablespoon fresh minced basil
2 quarts prepared pasta sauce

Steps:

  • Meatballs:.
  • In a large frying pan heat oil over low heat add garlic and let simmer while mixing meatballs.
  • In a large bowl mix ground beef,.
  • bread crumbs, salsa, egg, and Worcestershire sauce just till blended and form into balls.
  • Raise heat to medium remove the golden browned garlic and reserve for pasta sauce.
  • Brown meatballs in oil turning to brown on all sides.
  • If they are sticking to pan that means they are not ready to be turned.

  • In a large pot heat oil add onions till translucent.
  • Mince golden browned garlic and add to the onions adding the reserved salsa liquid and herbs.
  • Place the meatballs on the onion mixture and pour the prepared sauce over and simmer for 10 minutes over medium low heat. Gentle stirring after 5 minutes.

1 jar (16 ounces) Old El Paso™ Thick 'n Chunky salsa
2 medium green onions, thinly sliced

Steps:

  • Heat oven to 400°F. Mix all ingredients except salsa and green onions. Shape mixture into twenty 1 1/2-inch meatballs.
  • Place in ungreased rectangular pan, 13x9x2 inches. Bake uncovered 20 to 25 minutes or until thermometer inserted in center of meatballs reads 165°F.
  • In 2-quart saucepan, place salsa and meatballs. Heat to boiling, stirring occasionally; reduce heat. Cover and simmer about 15 minutes or until salsa and meatballs are hot. Sprinkle with green onions.

1/2 tsp. each ground chili powder, ground cumin and garlic powder
1 lb. extra-lean ground beef
1/4 cup dry bread crumbs
1 egg
4 oz. (1/2 of 8-oz. pkg.) KRAFT Pepper Jack Cheese, cut into 24 cubes
1 can (8 oz.) tomato sauce

Steps:

  • Mix 1/2 cup salsa and seasonings in large bowl until blended. Add meat, bread crumbs and egg; mix just until blended. Shape into 24 (1-inch) meatballs.
  • Press 1 cheese cube into center of each meatball, pressing meat mixture around cheese to completely enclose cheese. Place in slow cooker sprayed with cooking spray. Mix tomato sauce and remaining salsa until blended. Pour over meatballs; cover with lid.
  • Cook on LOW 3 to 4 hours (or on HIGH 1-1/2 hours) or until meatballs are done (160ºF).

1 (16 ounce) jar prepared hot salsa
1 (8 ounce) can tomato sauce
1 lb ground sirloin (or lean ground beef)
1/2 lb ground pork
1 egg, beaten
1/2 teaspoon dried thyme
1 teaspoon garlic salt (I use fresh minced garlic and salt, but this is the original recipe)
2 tablespoons prepared steak sauce (like A1)
1 tablespoon vinegar
1 tablespoon prepared mustard

Steps:

  • Combine the salsa with the tomato sauce in a saucepan and start warming together over low heat.
  • Mix the remaining ingredients together with your hands until thoroughly combined.
  • Form the mixture into 20 1-inch balls.
  • Bake the meatballs on a cookie sheet or baking pan at 350°F for 25 minutes.
  • Transfer the meatballs to a casserole, pour the heated sauce over the top and bake at 350°F for 10 minutes.
  • Turn the oven off, leaving the dish inside, and let it set in the cooling oven for 20 to 25 minutes until serving.
