Good olive oil
1 cup chopped sweet onion, such as Vidalia
2 teaspoons minced garlic (2 cloves)
2 cups (1 pint) cherry or grape tomatoes, halved through the stem
Kosher salt and freshly ground black pepper
1 1/2 tablespoons good balsamic vinegar
1 1/2 tablespoons julienned fresh basil leaves
1 (2-pound) salmon fillet, cut crosswise into 4 pieces

Steps:

  • Preheat the oven to 425 degrees F.
  • Heat 3 tablespoons of the olive oil in a medium (10-inch) saute pan. Add the onion and saute over medium-low heat for 5 minutes, stirring occasionally, until very tender but not browned. Add the garlic and saute for 1 more minute. Stir in the tomatoes, 1 teaspoon salt, and 1/2 teaspoon pepper and cook over medium-low heat for 10 to 15 minutes, stirring occasionally, until the liquid evaporates and the tomato sauce thickens slightly. Off the heat, stir in the vinegar and basil.
  • Meanwhile, place a large (12-inch) cast-iron pan over high heat for 5 minutes. Brush the salmon all over with olive oil, sprinkle liberally with salt and pepper, and place it skin side up in the pan. Cook the fish for 3 to 4 minutes without moving them, until browned. Turn the salmon skin side down with a small metal spatula and transfer the pan to the oven for 8 minutes. (The salmon will not be completely cooked through.) Remove the fish to a serving platter, cover with aluminum foil, and allow to rest for 5 minutes.
  • Reheat the tomatoes, season to taste, and serve hot, warm, or at room temperature along with the salmon.

1 pint grape tomatoes, quartered
2 tablespoons minced fresh parsley
2 tablespoons capers, rinsed and chopped
2 teaspoons extra-virgin olive oil
2 garlic cloves
Zest and juice of 1 lemon
Kosher salt and freshly ground black pepper
Six 4-ounce salmon fillets
Prepare a grill for medium heat.

Steps:

  • In a medium bowl, combine the tomatoes, parsley, capers, oil, garlic, lemon zest and juice, 1/2 teaspoon salt and 1/4 teaspoon pepper.
  • Season the salmon on both sides with salt and pepper. Place each salmon fillet on a sheet of aluminum foil and top with a few tablespoons of the tomato mixture. Fold the foil sheets into packets. (If making this recipe in advance, store the packets on a baking sheet in the refrigerator until time to grill.)
  • Place the packets on the grill and cover. Cook 10 to 12 minutes for medium.

12 ounces cherry tomatoes, halved
1 clove garlic, smashed
2 sprigs fresh basil

4 skin-on wild-salmon fillets (each 6 ounces and 1 inch thick)

Steps:

  • Preheat oven to 350 degrees. In a 9-by-13-inch baking dish, toss together oil, tomatoes, garlic, and 4 basil leaves. Season with salt. Bake until tomatoes are just wilted, about 20 minutes. Remove from oven and reduce heat to 275 degrees.
  • Season salmon with salt and pepper; place, skin-side down, in dish with tomatoes. Spoon pan juices over fish and bake until just cooked through and a thermometer inserted into thickest part registers 120 degrees, about 15 minutes. Serve, sprinkled with remaining basil leaves.

Steps:

  • Preheat oven to 400 degrees F. Coat a large baking sheet with cooking spray.
  • Season salmon with salt and pepper. Brush lemon and herb seasoning all over both sides of salmon.
  • Place salmon on prepared baking sheet. Arrange cauliflower on another baking sheet, spray with cooking spray and sprinkle with Parmesan. Roast 15 minutes, until fish is fork tender and cauliflower is golden brown and tender.
  • In a medium bowl, combine tomatoes, basil and capers. Season, to taste, with salt and pepper.
  • Serve 4 of the salmon fillets with tomato mixture spooned over top. Serve half of the rice and all of the cauliflower with this meal. Reserve extra salmon fillets and extra rice for other meals.

8 asparagus spears, trimmed and halved
2 handfuls cherry tomatoes

  • Heat oven to 220C/fan 200C/gas 7. Tip the potatoes and 1 tbsp of olive oil into an ovenproof dish, then roast the potatoes for 20 mins until starting to brown. Toss the asparagus in with the potatoes, then return to the oven for 15 mins.
  • Throw in the cherry tomatoes and vinegar and nestle the salmon amongst the vegetables. Drizzle with the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked. Scatter over the basil leaves and serve everything scooped straight from the dish.

1 (8-pound) whole salmon (preferably wild coho), cleaned, butterflied, and boned, leaving head and tail intact
1/4 cup dry white wine
For sauce
10 saffron threads
1/4 teaspoon hot water
1 cup mayonnaise
1/2 cup loosely packed fresh basil leaves
1/4 cup extra-virgin olive oil
1 tablespoon Dijon mustard
1 large garlic clove
1 1/2 teaspoons finely grated fresh orange zest
1/2 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Make fish:
  • Put oven racks in middle and lower third of oven and preheat oven to 400°F.
  • Toss tomatoes in a bowl with 1 tablespoon oil, teaspoon salt, 1/4 teaspoon pepper, and 1 teaspoon herbes de Provence. Arrange tomatoes, cut sides up, in a shallow baking pan and reserve bowl (do not wipe clean).
  • Quarter fennel lengthwise, then slice 1/8 inch thick with slicer. Toss fennel in reserved bowl with 1 tablespoon oil, 1/2 teaspoon salt, 1/4 teaspoon pepper, and remaining teaspoon herbes de Provence, then spread out in a 17- by 12-inch heavy shallow baking pan.
  • Roast fennel in lower third of oven and tomatoes in middle of oven, stirring fennel halfway through roasting, until fennel begins to caramelize and tomatoes are browned lightly on edges (but are still juicy) and their juices have accumulated in bottom of pan, 40 to 50 minutes.
  • Remove from oven. If there are no tomato juices in pan, gently press on tomatoes to extract enough juice to measure 2 tablespoons (leave juices in pan). Increase oven temperature to 450°F.
  • Line a 17- by 12-inch shallow baking pan with heavy-duty foil and coat foil with 1 tablespoon oil. Position salmon diagonally in roasting pan, then open fish. Sprinkle inside of fish with remaining 3/4 teaspoon salt and 1/2 teaspoon pepper, then coat with 1 tablespoon oil. Arrange roasted tomatoes evenly inside fish on bottom half (with head and tail attached), reserving juices in pan (for sauce). Top tomatoes with roasted fennel, then pour wine over vegetables and close fish (like a book) to enclose stuffing (stuffing will not be completely covered). Secure opening with several wooden picks, then rub top of fish with remaining tablespoon oil. If head and tail hang over edge of pan, put a baseball-size ball of foil under head and a golf-ball-size ball of foil under tail to prop them up so that juices run into pan (head and tail will curve upward slightly).
  • Roast salmon in middle of oven until fish is just cooked through (thickest part will be opaque), about 25 minutes.
  • Make sauce while fish roasts:
  • Combine saffron and hot water in a small cup and let stand 1 minute. Blend together saffron mixture, remaining sauce ingredients, and 2 tablespoons reserved tomato juices in a blender until smooth. Transfer to a bowl and chill, covered, until ready to use.
  • To serve:
  • Slide whole fish (still on foil) onto a platter. To remove foil, lift head end of fish slightly with a long or wide spatula and push foil toward middle of fish. Lower head end back onto platter and lift tail end in same manner to gently remove foil completely. Serve fish with sauce on the side.

Steps:

The is a recipe I've developed over the years. I use it on other fish than just Salmon, because not everyone in my family likes Salmon. Any fish will work, just make sure you have a nice sized steak. It is very flavorful and a little different than just another fish on the grill. It is definitely a MUST-TRY! Enjoy.

1/4 cup soy sauce
1/4 cup Worcestershire sauce
4 -5 tablespoons brown sugar
4 -5 tablespoons honey
juice of one lemon

one chopped hot chili pepper

3 tablespoons Old Bay Seasoning
salt and pepper
5 -7 basil leaves (fresh)
one heirloom tomatoes

Steps:

  • Mix first 10 ingredients in bowl.
  • Pour marinade into large freezer bag.
  • Marinate fish at least 20 minutes with bag sealed at room temperature.
  • Thinly slice the tomato and sprinkle with salt and pepper.
  • Place fish on hot grill. Add salt and pepper to taste. (Fresh ground is preferred).
  • As the fish cooks (3-5 minutes per side), use a brush and mop the marinade onto fish.
  • Turn salmon a quarter (90 degrees) after a quarter of the way through cooking. (This will give it nice grill cross hatch marks).
  • Flip fish half way though cooking. Add salt and pepper to taste to this side as well.
  • Continue to baste the fish with marinade. (Try to use all if possible).
  • Turn fish another 90 degrees after 3/4 done cooking.
  • Before fish is completely cooked, top it with thinly sliced tomato. Top tomato with fresh basil. Top basil with crumbled goat cheese. Shut the grill for a minute or two before taking fish off. Let rest a few minutes and enjoy!
  • Feel free to make the marinade to taste. It should be sweet, and salty, and sour. I did not measure anything out when making this dish. I simply tasted it a few times until it was balanced the way I liked it.

6 (6 ounce) skinless salmon fillets
Salt and white pepper
3 cups fish stock or clam juice
1 bunch oregano
1 bunch basil
1 bunch parsley
1 bunch thyme
6 tomatoes, peeled, seeded, and diced
1/2 cup extra virgin olive oil
1 1/2 teaspoons salt
1/2 teaspoon freshly ground black pepper
1 head Boston lettuce, leaves separated and washed

Steps:

  • To poach salmon, preheat oven to 350 degrees F. Season salmon all over with salt and pepper. Bring stock or juice to a boil in a large ovenproof skillet. Add fish, so they are barely touching, and bring liquid back to a boil. Turn fish over, then cover with a piece of parchment paper coated with olive oil. Transfer to oven and bake 5 minutes. Turn fish over, cover again, and bake an additional 2 minutes. (Drain and reserve the liquid in the pan for use as stock.) Transfer fish to a platter, cover with plastic wrap, and chill until serving time.
  • To make dressing, remove stems and finely chop all herbs. If these fresh herbs are not available, substitute chives, mint, marjoram, or chervil. Watercress or the bright yellow leaves inside celery stalks are also preferable to dried herbs. Mix all ingredients in a small bowl, and reserve in refrigerator.
  • To serve, arrange each fillet on a lettuce lined serving plate. Spoon on tomato and herb mixture. We like to serve with various garnishes such as radishes, sliced avocado, pickles or olives around the salmon.

CREAMY SALMON AND BASIL PASTA

1 large sping onion chopped finely
1 stick of celery chopped
1 clove of garlic finely chopped
1 medium salmon steak cut into four equal chunks
half a glass of dry white wine
2 table spoons of creme fraiche
10 plum cherry tomatoes cut into quarters
Salt and black pepper
Cooked Spaghetti or any pasta of your choice for 2 pers.
1 tbs of olive oil
A handful of fresh basil

Steps:

  • Add the olive oil to a deep frying pan and heat on a medium-high flame. Add the spring onion and cook for 4 mins until soft.
  • Next, add the celery to the pan and cook for a further 4 mins. Once the celery has softened, add the garlic to the pan and cook for a further 1 minute.
  • Put the salmon in the pan and cook for 2-3 mins, turning as appropriate, then pour in the wine and continue on the heat until the salmon is cooked through and the wine has been mostly absorbed.
  • Take off the heat. Break up the salmon into flakes and add the creme fraiche. Add a pich of salt and black pepper to taste. Mix in the tomatoes and the basil.
  • Mix the pasta together with the sauce and serve.

1 pound potatoes
3 1/4 cups flour
Salt
2 tablespoons extra-virgin olive oil, plus 3 tablespoons
1 garlic clove, peeled
7 ounces tomato sauce
7 ounces crushed tomatoes
18 basil leaves, julienned
7 ounces smoked scamorza, diced
7 ounces smoked salmon, diced

Steps:

  • Boil the potatoes with skins on. Once potatoes have cooked, drain, and peel. While still hot, pass through a ricer. Transfer the potatoes to a board, quickly mix in the flour and a pinch of salt, and mix until a dough is formed. Divide the dough into small portions, and roll each one out on the floured work surface to a long rope-like form. Cut each rope into 1/2-inch lengths.
  • To make the sauce, heat 2 tablespoons of extra virgin olive oil in a frying pan, and add the garlic. Remove the garlic as soon as it begins to color. Add the tomato sauce, crushed tomatoes, 6 julienne cut basil leaves, and a pinch of salt. Cook for approximately 3 minutes.
  • Cook the gnocchi in boiling water. As soon as they rise to the surface, drain them, and add them to the tomato sauce. Add the remaining olive oil and reheat sauce with gnocchi. Add the diced cheese, salmon, and 4 julienned basil leaves. Toss for a few seconds, until the cheese is just melted.
  • To serve, plate on a large platter, and decorate with remaining julienne basil leaves.

Steps:

4 large ripe tomatoes, peeled, seeded, and finely chopped
2 shallots, minced
1/3 cup fresh basil leaf, chopped
1/2 lemon, zest of
1/2 cup extra virgin olive oil
2 tablespoons sherry wine vinegar
1 tablespoon minced fresh chives
1 tablespoon minced fresh tarragon
salt & freshly ground black pepper
cayenne pepper
extra virgin olive oil
salt & freshly ground black pepper
6 sprigs fresh basil (to garnish)
6 (6 ounce) fillets fresh salmon

Steps:

  • Make the sauce several hours or the night before. In a non-reactive mixing bowl, stir together the chopped tomatoes, shallots, basil, lemon zest, olive oil, vinegar, chives, and tarragon. Season to taste with salt, pepper, and a little cayenne. Cover the bowl and leave at room temperature to marinate for several hours or overnight (if your kitchen is very hot, refrigerate.).
  • About 1/2 hour before serving time, preheat the oven to 400 degrees F. Cover a baking sheet with foil and lightly oil the foil with olive oil. When the oven is hot, switch it to its broiler function. Brush the salmon fillets with olive oil, season them with salt and pepper, and arrange them on a baking sheet. Place the salmon under the broiler about 2 inches from the flame and cook until done the top is very lightly browned and the flesh is still slightly pink in the center, 7 to 8 minutes. Meanwhile, taste the sauce and, if necessary, adjust the seasonings to taste.
  • Spoon a generous amount of the sauce onto the middle of each of 6 heated serving plates. Place the salmon fillets on top of the sauce. Top each fillet with a basil sprig. Serve immediately, passing any remaining sauce separately.

I had some already made pesto in the fridge, so this was quick and delicious. I can't remember eating more delicious salmon. I doubled the recipe, and it was supposed to be leftovers but there weren't any. Recipe courtesy of Kalyn's Kitchen. 2 teaspoons olive oil
4 teaspoons basil pesto
4 -5 medium tomatoes

Steps:

  • Preheat oven to 450. Place a baking sheet in oven to heat while you prep the salmon.
  • Tear two pieces of foil (big enough to wrap salmon with some overlapping).
  • Place foil pieces one on top of the other.
  • Put about 2 teaspoons olive oil in center of top piece of foil and lay salmon on top of oil.
  • Spread each piece of salmon with about 2 teaspoons basil pesto.
  • Arrange sliced tomatoes over pesto so they cover the top of the salmon.
  • Wrap salmon securely in foil, doubling over the seam and ends several times.
  • Place salmon packet on heated baking sheet and cook 15 minutes.
  • Remove from oven after 15 minutes and let sit 2 to 3 minutes.
  • Then open carefully and serve immediately, while salmon and tomatoes are hot.

  • Preheat grill to medium.

4 Salmon Fillets, About 6 Oz Each
3 Tablespoons Olive Oil
3/4 Cups of Seasoned Bread Crumbs
1/2 Sticks Unsalted Butter
Juice of 1 1/2 Large Lemons
1/2 Cup Dry White Wine
4 Medium Artichokes, Cleaned, Sauteed, And Cut Into Eight Pieces
4 to 5 Sun-dried Tomatoes, Chopped
1 Large Garlic Clove, Peeled And Minced
3 Tablespoons Chopped Fresh Basil
Salt & Pepper
1 Tablespoon Soft Butter
1 Tablespoon Flour

Steps:

  • Melt the butter in a heavy saucepan, and add the garlic, artichokes, and sun-dried tomatoes and cook 3 minutes over medium low heat.
  • Add the lemon juice, wine, salt and pepper to taste, and cook over low heat until thickened.
  • Just before serving, stir in the fresh, chopped basil. (If your sauce does not thicken up enough, mix the soft butter with the flour and whisk in just a teaspoon or so, adding more as needed.)
  • Preheat oven to 375 degrees F.
  • Brush the salmon with the 3 tbs. of oil then sprinkle on the crumbs.
  • Place hot oven and roast until done, but still moist inside. (cooking time depends on the thickness of your salmon fillets).
  • Or, grill the salmon on a hot grill until cooked.
  • Serve each steak topped with a scoop of the sauce.
