HONEY LEMON-GLAZED SALMON SALAD

Honey Lemon-Glazed Salmon Salad image

This Honey Lemon-Glazed Salmon Salad is ready in 15 minutes and can easily be meal prepped. My whole family loves this recipe and said it's their favorite salmon salad I've ever made!

Provided by Averie Sunshine

Categories     Salad

Time 15m

Number Of Ingredients 11

1/2 cup honey
1/2 cup lemon juice
3 to 4 tablespoons olive oil + 2 tablespoons for cooking
2 to 3 tablespoons dijon mustard
1/2 teaspoon salt
1/2 teaspoon pepper
2 salmon filets, about 6 ounces each
4 cups romaine lettuce
1 large tomato, diced
1/2 cup cucumber, peeled and diced
1/3 cup shredded cheese (Monterey Jack, cheddar, or your favorite cheese blend)

Steps:

  • To a large measuring cup or small bowl, add the honey, lemon juice, 3 to 4 tablespoons olive oil, dijon mustard, salt, pepper, and whisk to combine.
  • To a large skillet, add 2 tablespoons olive oil and heat over medium-high heat.
  • When the oil is warm, add the salmon and cook for about 4 to 5 minutes, or until salmon has lightly seared on first side.
  • Flip salmon over and cook for about 1 minute.
  • Add half of the honey-lemon juice mixture (reserve the other half to use as vinaigrette for salad as needed). Use caution because mixture will bubble up when you add it. Cook for about 2 to 3 minutes, or until sauce has thickened and reduced some, and salmon is just cooked through. As the sauce boils and bubbles, spoon it over the top of the salmon a few times, as if you're basting it.
  • Remove pan from the heat, and allow salmon to rest in pan while you plate the salad.
  • To a large platter, add the lettuce and evenly sprinkle with tomatoes, cucumber, and cheese.
  • Top with the salmon, including any sauce from the skillet, and if necessary drizzle the reserved vinaigrette as desired. Serve immediately. Salad is best served fresh once dressed.

SALMON WITH SWEET SOUR DRESSING AND SPICY GREEN SALAD

Salmon With Sweet Sour Dressing and Spicy Green Salad image

This wonderful salmon dish with its sweet and tangy sauce and lively fresh salad is suitable for special occasions. From a recipe by Bill Granger, one of Australia's top chefs.

Provided by Daydream

Categories     Greens

Time 40m

Yield 4 serving(s)

Number Of Ingredients 15

4 salmon fillets, each 3/4-inch - 1-inch thick
1 teaspoon sea salt
1/2 cup all-purpose flour
1/4 cup oil
1 lime, quartered
2 large fresh red chilies, seeded and finely sliced, diagonally
2/3 cup fresh cilantro leaves
18 fresh mint leaves
4 french shallots, finely sliced
25 snow peas, blanched and finely sliced (mangetout)
3 fresh kaffir lime leaves, sliced very finely
5 tablespoons soft brown sugar
5 tablespoons granulated sugar
5 tablespoons fish sauce
5 tablespoons lime juice

Steps:

  • To prepare the salad, toss the chillies, cilantro leaves, mint leaves, shallots, snow peas and sliced lime leaves together in a bowl, then set aside.
  • To prepare the dressing, stir the brown and white sugars with 5 tablespoons water in a medium-sized saucepan over low heat, until the sugars have dissolved. Increase heat to medium, and continue to cook until lightly golden. Remove from heat, add the fish sauce and lime juice (be careful, it will splatter), and stir to combine.
  • To cook the fish, firstly mix the flour and salt together in a bowl. Add the fish and coat well.
  • Heat the oil in a heavy-bottomed (preferably nonstick) sauté pan just large enough to hold the salmon; it will be the right temperature when the oil forms ripples and barely begins to smoke.
  • For inch-thick fillets, sauté over high heat for 3 to 5 minutes on the first side, then turn with a spatula and sauté for 2 to 3 minutes on the second side, depending on how you like your salmon done; saute the salmon more on the first side (the presentation side) than the second, so that you end up with a savory golden crust or crisp skin.
  • Serve the fish topped with the spicy green salad. Spoon over the sweet and sour dressing, and serve with lime quarters.

SWEET AND SPICY GRILLED SALMON

Sweet and Spicy Grilled Salmon image

The decadent-tasting "good" fat in salmon complements the sweet-spicy Buffalo glaze. The skin gets caramelized and crisp on the grill as the sauce drips onto it. It's delicious, but can be discarded to save fat and calories. (The numbers below include the skin.) A crisp and refreshing celery slaw is dressed with the same sauce, made creamy with light mayo, and brightened with onions and chives.

Provided by Food Network Kitchen

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 11

2 tablespoons hot sauce, such as Frank's
1 tablespoon packed dark brown sugar
1 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
2 tablespoons light mayonnaise
1 tablespoon snipped chives
8 stalks celery, very thinly sliced in half moons on an angle
1/2 small red onion, very thinly sliced
Four 5-ounce center-cut skin-on salmon fillets, about 1-inch thick
Kosher salt and freshly ground black pepper
Vegetable oil, for oiling the grill

Steps:

  • Preheat an outdoor grill or grill pan on medium high.
  • Mix together the hot sauce, brown sugar, paprika and cayenne in a small bowl. Transfer 1 tablespoon of the mixture to a large bowl and whisk in the mayonnaise; set aside the rest of the sauce. Add the chives, celery and onions to the bowl with the mayonnaise and toss well.
  • Sprinkle the salmon with salt and pepper. Brush the grill grate lightly with oil. Lay the salmon on the grill, skin-side up, and cook until distinct grill marks appear and the salmon releases easily from the grate, 2 to 3 minutes. Turn and brush the fish with some of the reserved sauce. Continue to cook the fish, brushing the pieces periodically with the sauce, until the salmon fillets are glazed and just cooked through, 13 to 15 minutes more.
  • Transfer the fillets to individual plates and serve with the celery slaw.

SPICY-SWEET GLAZED SALMON

Spicy-Sweet Glazed Salmon image

I looked for a recipe for glazed salmon and didn't find one that used the ingredients I had on hand. So I threw together what I had and came up with this tangy, spicy sweet marinade that adds flavor, but doesn't mask the flavor of the salmon. My kids and sister loved it. They said it was better than 'restaurant salmon' It's great served with wild rice and stir fried veggies.

Time 2h20m

Yield 6

Number Of Ingredients 12

1 ½ pounds fresh salmon fillet with skin removed
¼ cup red wine vinegar
¼ cup olive oil
¼ cup soy sauce
¼ cup water
1 tablespoon lemon juice
½ teaspoon red pepper flakes, or to taste
1 teaspoon onion powder
1 teaspoon garlic powder
2 teaspoons chopped fresh cilantro
⅓ cup brown sugar, packed
salt and ground black pepper to taste

Steps:

  • Place salmon in a shallow, flat dish, and set aside. Combine the vinegar, olive oil, soy sauce, water, lemon juice, red pepper flakes, onion powder, garlic powder, cilantro, and brown sugar in a blender. Blend until brown sugar dissolves. Pour the marinade over the salmon to cover evenly. Cover the dish, and refrigerate at least 2 hours.
  • Line a broiling pan with foil. Remove salmon from marinade, and place on prepared broiling pan; season to taste with salt and pepper. Transfer remaining marinade to a saucepan.
  • Turn on broiler to low.
  • Broil salmon about 6 inches from the heat for 5 minutes; brush with remaining marinade. Broil an additional 5 to 10 minutes, brushing 2 or 3 more times with additional marinade. Salmon is done when fish is no longer bright red and can be flaked with a fork.
  • Meanwhile, cook the remaining marinade over low heat until it thickens and reduces by one-third, 5 to 10 minutes. Use cooked marinade as a dipping sauce or drizzle over salmon just before serving.
