8 ounces mushrooms, stems trimmed and thinly sliced
2 scallions, thinly sliced
4 (6 ounces each) skinless salmon fillets
Coarse salt and ground pepper
2 tablespoons Dijon mustard
2 tablespoons fresh orange juice

Steps:

  • In a 9-by-13-inch microwave-safe dish, combine spinach, mushrooms, and scallions. Place salmon fillets on top, and sprinkle with salt and pepper.
  • In a small bowl, stir together mustard and orange juice. Spoon mixture over salmon. Microwave on high for 8 to 10 minutes or until salmon is cooked through and spinach has wilted. Serve salmon over vegetables.

Original recipe called for 2 T. dijon, we have chosen to cut back to 1 tablespoon and love it that way. Sometimes we broil in the oven and to keep the steaks moist, I add some of the leftover marinade about half way through broiling.

1/4 cup Dijon mustard

1 onion, thinly sliced
1 ½ tablespoons olive oil
5 (6 ounce) salmon fillets

  • Preheat the oven to 400 degrees F (200 degrees C).
  • In a small bowl or cup, stir together the lemon pepper, garlic powder, and dried parsley. Place the slices from one of the oranges in a single layer in the bottom of a 9x13 inch baking dish. 1/2 cup sugar
2 pounds center-cut salmon fillet, about 2 inches thick at its thickest, with skin
2 1/2 tablespoons extra virgin olive oil

Steps:

  • Heat oven to 250 degrees. In a small bowl whisk mustard, sugar and 1/2 cup water together. Set aside.
  • Cut salmon into four uniform portions. Pat dry with paper towel. Heat 1 tablespoon oil in a heavy ovenproof skillet over high heat; skillet should be large enough to hold salmon without crowding. Add salmon skin side up, and sear quickly about 2 minutes, until it can be lifted easily with a spatula without sticking. Turn, and sear about 2 minutes skin side down. 250g sugar snap peas

  • Preheat the oven to fan 180C/conventional 200C/gas 6. Boil the potatoes for 10 minutes until tender. Meanwhile, whisk the mustard, orange juice and honey together in a bowl to make a marinade. 1 cup sour cream (added later)
2 (1 1/2 lb) center cut salmon fillets (skin on, can use one more fillet if desired)
1/4 cup butter, melted (unsalted preferably)
3 tablespoons light brown sugar
3 tablespoons soya sauce
2 tablespoons fresh lemon juice
2 tablespoons dry white wine

Steps:

  • In a saucepan, combine all the sauce ingredients (EXPECT THE SOUR CREAM); simmer until very thick, stirring frequently (about 5 minutes), keep warm.
  • Arrange the fish fillets (skin-side down) in single layer on a a small cookie sheet or a shallow pan, lined with foil.
  • Mix 1/4 cup melted butter with brown sugar, soy sauce, lemon juice, wine and seasonings in a bowl.
  • Pour over the fish; cover with foil, and refrigerate for at least 1 hour.
  • Remove from the fridge.
  • Set oven to 400 degrees.
  • Uncover the fish; bake until JUST cooked through, basting with pan drippings.
  • Meanwhile, rewarm the sauce over low heat, stirring constantly.
  • Add in 1 cup sour cream; whisk JUST until heated through (DO NOT BOIL!) Arrange the salmon on the plate; serve with sauce-- delicious!
